Limoncello Raspberry Yoghurt
This simple Limoncello Raspberry Yoghurt makes a nonetheless delicious and indulgent dessert. Happy Wednesday!
Ingredients (serves 1):
half a dozen beautiful raspberries
1/2 tablespoon Limoncello
1/2 cup thick plain yoghurt or Greek Yoghurt
1 teaspoon Limoncello
Place half of the raspberries at the bottom of serving bowl. Add Limoncello, and mash the raspberries with a fork, stirring well until you have a coulis of sorts.
Stir teaspoon of Limoncello into the Greek Yoghurt, and spoon into serving bowl, stirring gently to swirl the coulis into the Yoghurt. Top with remaining raspberries.
Enjoy Limoncello Raspberry Yoghurt immediately.

Grilled Salmon with Roasted Vegetables
INGREDIENTS——————————————
- 1 salmon filet 🍣
- 1 small broccoli head 🥦
- 1 carrot 🥕
- 1 small potato 🥔
- 1 red bell pepper 🌶️
- 2 tbsps olive oil 🫒
- 1 tbsp lemon juice 🍋
- 1 garlic clove 🧄
- Salt 🧂
- Pepper 🌶️
- Dill or parsley 🌿
INSTRUCTIONS—————————————
1. Preheat your oven to 400°F
2. Place the broccoli, carrot, potato, and red bell pepper on a baking sheet.
3. Drizzle with 1 tablespoon of olive oil and season with salt and pepper.
4. Toss the vegetables to coat evenly.
5. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly browned.
6. In a small bowl, mix the remaining 1 tablespoon of olive oil, lemon juice, minced garlic, salt, and pepper.
7. Brush the salmon fillet with the olive oil mixture.
8. Preheat a grill or grill pan over medium-high heat.
9. Place the salmon on the grill, skin side down.
10. Grill for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.
11. Place the grilled salmon on a plate.
12. Add the roasted vegetables on the side.
13. Garnish with fresh herbs.

Briella's Pantry Baking: #1 Chocolate Banana Bread
Sul Sul, gerbits. As I mentioned in my previous video, this series is going to be all about your basic pantry ingredients being used in different recipes.
Today we are going to be making cocoa banana bread. Just like the WInterfest baking, the measurements, and the recipe are going to be in the description below.
The dry ingredients that you are going to need are:
flour
baking soda
salt
cocoa
nuts if desired.
The wet ingredients that you are going to need are:
butter
sugar
a couple of bananas,
milk,
eggs,
vanilla
Preheat the oven to 350.
The first thing that you are going to do for this recipe is combine the wet ingredients. Which includes, butter, sugar, bananas, milk, eggs, and vanilla. You are going to mix this for 1 minute.
Next, you are going to add the dry ingredients and mix.
The recipe says to pour it into a 9 x 5 inch loaf pan, that is greased. But, I just bought these wonderfully cute, mini-loaf pans. So, I decided to use them. Thankfully I did not use the time that is on the recipe. Because they would not have been edible.
The recipe says that if you are using a 9 x 5 inch loaf pan you are going to bake them for 50 to 60 minutes. But, if you are baking them in muffin tins or mini loaf pans then you are going to need to bake them for 10 minutes. If you stick a wooden pick or a knife into the bread and it comes out clean, then it is done.
I am actually really happy about how this bread came out.
These were the first bread that I have ever done. Next time I do something in the mini-loaf pans I know that I have to do 2 scoops from my cookie scoop.

ROASTED PEPITAS - Recipe
I'm sorry, but roasted pepitas fresh from the oven, still popping and crackling?
THE BEST SNACK EVER.
- 1 cp fresh pepitas (hulled pumpkin seeds/the green inner bit) - 1 tsp high heat oil (vegetable, peanut, avocado, ect) - 1 tsp mixed spices (garlic powder, onion powder, chili powder, ect) - salt to taste
Seriously, any spice will work for this. If you want them sugary, go for it. Try your favorite flavor combinations. I don't even measure, just eyeball it all. You want shine and flavor on all the pepitas.
1) Line a baking sheet with foil and turn the oven to 325F.
2) Dump pepitas and spices in the middle
3) Add oil and stir together until all the pepitas are shiny
4) Spread the pepitas out in a single layer.
5) Bake at 325F for 10 minutes.
Done.
As the pepitas cool you'll hear them crackling and popping. It means they were fresh and are now cooked and tasty. Eat them by themselves, put them on a salad, share with you friends if you want. I put mine in a tiny dish meant for dipping sauces and eat them at my desk.
Pepitas have 5g of protein, are high in calcium, and have a ton of magnesium. Which means they taste good and are good for your body, will help with muscle cramps, and boost your mood. they also have phosphorous, copper, and zinc.
If you're having a bad day or want a snack to get you to your next meal, make some pepitas. They'll keep well in a jar on the counter for about a week. And, when you make them at home, you control your flavors and salt levels so you don't need to worry about that. Make them as spicy or mild as you want!

Pear and Chocolate Yoghurt
A simple, yet more-ish dessert or mid-afternoon snack, this Pear and Chocolate Yoghurt only requires three ingredients and little to no effort, making it all the more delicious! Happy Friday!
Ingredients (serves 1):
2 beautiful halves Pears in Whisky Syrup
15 grams/1/2 ounce good dark chocolate (at least 62% cocoa)
1/2 cup Greek Yoghurt
Dice Pears in Whisky Syrup halves.
Roughly chop dark chocolate.
Stir diced Pears and chopped dark chocolate, saving a little of each for topping, into the Greek Yoghurt until well-combined.
Spoon into serving bowl, and top with reserved diced Pears and dark chocolate.
Enjoy Pear and Chocolate Yoghurt immediately!
