Walnut-Rosemary Crusted Salmon - 222kcal/24g protein
Servings: 4 - 222 kcal/24g protein perserving
2 teaspoons Dijon mustard
1 clove garlic, minced
¼ teaspoon lemon zest
1 teaspoon lemon juice
1 teaspoon chopped fresh rosemary
½ teaspoon honey
½ teaspoon kosher salt
¼ teaspoon crushed red pepper
3 tablespoons panko breadcrumbs
3 tablespoons finely chopped walnuts
1 teaspoon extra-virgin olive oil
1 (1 pound) skinless salmon fillet, fresh or frozen
Olive oil cooking spray
Chopped fresh parsley and lemon wedges for garnish
Preheat oven to 425 degrees F. Line a large rimmed baking sheet with parchment paper.
Combine mustard, garlic, lemon zest, lemon juice, rosemary, honey, salt and crushed red pepper in a small bowl. Combine panko, walnuts and oil in another small bowl.
Place salmon on the prepared baking sheet. Spread the mustard mixture over the fish and sprinkle with the panko mixture, pressing to adhere. Lightly coat with cooking spray.
Bake until the fish flakes easily with a fork, about 8 to 12 minutes, depending on thickness.
Sprinkle with parsley and serve with lemon wedges, if desired.

I am once again pissed at diet culture. I just watched three tiktoks in a row. how to cook dairyfree. How to meal prep without carbs. How to make healthy snacks without sugar. I keep getting (and stupidly clicking on) those articles that are like "ten things you shouldn't eat if you want to lose weight" and "why xy foods are bad for you" and wouldn't you know it last week i got recommendated articles that said those specific foods were super healthy and great for weight loss and now i should "never eat" them?? Is there any food we're still allowed to eat without being made to feel guilty?

Did much better with tracking yesterday.
I got super stressed out this morning. Like, so stressed I was nearly in tears and the cat following me around & meowing nearly drove me bat shit crazy.
So... this is an anxiety attack comfort meal. Creamy but lower calories. Everything tracked.

Fingers are super crossed that my doctors appointment goes well this week 🤞🏻
Really hoping for an Ozempic/Wegovy prescription (whichever my insurance will approve) and to upgrade to a Freestyle Libre 3 prescription 🤞🏻

Today I had a mushroom & swiss sandwich for breakfast 🥪 I was feeling kinda cottagecore and wanted something earthy
✨ Skipped lunch ✨
And for dinner I had a healthy version of “fried rice” using cauliflower rice. Because cauliflower rice is ridiculously low in calories and pretty filling
Had a light snack while playing Fortnite just now. A bag of Quest sour cream & onion protein chips. The protein in them is so good. I love how low in calories & carbs it is🥰

Baked Zucchini and Chicken Parm
This is one of my go-to high protein/low calorie meals. It's super easy to make. You simply stack the ingredients on top of parchment paper on a baking sheet. Fold the parchment paper over the stack of food and roll it tight to seal it in. Bake it at 350 degrees for 25-30 minutes depending on your thickness of chicken.
Here's the ingredients:
4 oz. Skinless Chicken Breast
1/2 Large Zucchini chopped
2 Tbsp Marinara Pasta Sauce
2 Tbsp Shredded Mozzarella Cheese
2 tsp Parmesan Cheese
Add any seasonings you want to your heart's desire. I generally add seasonings that don't add calories or they're negligible. I do a spritz of olive oil as well.
Here's the breakdown:
Calories: 283
Protein: 43.7 g
Carbs: 8.8 g
Fat: 9.8 g
