in other coming back from spring break news i made macaroni before leaving and in a truly tragic state of affairs i forgot to put the drain cover on before straining the noodles and a noodle got caught sort of under the drain where i couldn't see it and grew a PRODIGIOUS amount of mold for one (1) single noodle in the week i was gone. This past week our daughter developed a pretty nasty cough. I took these pantry staples to create a homemade cough syrup that was spicy enough to kick any cough. Not even 2 days later her cough was completely gone and she had no signs of ever being sick.
Ingredients:
2 Tablespoons raw unfiltered honey (local if possible) 🍯
2 Tablespoons apple cider vinegar 🍎
2 Tablespoons filtered water 💧
1/4 Teaspoon cayenne pepper 🌶
1/4 Teaspoon ground ginger 🫚
Instructions:
Combine everything and mix completely.

recipe box: IT'S ALL BEANS TO ME (greek-style beans)
this is a recipe that requires a day or so of prep, but you do basically just do stuff to beans and then wander away for hours in each step so it's not a very involved recipe.
NOTE: yeah, you do actually need to rehydrate and then cook the beans for this one, you can't really used canned beans without it turning weird and soupy.
YOU WILL NEED:
a pound of dried corona beans (YUUUGE)
3 bay leaves
1 large red onion, diced
4 cloves garlic, minced
1 15-oz can tomato sauce
2 tbsp tomato paste
3 tbsp honey
1/4 cup dried dill
1/2 cup olive oil
1/4 cup red wine vinegar
1 tbsp salt
1 tsp black pepper
cayenne pepper to taste
1 container feta cheese
PRE-COOKING THE BEANS
so before you actually start the recipe, you'll need to rehydrate the beans overnight and then cook them through. to rehydrate, just put the beans in a bowl, cover with water, and leave overnight up to about a day and a half. (you WILL need a bigger bowl than you thinks- those fuckers are going to plump back up to their entire original size!) refrigerate the beans after this step if you're not planning on cooking them for a bit.
once the beans are hydrated, put them in a big pot with water, the bay leaves, and a little salt. cover and bring to a boil, then lower the temperature and simmer for 60 to 90 minutes, until the beans are soft but not mushy. like bean al-dente.
the oven should be preheated to 350 F for the next step- when the beans have cooked, drain them completely and pick out the bay leaves. put them in a large oven-safe casserole or baking dish, and add the rest of the ingredients (minus the feta). mix it all together, level the surface with a spatula for even cooking, and wipe as much of the spatter off the sides of the dish as you can so it doesn't burn onto there, then pop it in the oven until the top is a deeply red-brown gorgeous crust, 60-80 minutes.
dump the feta on top in an even layer, and serve!

🌮🎉 Birria Enchiladas 🎉🌮
Ingredients:
For the Birria:
2 lbs beef chuck roast, cut into chunks
1 large onion, chopped
4 garlic cloves, minced
2 cups beef broth
2 dried guajillo chiles, stems and seeds removed
2 dried ancho chiles, stems and seeds removed
1 chipotle pepper in adobo sauce
1 tablespoon apple cider vinegar
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon paprika
Salt and pepper to taste
For the Enchiladas:
12 corn tortillas
2 cups shredded cheese (such as Monterey Jack or cheddar)
1/2 cup chopped fresh cilantro
1/2 cup chopped red onion
Lime wedges for serving
Instructions:
Prepare the Birria:
In a large pot or Dutch oven, add the beef chunks, chopped onion, and minced garlic. Pour in the beef broth.
In a separate saucepan, add the dried guajillo and ancho chiles. Cover with water and bring to a boil. Once boiling, remove from heat and let them soak for about 15 minutes until they soften.
Transfer the softened chiles, chipotle pepper, apple cider vinegar, cumin, oregano, and paprika to a blender. Blend until smooth.
Pour the blended sauce into the pot with the beef. Season with salt and pepper.
Cover and simmer on low heat for about 3 hours, or until the beef is tender and easily shreds with a fork.
Assemble the Enchiladas:
Preheat your oven to 350°F (175°C).
Warm the corn tortillas in a dry skillet or microwave to make them pliable.
Fill each tortilla with shredded birria beef and a sprinkle of cheese. Roll up the tortillas and place them seam-side down in a baking dish.
Pour the remaining birria sauce over the top of the enchiladas. Sprinkle with more cheese.
Bake the Enchiladas:
Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
Serve:
Garnish the enchiladas with chopped fresh cilantro and red onion.
Serve with lime wedges on the side.

(15th century Italian)
"Take lean meat and let it boil, then cut it up finely and cook it again for half an hour in rich juice, having first added bread crumbs. Add a little pepper and saffron.
When it has cooled a little, add beaten eggs, grated cheese, parsley, marjoram, finely chopped mint with a little verjuice. Blend them all together in a pot, stirring them slowly with a spoon so that they do not form a ball. The same may be done with livers and lungs."
2 1/3 lb stewbeef 4 cups water "Rich juice": 31 oz (3 cans) concentrated beef broth 1 1/2 cups dry bread crumbs 3/4 tsp pepper 8 threads saffron 5 eggs 1 1/2 cups grated cheese (~ 7 oz) 3/8 cups chopped parsley 3/4 tsp dried or 1 tsp fresh marjoram 1 1/2 tbsp chopped fresh mint verjuice: 3 tbsp wine vinegar 1 tsp salt (to taste)
"Bring meat and water to a boil and cook 10 minutes; take meat out and cut up small; put back in water with broth, bread crumbs, pepper, and saffron. Simmer 1/2 hour over low flame, being careful that it does not stick. Mix in remaining ingredients; cook, stirring frequently, for about 5 minutes. This makes about 10 cups.
This is a rather meat-rich version; it also works with as little as half this much meat."

I used two beef stock cubes which was fine.
I wasn’t sure how small the meat should be cut, so I did pieces of a couple centimetres diameter. This worked well in my opinion.
I don’t enjoy skimming the scum off water I’ve boiled meat in, so I used fresh water for the second part. I did not find the result lacking in flavour.
Cariadoc isn't kidding about it sticking. Make sure to stir every 2-4 minutes. Stuck doesn't necessarily mean burned though.
