My favourite ED-safe noodles!
Makes: one 321kcal serving, or two 160kcal servings.
You can change ingredients around to your own taste preferences and ingredient availability, but the calorie count may change.
Ingredients:
150g King Prawns.
100g Broccoli.
60g carrots, sliced and cut into strips.
40g courgette, sliced and cut into strips.
1/2 a red onion (mine weighed in at around 40g), sliced.
A stir-fry sauce of your choosing (I used LIDL's "Taste of China Chow Mein sauce)
Konjac noodles (I used 1 pack of Barenaked Noodles - 250g)
Soy sauce
Garlic granules
Hot sauce
How-To:
Cut up the broccoli into small-ish florets.
Use your 1kcal spray oil of choice (I used rapeseed, that's all I have) and make sure the pan is hot. Put the broccoli in the pan and pan-fry it on a medium-high heat.
Slice the carrot and courgette into strips, then add that to the pan along with some soy sauce. Make sure you stir it/toss in the pan to prevent burning and sticking!
Slice the onion, adding it to the pan, continuing to toss/stir.
Add the prawns to the pan (mine were pre-cooked so they didn't need long) and a little bit more soy sauce and garlic granules. Stir/toss everything in the pan.
Add your stir fry sauce (hot sauce too if using) and stir.
Prepare the noodles according to the packaging instructions and add to the pan with a little bit of water, stir everything around and make sure everything is coated in sauce. Continue to cook on a low heat until the sauce has reduced and has coated the noodles, prawns and vegetables.
Serve on a plate, add toppings if you'd like (I opted for sesame seeds). If you're splitting into two servings, store the rest in the fridge and eat within two days.

I almost didn’t do a workout bc my heart was beating too fast and I’ve had slight problems with it in the past but I did one of those 20 minute “lazy girl” workouts where you mostly lie down/sit and it was fine 😌 wasn’t originally planning on fasting for this long but when opportunity strikes… Hoping to hit 48hrs, have a smallish dinner then do my 72hr fast with @cherriestrawberrie !!! So stoked for it

Low Cal Chocolate Milk (40 cals total)
Ingredients
1 cup unsweetened almond milk (30 cal)
1 tbsp unsweetened cocoa powder (10 cal)
stevia, to taste (I used three packets) (0 cal)
Combine ingredients together in a cup and mix mix mix - cocoa powder is hydrophobic, meaning it repels liquid, so you’ll have to stir vigorously to incorporate the cocoa powder into the almond milk.
Super awesome for beating sweet cravings, and filling!
