Cozy White Bean Mushroom Stew Ingredients: 3 Tbsp vegan butter (or sub olive oil) 1 medium onion, diced (~2 cups) 1 lb mushrooms, sliced (shiitake and cremini recommended) 3/4 tsp dried thyme 3/4 tsp dried rosemary 3/4 tsp sea salt and pepper 4 cloves garlic, minced 2 Tbsp cornstarch (or all-purpose flour) 2 tsp tamari or soy sauce (gluten-free if needed) 1 Tbsp Dijon mustard 3 cups vegetable broth 1 lb baby potatoes, cubed (~3 cups) 2 (15 oz.) cans white beans, drained and rinsed 2 cups dairy-free milk (plain, unsweetened almond or oat) Fresh parsley, chopped (optional for serving) Directions: In a large pot or Dutch oven, melt the vegan butter over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Add the mushrooms, thyme, rosemary, salt, and pepper. Cook for 7-10 minutes, stirring occasionally, until the mushrooms release their moisture and begin to brown. Stir in the minced garlic and cook for 1 minute until fragrant. Sprinkle the cornstarch over the vegetables and stir to coat. Add the tamari and Dijon mustard, mixing well. Pour in the vegetable broth and add the cubed potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes, stirring occasionally, until the potatoes are tender. Stir in the white beans and dairy-free milk. Simmer for another 10-15 minutes, allowing the stew to thicken. Adjust seasoning with more salt, tamari, or mustard to taste. Serve warm with a sprinkle of parsley if desired. Wow … what a success. We spent the morning pulling onions and look how many we’ve got. 🥳
I’m so happy and grateful for such a lovely harvest, especially as we get through so many onions, I literally can’t grow them fast enough. Now we just have to lay them out and let them dry / cure for a couple of weeks.
I can’t wait to cook with these little beauties … they look so good 😋

5-ingredient Chocolate Peanut Butter Frozen Yogurt Bites🤩

Ingredients for 6 bites:
1 cup l Greek yogurt (240 ml / 250g)
3 tablespoons peanut butter (use a pb that is 100% made of peanuts)
1 tablespoon maple syrup or honey 
Topping:
100 g / 3.5 oz. 70-80% dark chocolate
1 teaspoon coconut oil
optional: crushed peanuts
Directions:
1. Mix the yogurt, peanut butter and maple syrup together
2. Spoon dollops onto a plate lined with parchment paper
3. Freeze for 1 1/2 - 2 hours
4. Melt the chocolate in the microwave with the coconut oil. Dip the bites in the melted chocolate.

1 whole wheat flour tortilla -  check for no added sugar 1/2 c. pecans or walnuts, chopped 1/2 tart flavorful apple, cored, cut into ribbon thin slices 2 T. cream cheese 2 - 3 dashes cinnamon
Spread cream cheese over entire flour tortilla. Sprinkle nuts on one side of the tortilla. Dash the cinnamon. Place the apples on the pecan side of the cream cheese.  Begin to wrap starting with the nuts side first using the cream cheese only side to seal the deal.

Crockpot Cheesy Broccoli Potato Soup This hearty and comforting soup combines the goodness of broccoli and potatoes with rich cheddar cheese, making it perfect for cozy nights. Ingredients: 1 teaspoon dried thyme 3 cloves garlic, minced 1/2 teaspoon black pepper 4 cups broccoli florets, chopped 4 medium potatoes, peeled and diced 1 small onion, finely chopped 4 cups vegetable or chicken broth 1 teaspoon salt, or to taste 1 cup heavy cream or milk 2 cups shredded cheddar cheese Fresh chives or parsley, chopped for garnish Directions: In the crockpot, add the broccoli florets, diced potatoes, chopped onion, minced garlic, broth, thyme, salt, and pepper. Cover and cook on Low for 6-7 hours or on High for 3-4 hours, until the potatoes and broccoli are tender. Use an immersion blender to blend the soup to your desired consistency smooth or slightly chunky. Alternatively, transfer half of the soup to a blender, blend until smooth, and return it to the crockpot for a thicker texture. Stir in the heavy cream or milk and shredded cheddar cheese. Continue to cook on Low for 10-15 minutes, stirring occasionally, until the cheese is melted and the soup is creamy. Ladle the soup into bowls and garnish with chopped chives or parsley, if desired. We don’t do it very often, but today we’re having a sunday roast. We’ve already harvested the potatoes, carrots, parsnips to roast. Next some sugar snap peas and some of our purple sprouting broccoli from the garden … it’s so pretty it almost seems a shame to eat it … almost 😉 I’m really looking forward to a lovely Sunday lunch with family … 😋
