OMG HOW DO U MAKE SPICY CUCUMBER SALAD TELL ME UR SECRETS

HIHI HEY HEY!!!

Ok so I'm gonna try and make this as understandable as possible with lists(heads up from future me, having already written the post: it wasn't)

Ingredients

- cucumber(whatever kind you have. I've heard English cucumbers are the best but honestly any of it is good)

- SALT

- cold water

- Vinegar, authentically I believe it's rice vinegar but I just use regular bc the one(1) bottle of rice vinegar I bought like 2 years ago was cloudy and I didn't trust it 😭

- soy sauce, again I think any type works but in my house we have the thick kind so🤷

- chili powder, okay so listen it's super difficult to find anything remotely spicy where I live but my parents got me some when they went on holiday. Literally a Tesco's bottle of hot chilli powder, any red spice works(try gochujang or gochugaru if you can get it, I heard it's the best!)

- honey or sugar

- crushed garlic, depending on personal preference tbh

- red onion, finely, FINELY minced

- optional: toasted sesame seeds, green onion/chives

Here comes the actual recipe(+yapping)

OKAY NOW, I'm gonna pretend I'm doing this for a fairly large cucumber, just so you can get an idea of ratios

1. PREPPING THE CUCUMBERS. First, wash the cucumber and slice it however thick or fine you want, I'd recommend removing some parts of the skin in strips if the skin is tough, put it in a bowl/container with a LOT of salt, make sure to shake it every now and then and get salt on every little bit you can, then leave it for however long it takes you to make the sauce.

2. THE SAUCE. I don't really measure it tbh 😭 but if I had to take a guess I'd say that it's like mainly vinegar, with about 2-4 tablespoons of soy sauce depending on preference(If you like soy sauce then go ham, if not just add a little) , w one tbsp of honey. Mix this really well so it's all combined, then add about half a red onion, 2-3 cloves of crushed garlic(I sometimes add more bc I adore garlic), however many toasted sesame seeds you want(crunch factor is subjective to all of us so it's really up to you if you wanna add them at all), and the chives. BOOM, sauce officially CONQUERED 💪

3. Pour all the cucumber water out of the cucumber bowl, and pour cold water into the bowl, swish it around a little bit, then pour it out and squeeze the cucumber to make sure it hasn't got much water left in it.

4. ASSEMBLE. Literally just put the cucumbers into a container(I use just a basic tupperware) along with the sauce, and SHAKE. You can eat it immediately, but I think its soo much better after a night marinading in the fridge. Now enjoy spicy cucumber salad to your hearts content.

My idea for this was to make it clear and concise, but I believe it was none of those things. Still, I hope the main points got across :]

Broke Laundry: updated 2021

For the time being, let's skip talking about how almost all of us have too many clothes.   The clothes that you have get dirty, and must be washed.  I am going to assume you have access to a modern washing machine, either at your house or a laundromat. We'll call step one sorting:

Sorting: Ain’t nobody got time for this.  This is an extra chore that is 99% not necessary.  Unless you have specialty fabrics or are particular about how white your whites are, it’s just added  stress and a waste of time.  I don't actually own any white clothes anymore, but if I did I'd run a load of whites with a cup of bleach once a month. I do not own things that can’t survive the washing machine, either.  No delicates, no dry cleaning.  I wash towels with clothes, and sheets together with bedspreads. Cleaning rags and towels have their own basket and get washed when it gets full.

Laundry Detergent: Avoid the very cheapest for the sake of your darks, but there is no need to spring for the most expensive thing on the shelf.  In fact, I make laundry detergent from one part washing soda, one part Borax, and one part soap. A double batch is enough detergent to last three months for a single person. Good recipes can be had all over the internet, so go forth and find yourself one.  If you’re washing in cold water and your tap water is very cold, such as in the winter, you may find it necessary to stir your homemade detergent into a cup of hot water before putting it into the machine. Out of detergent?  A spoonful of dish soap will do in a pinch.  Regardless of whether you’re using store bought or homemade, don’t use too much detergent; it’s bad for the machine, the environment, and your clothes.  We do not want to buy new clothes until we absolutely have to, right?  Right.

Fabric Softener: I recently saw a headline about how Millennials are killing the fabric softener industry.  The truth is, they are prioritizing groceries and lights over luxuries like Downy.  If you must have it and can afford it, go ahead.  Measure carefully but don’t dilute unless the package says so.  Fabric softener sheets are a good alternative, if you are using a dryer.  Here at Brokest Minimalist, we use a Downy ball with white vinegar in it.  The vinegar cuts soap residue, softens most fabrics, and is much cheaper.  Plus it’s versatile enough to be used for cleaning as well.  An added bonus is that it doesn’t reduce the absorbency of your towels like regular fabric softener does.

Water:  Set your washer on Tap Cold. Yes, really.  Unless your clothes are very greasy, almost anything can be washed in cold water and will get just as clean.  It isn’t so much the temperature of the water or even the detergent that does the washing, as much as it is the action of the clothes rubbing against each other inside the machine.  Anything that’s machine washable can be washed in cold water, period.

Settings: On our machine at home, clothes go on “casual” and sheets/bedspreads on “heavy duty”. Don’t stress too much about this.  Choose a water level that is appropriate to how full the machine is, add your stuff, and go ahead.

Drying:  Here at Brokest Minimalist, we don’t dry anything in the dryer.  Why?  Because air dries stuff for free, that’s why.  Clothes dryers are one of the most frivolous uses of electricity in the modern world.  They are also one of the number one causes of fire in the United States, after candles and cooking fires.  Unless you are in a huge hurry, hang your clothes to dry. Outdoors if possible, as sun dried clothing smells much better than any fabric softener does.  You don’t even have to spend all afternoon pinning stuff to a clothesline like your great-grandma did, either! Our system is beautiful in its simplicity.  We take our clothes out of the washing machine, hang them on clothes hangers, and then hang the hangers on the clothesline.  If you have a smooth line, tie knots in it or use clothespins to keep stuff from sliding back and forth in the breeze.  If you don’t have a line, put one up or buy a portable or retractable one. In summer your clothes will be dry within an hour in direct sunlight, which is a comparable time to many dryers.  If it’s raining, you can hang them indoors over curtain rods, from your mantel, or on your shower curtain rod.  Even if it’s freezing outside, in direct sunlight your clothes will dry within a few hours. For free.  No kidding.  And UV light is a great sanitizer if you’re worried about germs! Here we hang our and towels and unmentionables on racks purchased from Amazon, such as this and this.  Another tidbit we have figured out, is that there is no need to wait until daylight to hang your clothes. In the old days it was nigh unheard of, but there’s no harm.  The morning dew won’t make your wet clothes wetter.   Do you work nights?  Do a load of laundry after you get home from work and hang it out to dry, even if it’s midnight.  It will be dry by lunchtime tomorrow.   This saves wear and tear on your clothes, it saves electricity, it won’t create extra static like the dryer, and hanging stuff is kind of a nice, meditative way to spend a few minutes. Take some deep breaths of fresh air, reflect on your day, let go of some anxiety.

Does all of this sound too complicated? Written down it’s a lot, but let us take you through a load of laundry we just did.  For the record, it is currently one o'clock in the morning.  It’s 31 degrees outside.

1) Put clothes in washer.  Not sorted, just all the clothes in the hamper or off your floordrobe, dumped into the washing machine.

2) It’s cold out, so put a tablespoon of detergent into a cup of hot water and stir.  Pour in washer. Put white vinegar in Downy ball, toss in washer.

3) Push start button and go do something else.  Read, take a nap, cook, clean bathroom. Write a long-winded Tumblr post.  Whatever.

4) When load is done, hang everything on hangers/racks still wet.  This is the longest part, and it takes 5-7 minutes, max. You can do it while watching tv or listening to music.

5) Carry your hung up clothes outdoors to the clothesline and hang them up, or to whatever indoor location you have deemed fit if it is raining.

These will be dry in a few hours except for very heavy things like thing hoodies or jeans, those may take longer.  Yes, even if it’s cool outside.  As long as there is direct sunlight, they will dry.  When you’re ready, bring them in. All the clothes are already on hangers, so just stick them in your closet.

Once upon a time we had a lot of drama about laundry.  We had fights over whose turn it was, how much Tide to put in, and who was going to clean the lint trap.  When the dryer broke, I absolutely agonized over the three hundred dollars it would take to buy a new one.  That three hundred dollars meant going without cable for two months, it meant scrimping for groceries and paying a late fee on the phone bill.  It was more than an entire paycheck, just to dry clothes!

Today that same dryer is sitting in our laundry room in disuse.  We have it, for emergencies.  A drink spilled on a work shirt, perhaps, that needs to be worn in 30 minutes.  It’s good for fluffing up pillows, on the no-heat setting. It wasn’t worth the stress or the tears or the three hundred dollars we put into it all those years ago.  It’s basically a glorified shelf for our detergent now:

So today, I challenge you, broke person.  Don’t wear those grungy jeans for one more day.   Do a load of laundry, as frugally as you can.  Measure your detergent carefully, hang your clothes to dry.  Your clothes will last longer, your utility bill will be lower, and you will have a few minutes of peace and quiet outside.  It’s less wear and tear, less electricity, and less stress, and that’s a minimalist win.

If you do choose to dry your clothes in a dryer, beware of over-drying as that can cause static and extra wear and tear on your clothes.  Clean out your lint trap, it will make your clothes dry faster and reduce the risk of fire.  If you are too broke to have dryer sheets, wool dryer balls are pretty cheap and effective for fabric softening and reducing static.  We have also heard that you could use tennis balls or a couple balls of wadded up aluminum foil for this purpose.

God! I can't take it. The dread is killing me. I'm losing all the blood in my fingers with how tight I'm squeezing the steering wheel. The honking around me is not helping. I can feel everyone's fear collectively as we sit in agitated traffic. Stress. Fault. Jitteriness. Indifference. Panic, panic, panic.

God, I hate being an empath. I can't even hear my own thoughts. I need to breath! Yeah. Take deep breaths. I'm not far from the U-turn lane. So what if traffic is moving 1 millimeter a minute? The storm can't be faster.

I have to get out of this situation before I have a sensory overload.

From my front and my rear, I'm surrounded by vehicles. I can't move back, I'll hit someone. I can't move up, because they'll think there's space to move and I'll be more stuck than before. Looking to my right I realize the road across the gate is fairly empty. That last car I saw go that way was 40 something minutes ago.

I gulp loosening my grip from the wheel but still holding it firmly in my palms. Taking a breath I turn the wheel and step on the gas. My car races through the grass and crashes though the metal gates. With a screech, my tires are finally rolling and I'm off. Towards the dark clouds like a fool running blindly into a lions den.

When I finally catch sight of the curling palm trees and the flying debris, my weariness is replaced by anger. We had a plan. A simple schedule. Prepare emergency food, water, and medicine, flashlights and documents, locate nearest shelters, fill up gas tank, clear the yard, and turn off the power. When the evacuation order is set, I would be too far away at the time, so my husband would get the kids from home and we...would...evecuate.

Evacuate.

We would meet at the nearest shelter with our separate cars...

Unfortunately, my...sweet...dearest mother decided to take it upon herself to pick up the kids herself...and NOT evacuate. Instead, she wanted her grand babies to feel safe during the storm and cook them a nice meal...at her house.

I almost had a heart attack when my husband said they weren't there. Instead, a note was attached to the fridge reassuring us that my elementary school kids, including a baby, did not infact disappear off the face of the earth. She wants them to feel less threatened and stressed over this "flood nonsense". Make it seem like a regular thunder storm.

Except it's not a thunder storm! It's a hurricane!

I told my husband not to worry about it, I will get the kids and be ok. The hurricane is suppose to be a bad one, the weather man said. Anything left undemolished by the storm by the end of this would be a miracle. Hopefully it won't be my sanity. I swear, she's impossible.

By the time I get to her house, the streets are flowing with water and clawing up her driveway like waves at a beach. I step out and my shoe kerplunks into the water. I groan, feeling my ears eject hot steam. I stomp onto her porch with a squish, squish, squish and jam the key into the lock.

I kick the door open and slam it shut, my anger seeming to accelerate as soon I step inside. I cringe a bit, noticing my youngest asleep on the couch.

"DON'T SLAM MY DO-" my mother sticks her head out through the kitchen doorway and spots me.

"-Oh, hi baby!"

I stretch a tight smile, coaxing my child back to sleep. "Hello, mother."

"You came just in time. I just need to get a few things done before we eat."

And there she is. Like always. Not worrying about a thing while marinating apple cider vinegar on peices of pork. Probably to slice into the-

Sniff, sniff.

-gumbo. Her calm persona was infuriating. Almost insulting.

"Too bad my son in law couldn't be here. He'd love to stuff his face with the beignets" she continues.

"He's at the shelter. Kinda like we're suppose to be" I say, honey tounged and all "which begs the question..." I lean in, my palms face down on the table. "Why aren't we there right now?" I sneer, bringing my voice down.

"Because there's no need to. You know that" she says simply.

"Maybe in your case, but not mine. You just felt entitled to do things your way. Like you always do. I had everything under control and-and you had me worried."

"You know nothing was going to happen to these kids. I knew nothing was really wrong."

"If you really felt so aloof about this, you should have stayed yourself. You can't just up and take my kids like that. We've talked about this."

She finally looks at me, turning away from her task. "I should be free to see my own grand kids whenever I want to."

"I would have probably excepted that, if we weren't in the middle of a god damn hurricane-"

"Momma! Momma look!"

I was interrupted by my two children excitedly telling me that a pie was on the way. All while showing me their hands, proof of a raspberry massacre. Animated. Passion. Triumph. Pleasant. I ruffle their heads with a quick "good job" and they ran off together. Their happiness almost cures my frustration. It does calm me down a bit though.

"Is is so much to want to keep your family safe" my mother asks.

Aaaaaaand its back.

"Is it so much to just listen to me? To just let me do things my way? I am in no less danger than you are just because I dont have the same... tools that you do."

"It looks like it puts you in a lot of danger if you have to evacuate the city. You could simply come here so momma can protect you."

"That makes me look like a normal person, mom. The streets are already flooding and a ton of people just saw me go the opposite direction. I look stupid and suspicious." I'm taken back to my teen years. Having a similar conversation with my mother. "Not everything can be solved with your protection. I can make my own decisions. But instead you undermine me and tamper with everything around you. Just because I dont have it, doesn't mean I cant keep my family safe or simply be a mother. How about, for once, you let mother nature do her job."

"Your father made this house with his bare hands, rehydrating himself with his sweat. No one is touching this house. Not even Cosmo's or Gaia or whatever." She huffs and turn away. A puff of steam emerges over her head, indicating she opened the pot of Gumbo.

"Well, when your the Matriarch, you can start making the rules around here."

Realizing an apology isn't coming, I groan restricting myself from wrapping my hands around her throat. Its silence between us, as there is after every altercation. Especially when the house is mentioned, cause it's always Papa's house. He passed away before I could even learn to speak his name. Mama always told us about Papa. How she met him, how he put her on her feet and built a house for her (it was told he even built the bricks holding this house up), how his devotion to his family and the love of his life lasted until death did them part.

"What makes you think I'm going to be the next Matriarch?" I ask, slipping in the kitchen chair.

"You will. It's a family tradition that you need to uphold. And you are the only girl conceived by me." She answers, this sounds almost rehearsed.

"Why don't the others take your place?" I ask, for the millionth time.

"It's only rare that a boy has ever been in place of a woman. And once a girl was brought in, he was removed immediately."

"If it's that simple then crown them and get it over with."

"Oh, do you think it's that easy"? She quizzes, slowly turning to me.

"Knowing you, probably not."

"Hyde is much more coordinated than that. If they really didn't think you were worthy, we would have known, but I always knew you were special."

Here she goes again. Hyde,, is supposedly the person that gifts the family with magic, life, and girls. It's the spirirt who thrones and dethrones us. No matter who we are. According to mom, the next Matriarch could be good or bad, Hyde has a plan for them in the end.

Along with Papa's stories, Hyde was always directed towards me because I was the only girl, excluding my half sister. Truthfully there was no way to know if Hyde was actually real. I'm not even sure if my parents have seen it. Mom would tell me tales at night of different women throughout our generation, chosen by Hyde and how I would be like them someday.

Perfect.

"Hyde doesn't give you this gift for no reason" mom reassures "they always have a plan. You can't see everything in a negative light. What if Hyde chooses Clio and you-"

I stop her at the mention of my youngest name.

"I'm not putting that responsibility on my kid" I say sternly, though It probably won't matter what I tell her "Especially if, no offense, she ends up like you. Completely dependent on Hyde's gift. IT didn't give me any when I was born, like the rest of you, and I'd like it to stay that way."

Silence once more.

"Perhaps you're afraid-"

"I'm not afraid-"

"-its okay."

"-Of this imaginary ghost."

"Sure, keep believing that. But when it happens~" she sings.

"When it happens to me, pigs will fly" I sneer, memories of that same sing song tone prodding at me.

She says nothing.

"Just let it go mom, it's just not meant to be. I'm not a child that you can hide under your wings when hail comes. However your gifts came to be, Hyde, the house, whatever, it must've skipped a generation."

She continues to stir. She sputters "but-but the family-"

"-The family doesn't know what's best for me and neither do you. I know I'm the only daughter to the Matriarch. I know I wasn't born with any gifts like my siblings. I know refusing my path makes me an ungrateful child and Hyde will handle me" I say reciting what I also heard throughout my life "But that's not my life. And I'm not defenseless."

She freezes. More silence.

"And, I mean, it's not like having voodoo is easy. It consumes you and it messes a lot of things up. This worlds order and the next."

"That's what the council is for" my mom mutters finally.

"Oh, right. The council. The same family who's just as dependent as you. Do you even remeber a time where you haven't used your gift and actually did things yourself?"

...

"Don't you ever think of letting go of this life? Doing things for yourself and not the family? Hyde? Papa's house? I notice how this changes you as you age. If this is the answer to our problems I wouldn't mind the sea taking this house away for a while-"

"Mama! Mama!"

"Wow, look."

I follow my kids voices and they seek for me, a glimmer of wonder and awe in there wide pupils. My 2 boys are pointing to the window in the living room. My sleeping child is now up, standing on her toes to see what her brothers are looking at.

As I begin to walk In the living room, they're rushing back to the kitchen. I take a peek and see a part of the lawn, including my rental car but the road and the neighborhood is gone. A large amount of visible debris is covering up the world around-

No.

No.

That's not debris. That's not wind.

I follow my kids. They've opened the screen door and ventured into the back yard. I race after them and stop in my tracks. The water barrier has followed us to the backyard. My kids are screaming and dancing in the sprinklers as the hurricane is trapping us in its second eye. The oceanic barrier is circling around is, refusing to touch the property. With my kids instructions I look up, the sky is dark above us like it's the dead of night, yet inside the barrier, its murky like a cloudy day.

I can't concentrate. Excitment. Curiosity. Shock. Chills.

I sigh as my daughter wobbles to me and I scoop her in my arms. I can see it now, worst hurricane in 6 years and the Crobitt house still stands. This is similar but not related to the instance when a pair of swings at the run down school across the house seemingly froze in the air a few years ago... CIA is currently investigating...

I gather my children inside, they were starting to go towards the rushing ocean and who knows what'll happen. I shut the door with a defeated sigh and sulk at the table. The beneits sit gracefully with their powder sugar and I worship it by stuffing it in my mouth.

"I told you..."

I look up. My mothers eyes are glowing that familiar bright green and she has that devious smirk on her face. She always gave me that look as a child as if she's trying to tell me something. That, or it's to prove something, which I still dont know. I dont think I ever will.

"...you're father built this house. No one is taking it from me..."

You will find two ways to procure the magic mixture and the best ratios. You either purchase pre-formulated nutrients or you formulate them on their own. In the initial option, all you need to do is combine a standard quantity prescribed by the manufacturers of the concentrate with water. The next option though may be the more cost-efficient and effective because your mixes will undoubtedly be based about what your plants would need. Whichever you choose, you can find considerations that you must not forget such as the pH level or acid content of the formula because the power of the roots to absorb the nutrients depends on it. Here are a few friendly tips you can peruse and consider:

Maintain your formulas'pH level at the best range for your preferred plants, which is 5.8 to 6.5. A level of pH at 1 is acidic, at 7 neutral, and 14 basic. You are able to gauge the pH level using a chemical test kit that really needs replenishment because the materials are consumed or through electronic methods such as pens with LCD monitors that are dipped in to the solution. Adjust the ph level if necessary. This can be done by utilizing distilled vinegar.

A great mixture or balance among phosphoric, nitric, and sulfuric acids is important especially which they maximize the potential benefits that your plants could derive from nutrients such as olieverf phosphorous, nitrogen, and sulfur. Ventilation: Managing Heat

Some countries have only two seasons: wet and dry; and one of them is Australia. The dry seasons would usually last for 6 months where temperature is lower. During the wet seasons, which usually takes a period of 6 months too, there's a lot of rain and the temperature is high as a result of increased humidity in the air. For hydroponic growers as if you, these weather changes could pose a lot of challenges because with the usage of artificial lighting, natural temperature is heightened by the heat exuded by the artificial illumination. The more wattage you employ, the greater heat is generated. A lot of heat can kill your preferred plants even before they enjoy growth or flowering.

What You Can Do

There are many things that can be done to control heat--to increase or decrease it. You have to discover ways to handle heat because they could either be too low or too high. If it is too low, your plants will die with cold; and with it too low their leaves will coil in and eventually die. They are some simple things you are able to do:

Use air-conditioners or vent systems to regulate airflow and thus the temperature of one's hydroponics space. If air conditioners are very costly for you when it comes to electricity usage, then create a vent system. The most common vent systems are those who make hot venting from the ceiling of one's planting area to a different room. Other vent systems are installed to exhaust the air through the chimney, walls, or even roofs. You should use simple equipment such as bathroom fans to serve as exhaust.

Monitor the humidity and temperature of one's hydroponic growth area by way of a thermometer. Produce a system that may get rid of the heat in five minutes and in cycles of twenty-five minutes when the artificial lightings are turned on. You will need a timer and fan for this kind of system.

Create something that is founded on thermostat. It will automatically turn a lover or air-conditioner on when a specific temperature or heat level is reached and will switch off the cooling equipment when the level decrease by at least 4 degrees Celsius.

Happy Birthday to Me Part Two

The following is a documentation of all the other meals I made on my birthday weekend:

Unagi Gyoza with an Italian Twist

I found unagi gyoza on sale in a Japanese supermarket and was really excited, I’ve never seen gyoza with such a filling before and the ingredient list looked really good too - these included broiled eel, leek, cabbage, bonito stock, and sake. They were a tad expensive, but for the novelty value and the fact that I’d probably have to pay 3 times more for the same quantity in a restaurant I thought “Ah fuck it why not, it’s my birthday lol”. 

I initially didn’t think of doing too much with it, just the most basic steaming. But then I realised I didnt have any of the usual dipping vinegar to go with it, which was then I thought - why not try an alternative? Crema di Balsamico with its tangy-sweetness immediately came to my mind. And  then I went one step further by pan frying just the one side in butter, to get it crispy just like it’s sometimes sold outside. And to balance all this heartiness I had my very own homemade cucumber salad on the side, german-style(or at least, my interpretation of it). I really don’t think there is a need to go into lengthy detail on the how-to here. 

It turned out well, although I probably could have steamed the gyoza a tad longer. Moral of the story, look for alternatives when you don’t have something, the end result can be pleasantly surprising, as was the case here. The tangy-sweetness of the balsamico balanced the richness of the unagi nicely. 

Summer “Grilled” Prawn salad 

This, ladies and gentlemen and children (as Turkish airlines has the habit of announcing, which I find very cute lol) - is by far my pièce de résistance, at least for this Birthday Weekend Menu thingy. I’d two jumbo prawns leftover (of course this was planned), and I wanted to do something different from what I’d made with them the last meal (rich tomato-based pasta). I tried to think up antonyms to the adjectives I would use to describe that previous dish, and I came up with the words fruity and light and summerish. Not that tomatoes(as per the last dish) aren’t summerish, but in this one they’re left uncooked and refreshing. I’m rather proud to say that I came up with this one almost entirely by myself. 

Ingredients

-Jumbo Prawns; 2 

-Quinoa; 1 portion

-Cherry tomatoes; a handful 

-Mint; a few leaves

-Butter

-Orange-Pepper spice mix; 1-2 pinches 

-Pomegranate vinegar; a splash

-Mango vodka; 2-3 splashes

-Pepper-garlic spice mix 

-Crema di Balsamico

-Salt 

-Truffle olive oil / Any salad oil (e.g. pumpkin seed, walnut, olive)

Special Equipment

-Blowtorch 

-Container for shaping quinoa bed, shouldn’t measure more than a palm's width across. 

Instructions

1) Toast quinoa in pan with some butter till nearly golden brown, put in rice cooker with ratio 1:1.5 water to cook. Add 1-2 pinches of salt to water.

2) Halve cherry tomatoes. Set aside. 

3) Chop mint. Set aside. 

4) Clean and devein prawns. Remove sharp parts. Slice down middle. Season with pepper-garlic seasoning or any seasoning of choice. Rub with butter.

5) Put prawns in small, shallow dish with butter. Steam. WATCH CLOSELY. The moment the prawns turn pink, count to maybe 5 seconds and switch off the flame. They will still continue cooking a little. 

6) Pour a couple of splashes of mango vodka into the shallow dish, making sure it also touches the prawns. Use the blowtorch to blast the dish. The vodka should light up, as it did for me, and the bluish-orange flames will lick the prawns, charring them while infusing them with a smoky mango taste. The flames lasted nearly a minute in my case. When cooled, remove head. 

6) Quinoa should be done by this time. Put into shaping container. Add chopped mint, orange-pepper seasoning, truffle olive oil, pinch of salt, toss thoroughly. Use serving plate to cover container, and flip. The tossed quinoa should form a loosely-packed but relatively neat circle in the centre. Arrange the halved cherry tomatoes around it, and drizzle balsamico. 

7) Rest prawns atop quinoa bed. Try to arrange artistically. 

8) Drizzle pomegranate vinegar atop prawns and quinoa bed. Serve. 

Verdict: It was beyond amazing and honestly turned out way better than I had expected.I was worried it would somehow be too greasy/salty, but no! Everything blended exceedingly well together, complementing each other. The frutiness from the mango vodka, the orange-pepper seasoning and the pomegranate vinegar kept the salad light, and the shreds of mint leaves added a nice herbal edge to every bite. And the prawns. God the prawns. They were even more tender than the ones I’d made yesterday (probably because stricter time control, I literally turned off the flame the moment they fully turned pink). Crunchy yet tender. And the intermingling of the different flavours, oh so delightful. The balsamico on the side also added a nice dipping option for the already naturally very sweet prawns. 

This was easily one of my top ten best dishes I’ve ever made. And relatively easy even! Excluding cooking time for quinoa, it all took a maximum of 45 minutes. 

I had this with a pleasantly sweet bubbly Moscato d’Asti on the side. Perfection.  

Paneer Kebabs 

So, I was at the Indian superstore recently, and I finally managed to get what I’ve been meaning to for some time - paneer. I love palak paneer, I almost always get it when I go to an Indian restaurant. But I wanted to try cooking something different with it. Greek-turkish-italian influences came to my mind. Paneer reminds me somehow of feta and mozzarella, and I was initially going to do some version of a caprese salad, but instead of balsamico I use a honey-based dressing. But then I wanted to push things a bit further. So, here’s what I did:

Ingredients

-Goat butter; 2 dabs

-Cherry tomatoes; a handful

-Onion; quarter of a medium sized one 

-Paneer cubes; a handful

-Pepper-garlic seasoning

-Mini paprika; 1-2 

Special Equipment

-Skewers (the ones I found are actually meant for rouladen but hey, whatever works, right?)

Instructions

1) Halve cherry tomatoes. Slice mini paprika. Slice onions. Set aside. 

2) Heat up goat butter in pan till nearly sizzling. Put in paneer cubes.Let them fry, till they have a crispy exterior. Don’t forget to flip them. Add in onion slices halfway, if you’re a wuss like me who doesn’t eat raw onions. But they will probably be done before the paneer, so remove first, so that they don’t become too soft.  

2) When all paneer cubes are fried, remove from pan. Quickly throw in sliced paprika and tomatoes and toss them around in the browned goat butter to heat them up quickly. 

3) Skewer them in any order which you’d prefer. Drizzle balsamico over them for flavour balance to the greasiness. 

4) Serve with a refreshing salad on the side, in my case my homemade cucumber salad. 

Fun note: Goat butter loses its slightly off-putting goaty smell when it’s browned. Delectable.

I was initially tempted to just toss it all together as a kind of salad, but extravagant birthday me ruled against it, with the excuse that “when else are you gonna have the damn time/energy/will to do this fancy shit”. Skewering the different ingredients took longer than I expected, but the presentation was fun, added to the special factor. It was fun trying paneer like that, not drowned in curry but rather as a standalone thing almost. Had a rather nutty flavour, and went well with the juiciness of the tomatoes, sauteed onions and paprika. I still want to try the honey drizzle thing though. I think it’d be a bomb brunch thing. With sparkling wine on the side. Mmm. 

German Cucumber Salad 

Since it features so often as a side dish I might as well make a quick documentation of it. I always liked Gurkensalat when I was living in Germany, both the yoghurt as well as the clear version.  I was sad for a while that my current living places didn’t have this. But then I realised, wait a minute, this is actually really easy to make, lol. So, here goes:

Ingredients

-”Natural” yoghurt i.e. sour yoghurt, not any of that smooth sweet shit lol; 2 cups

-Japanese cucumber; 2 medium

-Sugar; 2 tablespoons (I used brown, but white is probably preferable because colour) 

-Onion; quarter of a medium-sized one

-Dill; 1.5 heaped tablespoons if dried

-Salt; a pinch 

Serves: 4-5 portions

Instructions

1) Thinly slice cucumbers and onions. I like mine really thin, like thinner than paper thin. I personally prefer the texture more when it’s like that.

2) Mix yoghurt with dill, sugar, salt.

3) Throw in cucumbers and onions. Mix. Hey presto it’s done. 

Note: I don’t add any other liquid, because the cucumbers release quite some water overnight, so that the next day the liquid component of the salad reaches a consistency that I find just right - thinner than yoghurt, but not watery. The spiciness of the raw onion is usually mellowed out a lot by the yoghurt. 

Usually stores for about a week I’d say. Perfect complement to any kind of greasy food, or even just as a refreshing snack really. 

So, that marks the end of this round’s Birthday Weekend Menu! I had so much fun thinking up recipe ideas based on whatever ingredients I had (yes, cherry tomatoes and balsamico feature a hell lot lol), guided by the principles of extravagance and flavourfulness. I did feel extra special eating them. Plating/Presentation really adds a lot to the dining experience. 

Next series of posts coming up will probably have to do with office lunches that can be served cool/room-temperature, because I have developed an aversion to the taste of microwave-heated food. Already drawn up a whole list of recipe ideas, can’t wait to try them!

4 recipes for less than $3 a serving

We all know that cooking can be challenging and expensive, but what if I told you that it didn’t always have to be that way? Today I’m going to share with you 4 recipes that won’t break your bank and taste incredible! All these amazing recipes cost $3 or less per serving! That’s insane! I hope you all enjoy.

The first recipe I want to share with you all is an apple chicken wrap. This recipe allows you to make as much as you want for only $1.25 per serving. Not to mention it’s pretty healthy too! I learned this recipe from 5dollardinners, so make sure you check them out and all the other great recipes they have!

What you will need: 1 lb. ground chicken (or you can make your own and dice it yourself)

6 tbs soy sauce

1 tbs vinegar

½ tsp salt

1 tsp garlic salt

2 tsp minced garlic (you can add more if you want a stronger garlic flavor)

1 tsp cornstarch

2 tbs honey

1 tps ground ginger

16 lettuce leaves (big enough to use as “shells”)

1 apple

Optional: green onions, other veggie toppers, ½ tsp crushed red pepper

Directions:

1)      In a skillet brown the chicken with both the garlic powder and the salt. Make sure that you cook the chicken all the way through

2)      In a medium sized mixing bowl, combine the soy sauce, honey, vinegar, minced garlic, ground ginger, and crushed peppers. Once well combined slowly stir into the chicken over a low heat and allow the sauce to warm up thouroughly.

3)      Combine the cornstarch with equal parts water. Once well combined mix in with the sauce and allow it to simmer for 3 minutes. In this time the sauce should thicken up. Add more cornstarch mixture if you desire a thicker sauce, and less if you want a thinner sauce.

4)      Carefully chop the apple up into small chunks and combine with the green onion. This mixture lightens up the meal and adds a layer of texture.

5)      Carefully layer everything up inside of the lettuce leaves. The chicken should be on the bottom topped with the apple and onions. And finally enjoy!

The next recipe I would like to share with you is called “Greek Turkey and Rice Skillet”. I learned this recipe from a place called Budget Bytes. To me it makes me feel fancy because it’s a different taste then normal American food. It makes me want to take a trip and enjoy some real Greek style food. Reguardless, this recipe is amazing and I highly recommend it. It also is low cost with a serving cost of $2.49.

What you will need:

1 tbsp olive oil

2 cloves of garlic (minced)

16oz Ground turkey (I prefer 97% Lean)

1 tsp dried oregano

¼ tsp salt

1 c. white rice

¼ lb spinach (fresh or frozen)

1/3 c. sun dried tomatos (optional if you don’t like tomatoes)

½ c. olives (sliced, I prefer black)

1 ½ c. Chicken broth

1 lemon

Parsley

1 oz feta cheese

Directions:

1)      Using a deep skillet pan, add the olive oil and minced garlic. Sauté over medium heat for 2 minutes. In this time, you should start to smell the garlic. Once you can smell the garlic, add in the ground turkey and oregano. Make sure to salt and pepper to taste. Continue to sauté over medium heat until the turkey is cooked through. This typically takes about 5 minutes.

2)      While the meat is cooking take the time to slice the olives and tomatoes. Once the meat is cooked, add the rice, spinach, olives, and tomatoes to the skillet.

3)      Add the chicken broth and stir until well combined. Placing a lid on the skillet, turn the heat up to a medium high, allowing the mixture to come to a slight boil. Once it is boiling turn the heat back down to a low to medium low and simmer for another 15 minutes.

4)      Once 15 minutes has passed stir the mixture and replace the lid. Turn off the heat completely and allow the mixture to sit for an additional 10 minutes.

5)      While the mixture is sitting, zest half the lemon and slice it into wedges and roughly chop the parsley. Give the skillet a stir and top with the lemon zest, parsley, and feta.

6)      Serve with lemon wedges on the side for added zing and flavor. This allows the consumer to decide whether or not to squeeze the lemon over their helping.

The next recipe I would love to share with you guys is actually a vegetarian dish! Sadly, its not vegan, although it is easy to make it vegan style using vegan ingredients rather than things like real cheese. This recipe rings in at a total of $0.90 per serving, how amazing is that! The best part, its pizza! This pizza is a garlic and kale pizza, which is a healthy alternative then your average meat lovers’ delivery. This recipe also came from Budget Bytes, so make sure to check them out!

What you will need:

2 tbsp olive oil

1 clove of garlic (minced)

6 cups of kale leaves (torn/shredded)

1 large pizza dough (if I’m lazy I use 1.5 tubs of the refrigerated Pillsbury ones)

¼ tsp garlic powder

1 c. whole milk ricotta

1 c. mozzarella

Directions:

1)      Preheat the oven to 400F. If the kale you purchased has stems, make sure to remove them. Rinse the kale well and tear into 2-inch pieces. These pieces may be bigger or smaller depending on your preference.

2)      Place the garlic and 1 tbsp of oil into a large pot and sauté over a medium heat for 1 minute. The garlic should turn soft and become fragrant. Add the kale and continue to sauté for an addition 5 minute. In this time the kale should start to wither. Season the kale with salt and pepper to taste.

3)      Shape your pizza dough into a circle or square and place inside either a pizza pan or baking tray of some sort. The normal size for a circular pizza is between 12 and 14 inches. Some pizza doughs require pre-baking before adding toppings so make sure to read the directions of the dough you choose. Many premade pizza crusts do not require this.

4)      In a small bowl combine the other tbsp of olive oil and garlic powder. Brush the mixture onto the surface of the dough. Sprinkle the kale evenly over the pizza dough. Top with the ricotta and mozzarella cheese. The mozzarella cheese should be the final layer to your pizza.

5)      Bake the pizza for 15-20 minutes, or until the desired brownness of the crust and cheese. Slice the pizza into the desired servings and enjoy.

The last recipe that I would love to share with you is a desert. This desert is a chocolate lava cake. Lava cakes are one of my favorite deserts because its like there’s a surprise in the middle! They are so fun and gooey. It makes me feel like a kid again. The other good this about lava cakes is that there are so many different recipes out there. You can make red velvet, vanilla, chocolate, and even cookie ones! The combinations are endless.

What you will need:

7 oz butter

7 oz chocolate (can be whatever type you want)

5 ½ oz icing sugar

1 2/3 c. flour

1 tsp baking powder

4 eggs

Directions:

1)      In a saucepan, melt the chocolate and butter together over a low heat. This is best achieved using a double boiler, or a heat resistant bowl over a pan of water. You may also do this in a microwave but be careful as you can easily burn the chocolate this way. The best way is to start melting in 30 second intervals, and once it starts to melt drop down to 15 second intervals until well combined.

2)      In a bowl which together the icing sugar and eggs. Add in the flour and baking powder and gently mix until combined. Slowly add in the melted chocolate and butter until you get a smooth paste like consistency. Pour the mixture into small buttered molds and allow them to rest in a refrigerator for at least 2 hours. If you don’t have molds you can use oven resistant mugs or even cupcake tins.

3)      Once the batter has rested, preheat the oven to 360F. Bake the batter for 8 minutes until they turn a light golden brown.

4)      Serve and enjoy! These cakes go really well with chocolate syrup, caramel, whip cream, or even some ice cream on top. So, don’t forget to top it with something you enjoy!

Now I make my own body-wash. I've made this recipe four times, and have found it to be overall excellent. It doesn't have exactly the same slippery texture as commercial body-wash (which, apparently, is a ploy to make it feel nice) but it leaves my skin more hydrated than any body-wash I've ever used.

This body-wash is truly glorious. It has a beautiful thickness to it, lathers nicely, and smells however you'd like it to smell. In the last batch, I used tea-tree, lavander, and vetiver for a nice earthy aroma, but do it up with citrusy lemongrass, spicy cinnamon, or minty freshness. Whatever floats your rubber duck.

Commercial body-wash uses wax, or something, to give it that silky smooth feeling, but that slick texture doesn't actually help to clean OR hydrate your skin, it literally just feels nice. This recipe doesn't give you that silkiness, but its still thick and lovely and honestly works way better. I've been using it for a year or two, so I can guarantee it.

A note on some of these ingredients, for your peace of mind:

Citric acid: This is literally what it says on the tin. Acid procured from citrus fruit! Its a natural preservative, totally safe to eat, used commonly in preserved foods like jam, and in most flavored seltzers.
