Meal 2: baked chicken breast + toast w/ melted cheese slice + kale caesar salad w/ chickpeas, turkey bacon, cherry tomatoes, cucumber & pickled onions
Dessert: Greek yogurt brownie + yogurt bowl w/ kiwi, frozen raspberries, pumpkin seeds & crunchy PB
Lol was so bored, so I edited the heck out of my meals. Don't know if I can do this everyday cause it took me maybe 2hrs, but OMG it looks so pretty I want to!!!
Also, finally tried the viral 50kcal brownies, and it's so fudgeyyy I love it! 🥰 Mine came out at around 55kcals cause I added protein powder, but it's still low kcal, so I'm good with that.
Anyway, will update later. Might still walk a bit since it's still pretty early.

Salmon Burrito Bowl 🥑🥗🍳
A flavor-packed, super easy lunch or dinner featuring roasted salmon, fluffy quinoa, black beans, creamy avocado, and vibrant toppings like pickled onions and feta. This bowl is as delicious as it is nutritious!
In the bowl:
• 60g cooked quinoa
• 60g cooked black beans mixed with Puy lentils
• 1/2 avocado, sliced
• Coriander leaves
• Cucumber & tomato, diced
• 20g feta cheese, crumbled
• Pickled red onion
• 1 large salmon fillet, cut into chunks
For the marinade:
• 1 tbsp olive oil
• 1 tsp cumin powder
• 1 tbsp smoked paprika
• 1 tbsp dried oregano
• 1/2 tsp salt & black pepper
• Juice of 1/2 lime
Instructions:
1. Preheat your oven to 190°C (375°F).
2. In a bowl, mix the olive oil, lime juice, smoked paprika, cumin, oregano, salt, and pepper.
3. Coat the salmon chunks in the spice paste and let them marinate for 20 minutes.
4. Roast the salmon in the oven for 15 minutes or until cooked through.
5. Assemble the bowl with quinoa, black beans, avocado, cucumber, tomato, pickled onion, feta, and coriander leaves.
6. Top with the roasted salmon and enjoy!

Didn't count kcals today cause I wanted to go with how much I wanted. Luckily I didn't go all out and finished the entire big bag of Popcorners. I'll see tomorrow if I'll count again.. Or maybe I'll just put kcals burned cause at least that I don't have to think about/track since it's on my watch. Hmmm...
Getting tired of Quest bars... Anyone have any recommendations for other good, not-so-expensive protein bars? Or maybe I just have to not eat them every night lol.
