Summer finally arrives and that means it's time for summer rolls again 🥰 this is my quick version which can be made under 15 minutes.

Wrap the rice paper with sliced salad, red bell peppers, cucumbers, smoked tofu as fillings and the dipping sauce is made from hoisin sauce, peanut butter, sesame paste, soy sauce, a little bit chili sauce and lime juice.

Shan Yu peers over at the red wood dinning table with mild intrigue. There's a sweet smell the fills the yurt (the subtlety of a wife's touch). Bowls filled with white rice, plump and fragrant, are neatly placed around the perimeter of the dishes for each member of the Naranbaatar household.

The dishes are occluded with simple covers.

Shan Yu: whats for dinner?

Mulan: Honey glazed, grilled lamb ribs

Shan Yu:.. Wife.. Have I ever told you how much I love you -

Mulan: and Tofu. ✨😌

Shan Yu (continuing ruefully) :... And how much I loathe that.

Chagatai Naranbaatar, the fearsome leader of the Golden Kheshig.. And Tofu.. Do not mix..

After finding this out, his wife makes it a point to cook tofu at least once a week. ❤️✨
