These are cookies my wife makes at Christmas. They are a dark molasses cookie made with bacon fat. I’m afraid the bacon fat is the only “keto” thing about them, lol. They are wonderful, but, well, they are Type 2 diabetes with a satisfying crunch.

So someone who knows about this sort of thing, I could use some guidance. I bought some keto bread the other day, and noticed that it used allulose, which I've read suppresses the body's glycemic response. I also use a food tracker for calories and carbs (I don't actually do keto, but I stay under 100g). So since I've been eating this bread this week, I've noticed that my net carbs are way lower than they should be. Like, I'll have four slices of this bread and my net carbs will be 35 grams lower than my total (today my total is 82.7, it says my net is 47.7, but when I add everything it would be 80).
So, that being said, it's Lewis, and trying to research this on my own didn't turn anything up about that but I did find out some pretty horrifying things about Lewis, so now I'm thinking maybe I'll just figure out how to make my own damn bread using allulose (I also don't want to spend $5 on a loaf).
But at the same time...is that even how this whole thing works? Can I trust those numbers? I'd be stoked to be able to eat the same thing my family eats at dinner, but it feels like a risky play.

Macros (Approximate Per Serving)
• Calories: ~250-300 kcal
• Protein: ~20-25 g
• Fat: ~15-18 g
• Net Carbs: ~4-6 g

Ingredients For 4 Servings:
• 4 bell peppers (any color)
• 7 eggs
• 2 turkey sausages, halved lengthwise and diced
• 1 tablespoon smoked paprika
• 1 tablespoon salt
• 1 tablespoon diced oregano
• 1 cup shredded mozzarella cheese
• 1 cup grated Parmesan cheese
• Cooking oil spray

Instructions
1. Prepare the Bell Peppers
• Preheat the oven to 380°F (193°C).
• Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the peppers face-up on a baking tray.
2. Mix the Filling
• In a large bowl, crack the 7 eggs.
• Add smoked paprika and salt. Whisk until well combined.
• Dice the turkey sausages and stir them into the egg mixture.
3. Stuff the Peppers
• Use a ladle to fill each bell pepper half with the egg mixture.
• Sprinkle mozzarella cheese and Parmesan cheese evenly on top.
• Lightly spray the peppers with cooking oil and sprinkle diced oregano on top.
4. Bake the Peppers
• Place the tray in the oven and bake for 15 minutes, or until the eggs are set and the cheese is golden and bubbly.
5. Optional Fun
• While waiting, enjoy a cup of refreshing yerba mate!
6. Serve & Enjoy
• Remove the tray from the oven and let the peppers cool slightly. Serve warm and savor the deliciousness! ________________________________________
