Adding flour to hot butter (or other fat) is literally one of the basic sauce foundations of classic French cuisine. Like... going back centuries. I am not judging anyone for not using it, I am not even judging you for not having heard of it (though it does surprise me), but... agressively dismissing it out of hand baffles me. You rather type out your ignorance than go to Google for one minute?

Once you know this basic principle, you can use it for sauces or soups, pretty much. Sauce and soup are closer than you think, especially when we are talking about thickening soup (a clear broth is very unlike a sauce, true, but we were talking about thickened soup). Your unbelieving wonder at this concept makes me think you never even had Béchamel sauce... so also no Lasagna... your palate is less experienced and sophisticated than a cartoon cat's?
