Gluten-free peanut butter chocolate chip cookies

INGREDIENTS NEEDED
155g (1 1/2 cups) almond meal
70g (1/2 cup) coconut flour
35g (1/4 cup) gluten-free cornflour
135g (3/4 cup) coconut sugar
1 1/2 tsp bicarbonate of soda
1/2 tsp sea salt
120g natural peanut butter (no sugar or salt)
80ml (1⁄3 cup) melted coconut oil
1 egg, at room temperature
2 tsp vanilla extract
120g dark chocolate (85% cocoa), finely chopped
METHODS
Step 1
Preheat the oven to 170C/150C fan forced. Line 2 large baking trays with baking paper and set aside.
Step 2
Process the almond meal, coconut flour, cornflour, sugar, bicarb and salt in a food processor until combined. Whisk the peanut butter, oil, egg and vanilla in a jug. Add the peanut butter mixture to the almond mixture. Process until well combined. Transfer to a bowl and stir in 85g chocolate.
Step 3
Use damp hands to roll rounded tablespoonfuls of mixture into balls. Place on prepared trays. Flatten well, pressing together with fingers if large cracks form. Bake, swapping trays after 8 minutes, for 16-18 minutes or until golden brown. Cool on trays for 5 minutes. Transfer to a wire rack to cool completely.
Step 4
Place the remaining chocolate in a microwave-safe bowl. Microwave on Medium until smooth. Drizzle melted chocolate over cookies. Set aside to set.

Tiep or thieb is a traditional dish from the Sahel, especially from Senegal and Mauritania.
Ingredients
1 1/2 cups rice broken rice
4 Large pieces white fish snapper or grouper
3 tomatoes mashed
3 Tablespoons tomato paste
1 bunch parsley crushed
1 large Carrot peeled and cut into medium pieces
1 sweet potato peeled and chopped into large chunks
1 large onion chopped
4 cloves garlic finely chopped (divided)
1 small eggplant sliced
1 small cabbage cut into 4 pieces
1/2 cup peanut oil
2 Maggi cubes
4 bay leaves
1 Tablespoon nététou
2 Tablespoons smoked fish shredded or ground
2 habanero peppers de-seeded and diced.
1 Tablespoon black pepper
salt to taste
4 okra
6 cups hot water
Instructions
Prepare the stuffing or puree/marinade for fish :
In a food processor or mortar and pestle blend or crush the parsley, half the garlic, 1 Maggi cube, plus a little salt and pepper to taste and a spoon of oil.
Cut slits if in the flesh of the fish and stuff the puree inside or slather the fillets with the puree and refrigerate for a couple of hours. (Reserve leftover puree)
Make the tomato sauce.
Heat the oil to medium high and add the onions , tomatoes, tomato paste , the black pepper and remaining garlic. Then fry for 15 minutes.
Add the stuffed or marinated fish into the tomato sauce.
Add the Maggi cube, bay leaves, nététou, smoked fish, habaneros and 1 cup of water.
Simmer until the fish pieces are cooked through, about 15 minutes.
Remove the fish and add vegetables
Remove the fish pieces and add all the vegetables except okra with 1 cup of water and cook the vegetables until they are cooked approximately 25-30 minutes.
You must ensure that the vegetables are tender before removing them, but take care to not overcook them.
Then remove the vegetables and add the okra with water. Cook for 5 minutes more than remove the okra
Cooking the Rice
Cook the rice over low heat, stir often and cook until tender.
When the rice is cooked well its ready for serving place the rice on a nice dish and arrange the vegetables and fish on top.

This week’s batch cook recipe was a chicken and vegetable casserole - OMG so tasty (though I say it myself as shouldn’t!) I served this on a bed of couscous and I’m putting in an application to Masterchef as we speak 🤣🤣🤣 I wouldn’t say I’m necessarily enjoying cooking - (enjoying is a strong word lol) but I am enjoying the results. Prep takes bloody ages as my knife skills are utter shite but I’m sure I’ll speed up in time. I’ve got a Ninja Foodi and it’s fantastic, I cooked this recipe all in the one pot so less washing up. I’ve also noticed a big difference in my gas usage so another winner, plus It’s encouraging me to cook from scratch. Happy Saturday!👋 It’s been awhile since I last shared a recipe! Today was certainly a busy day for me. However, I was able to make 3 types of crepes for the kiddos for the family, yummy!! For the savory crepe, i added Muenster cheese, eggs and pan grilled tomatoes and salt and pepper and a bit of extra virgin olive oil and making it my morning brunch!👍😋 Here’s the recipe for the homemade crepes and happy eating!! Ingredients 4 eggs, rm temp 1 1/3 cups milk, lukewarm 1/2 tsp kosher salt 2 Tbsp sugar 1/3 cup corn starch 3/4 cup AP flour 1/4 tsp vanilla extract 1. In a good blender all of the ingredients and blend until smooth, 5 minutes. Turn off and rest the batter for 20 minutes. 2. Preheat oven to 425 degrees F. Place a 10-inch nonstick pan in oven to heat, 10 minutes. Melt 4 Tbsp butter. Remove pan and grease the bottom and sides and pour 2 1/2 or 1.5 cups of batter to the hot pan. Place hit pan in the oven and bake for 1820 minutes, or golden brown. Remove from pan and place toppings on it . 3.
