This week’s batch cook recipe was a chicken and vegetable casserole - OMG so tasty (though I say it myself as shouldn’t!) I served this on a bed of couscous and I’m putting in an application to Masterchef as we speak 🤣🤣🤣 I wouldn’t say I’m necessarily enjoying cooking - (enjoying is a strong word lol) but I am enjoying the results. Prep takes bloody ages as my knife skills are utter shite but I’m sure I’ll speed up in time. I’ve got a Ninja Foodi and it’s fantastic, I cooked this recipe all in the one pot so less washing up. I’ve also noticed a big difference in my gas usage so another winner, plus It’s encouraging me to cook from scratch. I'm feeling all my emotions today. I'm trying not to stuff it down with anything and to just let it pass. I made it through day 16. For my outdoor workout, I rode my bicycle to a class at the studio where I teach. My indoor workout was the actual class. I had the last half of my vegan lasagna today along with a smoothie and then I heated up some leftover rice and #beyond meat and black beans that I made in the #ninjafoodi yesterday. I also was craving sweets so I melted some dark chocolate, added a little maple syrup, some coconut flakes, peanut butter and oats and let it chill in the fridge for about 20 minutes. I'm going to make them again. Maybe next time I'll use Rice Krispies instead of oats 😋 water ✅ no alcohol ✅ reading ✅ pic ✅

My favorite dinner is my one pot wonder lol. It is steak (with chimichuri seasoning from @spiceandtea.mountdora ), green beans (with olive oil from @mountdoraoliveoilcompany and salt/pepper from Spice and Tea as well), and mashed potatoes. For Dessert I made Apple Crisp using the Apple Crisp Cinnamon from Spice and Tea Exchange as well. There were no leftovers lol.
