INGREDIENTS:
• 3 green apples, diced
• 3 red apples, diced
• 3 Ib grapes
• 6 kiwi, peeled and sliced
• 3 lb strawberries, halved
• 18 oz raspberries
• 3/4 cup pomegranate seeds
• 3/4 cup honey
• 6 tablespoon fresh lime juice
• zest of 6 limes
DIRECTIONS:
1. Add all of your fruit to a large bowl.
2. Whisk together honey, lime juice, and lime zest in small bowl.
3. Pour over fruit just before serving and toss to evenly coat.

Cinnamon Apple

Buttery and fragrant, a Cinnamon Apple is so versatile it makes a wonderful topping to porridge or thick yoghurt, and a delicious side to pork or poultry. It is also very good on its own! Happy Tuesday!
Ingredients (serves 1):
1 tablespoon unsalted butter
1 apple, rinsed
1/8 teaspoon ground cinnamon
In a small frying pan or dish, melt butter over medium-high heat.
Halve and core apple, and cut it into slices.
Once the butter is just foaming, add apple slices, and cook stirring often to coat in butter, until just golden brown and tender, about 3 minutes.
Sprinkle with ground cinnamon, and cook, a couple of minutes more.
Enjoy Cinnamon Apple on its own, serve as a side to Schnitzel or on top of Ice Cream!

spicy pickled cucumber
recipe/ info below the cut :)
I have to say this is a staple for me, especially for meal prep as it will keep throughout the week (or more!). spicy, sharp and crunchy. my favourite. this also involves salting the cucumbers for 15 or so minutes, which draws out the water and makes them crunchy. while I would usually say these things aren’t necessary, this one is a must.
recipe:
chop up 1 cucumber however you’d like. my preference is to slice lengthways then scoop out the middle to make a boat shape. then I cut into <1cm slices.
cover in 1-2 tbsp salt, rub in and leave for 15 or so minutes. afterwards, wash them off thoroughly. they will still be a bit salty if you taste one but try and wash the majority off.
combine equal parts chili oil, sesame oil, sesame seeds, sugar, soy sauce and rice vinegar. these measurements are rough ( I don’t tend to measure) and you should adjust to your taste. then add the cucumber.
they are in theory fine straight away but for actual pickled cucumbers you’d want to leave them for a few hours before eating. if you can you want to use a container which keeps them submerged, if not, moving regularly can work.
