Gluten free fruity loops
Came across a recipe for fruity loops, and adopted it to be gluten free. It's hard to find fun gluten free cereal.
Mixed together: 2.5 dl gluten-free flour blend 1/2 tsp baking powder 0.5 dl brown sugar 1.5 dl coconut milk 2 tbsp canola oil 4 tbsp cocoa powder or 1 tbsp fruity powders (I used some dried berry powders that's meant for smoothies)
First baked in oven in silicone molds, then decanted from molds and baked for a while longer. I think at about 150C.

it’s been a little over six months since i moved from my city apartment to a little country house i barely get internet out of. six months wherein: i adopted some cows (that are currently forming a coup against me) and taught myself to use a riding lawnmower (i still get scared to lower the blade). i planted vegetables (that were promptly destroyed by rabbits) and flowers (barely hanging on after an influx of gophers). i cut my hair short (so much easier to manage) and fielded my mother’s phone calls about how much she didn’t like said haircut (not-so-easy to manage). i narrowly avoided multiple late-night car accidents at the hands (hooves?) of the local deer population.
but most importantly (well, maybe not most, considering the gathering of firewood, the potential freezing of pipes, the million other things i’ve had a quick education in) is that out here, i can see the stars. maybe, if i tried, i could have seen them six months ago. thing is, i never bothered to look.
there’s no point to anything i’m saying. just that i’ve been thinking lately (because there’s not much else to do out here), and like it or not, this site is the only diary i’ve ever been able to keep. guess i didn’t want to let the occasion pass without an entry.
anyway, if anyone needs me i’ll be out here pretending to know the constellations (i don’t, and i never will). spring is here and i’m alive (i’m alive!).

When was the last time your gluten free family and friends enjoyed the comfort and joy that can only be obtained by a delicious potato scone?

There is a very high chance that they have not known the taste of goodness since before they went gluten free. Years and years and years without a complete breakfast roll or fry up. Can you imagine!?
Would you like to bring this joy back into their life for near-to-zero effort? Of course you would because you love them and everyone deserves to be shown they are loved
Here's a 15 min recipe:
400g cold mashed potato
100g gluten free flour (self raising or plain + 2tsp baking powder)
Pinch of salt
Obtain the mashed potato by either making too much for dinner the night before or those £1 microwave packs are the perfect size
Add some salt to the flour
Mix the potato and flour until its stiff
Flour a surface and rolling pin, roll out a chunk until its about the size of a side plate
Put a side plate over and use to cut the potato into a circle, then cut the circle into quarters
Fry 'em (this can be done at the same time as the rest of breakfast if that's all gf too)
Repeat steps 4-6 until the mix is done (about 12 scones)
If there's any left you can fridge or freeze them and re-fry them the same as a pack from the shops. I have never had any left over.
Feel free to use normal flour exactly the same way for normal people, but they can also go to the shop

Been experimenting with making my own sourdough bread at home because I have Celiac disease and gluten-free groceries are expensive.
I've made a fantastic (and very active!) sourdough starter with this recipe from Gluten Free on a Shoestring and used a bread recipe from the same blog to make a couple of loaves.
The first loaf was made with Bob's Red Mill all-purpose GF flour, and the second was made with the King Arthur brand GF baking flour. I like the texture on the second loaf better, but it didn't rise as much as I would like so next week I might toss some baking powder in there to give the yeast some help.
Advice from fellow gluten-free bakers is welcome. <3

Gluten free tropical granola

Mix quickly with your hands:
2 dl Oats 2 dl Oat fibre flour 1 tbsp baking powder 4 tbsp corn starch 0.5 dl sugar 1 dl dried, chopped mango 2 dl thinly sliced almond 2 dl raisins 2 dl coconut flakes 2 tbsp water 100 gr butter, melted 2 tbsp sirup Form into small lumps Bake at 200C for 10-15 minutes or until golden and baked through.
