Honey Fermented Garlic
It’s been a running joke in my friend group that I’m probably a vampire (due to long standing dark color patterns in my wardrobe and pale skin) but my love of garlic is one of my biggest defender points to my humanity. 
Honey fermented garlic is one of those beloved folk recipes that are especially amazing to have during cold and flu season. It’s quite a simple recipe that combines two very common kitchen items into a lovely blend of flavors and benefits.

Why Make Honey Fermented Garlic?
Honey is already well known as a natural home remedy for sore throats and pesky allergies. 
Garlic has a long list of medicinal benefits. Ingesting garlic regularly is able to reduce your chances of getting sick, and beyond that it naturally reduces blood pressure and lowers cholesterol.
By mixing honey and garlic together in this lovely little concoction, you not only make it more digestible through fermentation but you’re also combining two potent natural medicinals into one!
Is It Safe?
Lactobacillus, yeast, and acetic acid bacteria are completely safe!
With lacto-fermentation, it’s nearly impossible to make something that will cause bodily harm upon ingestion, due to the bacteria quickly being able to outcompete pretty much everything else and acidify the mixture to prevent spoilage.
Do not use this remedy, or any remedy containing honey with children under 2 years old. A child at this age contains stomach acid that isn’t fully developed yet, and their stomach acts as a low acid environment.
Instructions:
Peel the garlic, trimming it to remove any discolored parts
Press the garlic clove with the side of a knife to gently bruise it
Optional: Once the garlic is in the jar, add about 2 tablespoons of raw apple cider vinegar to the jar at this point Give the jar a quick shake to coat the garlic cloves with cider vinegar.
Ensures that the surface of the garlic starts acidic, which is a precaution against botulism (not very likely, but if you want to be extra careful here’s a step!)
Fill the jar about 1/2 to 2/3 of the way with garlic, then top it off with honey to within an inch of the lid.
Be sure to leave space at the top, as the mixture will bubble as it ferments and you don’t want it to overflow
Cover the jar with a lid and flip it a few times to distribute the honey. Loosen the lid so gasses can escape during fermentation
Bubbles begin to form in the honey after about 24 - 48 hours. After about 3 to 5 days, the garlic should be well fermented. If you’ve made it in the refrigerator, it will take about 2 - 3 weeks for the fermentation process to complete.

Due to being a werewolf Neal has suffered from motion sickness his entire life. His sister Annie was definitely mocking him by choosing a cruise ship for the family vacation.
To make it worse she had also chosen the seafood menu for lunch. He normally hated seafood, but he had been so hungry after skipping breakfast he ate more than he should.
Now he was clutching the railing with one hand, and covering his mouth with the other. The cold fatty shrimp hadn't settled at all and was now sloshing wildy in his stomach. He barely managed to stagger out of the resturant due to the rocking of the ship. Each step threatened to bring up his lunch as he burped the aftertaste of soda and shrimp salad.
It was even worse outside. The salty stench of the sea made him even more nauseous. The ship's movement was stronger out here and he could feel his stomach content flip back and fourth along with the ship.
He had to swallow down the increasing salvia. It made him terribly nauseous, but he wanted to avoid throwing up if he could. Unlike his sister he had never been that great at controlling his abilities. Doing something strenuous like throwing up tends to make him involunteerly transform. He was already self concious about being a huge beast. Transforming on a human dominated area would lead to a lot of unwanted attension.
By now he had to remove his hand and let the excessive salvia drip down to the ocean. He was panting heavily, switching between taking deep breaths and swallowing down the lumps of acid lingering in his throat.
He didn't notice his sister had joined him until he felt the nauseating smell of a greasy hot dog. He almost lost it then and there. He immediately clasped his hand hand over his mouth again and fought down a gag.
"Wow little brother. I didn't know your face could get even paler. In fact it looks a bit green, are you feeling well?"
She bloody knew he wasn't! Despite also being canine, although not a werewolf, but a kitsune, she never suffered any drawbacks.
"Ngh, I'm fin-", he was cut off by his body doing a heave as vomit puffed out his cheeks. He had to press both hands above his lips to swallow it back down. He felt the texture of whole undigested shrimp coated in cheese and mayo dressing. It made him more nauseous than ever and he knew it woudn't take long before it would be brought back up again.
"You should just throw up. It will make you feel better", his sister pointed out while still waving the smelly hot dog in his face.
"I am- ugh, not- urp, sick", he managed to spit out between burps.
What a stupid brother she thought. He obviously needed to throw up.
"Neal are you sure you are not sick, you kinda look like when we were on that car trip. You know the one where you ate all those hot dogs and we had to stop all the time so you could bring up those chunky, stuffy onion cheese hot dogs"
If he could he would have turned around and promptly proceeded to spew all over his sister, but he had no time for that as the vomit shot up his throat and leaked through his fingers. Wave after wave of a thick white mixture of today's awful lunch partly fell down the railing and partly on his shoes.
He knew he had to compose himself. However he barely had time to take a breath between each heave before the next wave of vomting.
This was bad. He could feel his stomach shift, and it was not because of seasickness. He felt so weak he fell down on his knees onto the small puddle of vomit by the railing while feeling his body contract as he transformed into a wolf.
He had forgotten that seasickness was somehow even worse in this form. His wolf stomach was also not happy with his choice of biscuits and tea for snacks earlier. He coudn't even lean over the railing now to save his dignity, he was stuck bringing up the rest of his stomach content on the deck on all fours. His dignity was pretty much gone now anyways as people had flocked towards him in awe and started filming. He felt too sick to care. He still felt nauseous after giving back the shrimps to the ocean. The only thing he could do now was sticking out his tongue like a dog as salvia pooled in his mouth.
Luckily the trip was only going to last two more days...Thanks dear sister.

Orange Pound Cake

Yields: 1 pound cake Rating: ⭐️⭐️⭐️⭐️⭐️ (42) Time: 45 mins for prep, 1 hr for baking
This incredible orange pound cake will blow you away with its intense orange flavour and moist, soft, melt-in-the-mouth texture. It uses both plenty of orange zest and ¾ cup of orange juice – so there’s really no doubt that orange is the star of the show here. It’s also super easy to make.
Ingredients: 
200g (1 cup) granulated sugar
Zest of 3 oranges
170g (1 ½ sticks) unsalted butter, softened
4 eggs
1 tsp vanilla extract
240g (2 cups) all-purpose flour
65g (⅔ cup) almond flour
3 tsp baking powder
¼ tsp salt
180g (¾ cup) orange juice, freshly squeezed
Instructions: 
Adjust the oven rack to the middle position, preheat the oven to 350ºF (180ºC) and line a 2lb/900g loaf tin with parchment/baking paper.
Tip: I used a loaf tin with the following dimensions: 8 ½ inches/21 cm long, 4 ½ inches/11 cm wide and 3 inches/7 cm high.
Add the sugar and orange zest to a bowl and use your fingertips to rub the zest into the sugar. This helps to release more essential oils from the zest.
For the following steps, I recommend using either a stand mixer fitted with the paddle attachment or a hand mixer fitted with the double beaters. You could also do it by hand, using a large balloon whisk, but you might not get the butter and sugar as fluffy as you would using a mixer.
Cream the butter and sugar (with the added orange zest) together until pale and fluffy.
Add the eggs, one at a time, mixing well after each addition, until well combined.
Tip: It's very important that your eggs are at room temperature and that you add them one at a time. This way, you'll maintain the emulsion of the butter as much as possible. If you forgot to take your eggs out of the fridge, place them in warm water for 5-10 minutes before using them.
Add the vanilla and mix until combined.
In a separate bowl, sift together the all-purpose flour, almond flour, baking powder, and salt.
Beginning and ending with the dry ingredients, alternately add the dry ingredients (in three batches) and the orange juice (in two batches) to the butter-sugar mixture, whisking well after each addition, until you get a fairly smooth cake batter with no flour clumps.
Tip: This alternating way of adding dry and wet ingredients helps to maintain the emulsion of the butter in the cake batter as much as possible. When alternating dry and wet ingredients, make sure to end with the dry.
Even with this method of adding the ingredients, your final batter might still look slightly split or curdled due to the large amount of acidic orange juice that you've added. Don't worry if that happens – you will still get a wonderfully soft, melt-in-the-mouth cake crumb in the end.
Transfer the cake batter into the prepared loaf tin, smooth out the top, and bake in the pre-heated oven at 350ºF (180ºC) for about 1 hour - 1 hour 5 minutes or until risen, golden brown on top and an inserted toothpick comes out clean. The loaf should have a large crack running along the center.
Tip: If the cake starts browning too quickly or too much, cover it with aluminum foil (shiny side up) and continue baking until done.
Allow to cool in the loaf tin for about 10 minutes, then transfer the cake out of the tin and onto a wire cooling to cool completely.

Japanese Maple Propagation by Hardwood Cuttings

As mentioned previously, hardwood cuttings are those that are taken during the dormant season. For a deciduous species such as Japanese maple, this means that the cutting is merely a stick with some dormant buds that is stuck in a suitable medium. The lack of foliage allows a propagator to forget the worrisome balance between keeping leaf surfaces evenly moist while at the same time maintaining the medium at a state not too moist, and well aerated. For hardwood cuttings, bottom heat is recommended, but air temperatures can remain cool, ideally below the 15.5oC (60oF) range, especially at night. These environmental factors – no misting, moderate bottom heat, and little to no air heat result in a very economically efficient way to propagate. The fact that dormant cuttings are taken during the time of year when nursery activity is all but dormant too, means another kind of economy and efficiency is achieved as well: the economy and efficiency of time. One paper from the annals of the Combined Proceedings of the International Plant Propagator's Society stood almost alone on this subject. I include a summary of it here because I consider the notion of hardwood cuttings of Japanese maple to be of unrealized merit. 
The experiment with hardwood cuttings was begun due to a surplus of grafting scion material. The greatest success has been had with Acer palmatum 'Atropurpureum' varieties. This is the name commonly given to Japanese maples that have red colored leaves of varying shades and retain this trait, in varying degrees, when propagated from seed. Successful rooting and survival of this variety has been between 60 – 70%. However, experiments with the dissected leaf varieties have proven more challenging, as is common for these same types when propagated by softwood cuttings. Success is often as low as 25% (Carville, 1975). 
Cuttings were taken from field stock plants during the first week of January (Rhode Island). Material was between 4.8 - 9.5 mm (3/16 – 3/8 inch) thickness; possessing 2 –3 nodes. The previous season’s growth is taken, ideally as thick as possible, 15 - 20 cm (6 –8 inches) long. Wounds were made, 2 on each cutting, 19 - 25 mm (3/4 - 1 inch) long. Many hormonal solutions have been tried and Jiffy Grow TM was found to be the best. (10 second dip; 29 mL (1 oz.) Jiffy GrowTM to 87 mL (3 oz.) water; Jiffy GrowTM is a mixture of IBA .5%, NAA .5%. boron .0175%, phenylmercuric acid .01%). Medium is a 2 parts peat / 1 part perlite. Medium was slightly firmed and watered; cuttings were stuck; all was watered again then “ignored”. The temperature of the medium was kept between 15.5 - 20oC (60 – 68 ̊F). Air temperatures were kept below 20oC (60 ̊F) at night; no mention of the daytime temperatures. “Excessive top heat and /or overwatering will lead to complete failure, thus my statement to the effect that the cuttings should be ignored. The medium should feel almost dry to the touch and at no time during the first 4 weeks should you be able to squeeze water from a handful of the mix (Carville, 1975, p. 40)" 
Roots appear in about 4 weeks (callus in 15 days). Vegetative buds will soon be swelling after roots have been observed. It is imperative not to overwater during this time. Roots will rot very easily at this point. Newly emerging leaves need shading. A mild fungicidal solution is thought to be helpful in controlling Botrytis fungal infection. By mid- March the rooted cuttings can be potted, perhaps planted into fields directly in milder climates. 3.77 - 7.5 L (1 – 2 gallon) potted plants can be expected to reach 30 - 38 cm (12 – 15 inches) tall by late August (Carville, 1975). 
Carville (1975) concludes by noting, “Unit cost of production is far less than that from softwood cuttings and is considerably less than that from graftage (p. 41).” Another advantage he mentions is that rooted hardwood cuttings are in “phase” with the normal spring time growing conditions and therefore no extra work nor fuss needs to be placed on the necessity of forcing growth before fall, as is the case with softwood cuttings (Carville, 1975). 
I found only one other article on the subject of hardwood cuttings of Japanese maple. A researcher in Poland used Acer palmatum var. atropurpureum (again, this name indicates generic red leaf Japanese maple) to test various times and temperatures of storage of hardwood material prior to sticking into pots of a 1:1 peat and sand medium. It was found that cuttings obtained in November, stored in plastic bags at 55.4 ̊F for 3 weeks and then stored at 35.6 ̊F for 6 weeks worked best. The researcher suggests that the storage period improves callus and root initiation so that the timing of root growth does not lag behind the development of bud break, once the cuttings are stuck (Marcinkowski, 1988).
