It's difficult coming up with a good diet* plan for all my shit going on. Apparently, low-carb diets can raise your cholesterol. I have to figure out a way to lower my A1C and my bad cholesterol. The low glycemic index (used to characterize foods that don't raise your blood sugar) doesn't mean it's low carb. UGH I'm just gonna focus on eating more fruits and veggies and less refined carbs (aka everything wonderful and tasty on this planet).
*Diet in the sense of what I'm eating for my health, NOT a weight loss plan

Perpetual Yogurt
Did you know that since yogurt is made using active cultures, you can turn 89 cents of yogurt into $10-20 worth using a gallon of milk and time? Yogurt is essentially a dairy sourdough starter.
I make mine in an instant pot (which makes it much more low maintenance) but it is possible to do it on the stove. Below are the instant pot instructions.
Ingredients/Equipment:
Instant pot
1 tbsp Yogurt (Preferably greek and unsweetened)
8 cups of whole milk (1/2 gallon)
Thermometer
Small bowl
Fine mesh sieve
Instructions:
Pour milk into the bowl of the instant pot and press the yogurt button until boil appears on screen
Allow milk to reach a temperature around 185F (85 C) or let boil for 45 minutes. Take the bowl out of the instant pot and place on a wire rack or cooled stove burner until the milk reaches 110F (43 C)
Place the yogurt into the small bowl and pour around 1 cup of milk into the bowl and stir until homogenous
Pour tempered yogurt mixture back into the instant pot bowl and reassemble the instant pot. Press the yogurt button until the screen reads 9 hours.
Let the yogurt sit in the instant pot for the next nine hours. After that time, strain the yogurt through a fine mesh sieve and store in the fridge.
This should last for approximately 2-3 weeks but use your sense of smell to determine if it's still good. At any point when you need more yogurt, just save another tablespoon of the yogurt you made.
(this is tagged as healthy because of the protein content specifically. I know a lot of gym influencers are screaming about yogurt every day and this is a great option if the amount of yogurt you use is higher than the average person)
If you struggle with eating the amount of yogurt you produce, I highly recommend making sauces out of it! I make Greek yogurt ranch at my house and it is good enough that I can't eat the regular kind.
Ways we use yogurt in our house: -snacking
-making breakfasts (overnight blended oats, chia puddings, greek yogurt cheesecakes, and more)
-baking (adds hydration and a nice tang)
-sauces (replaces the mayo in most sauce recipes)

So someone who knows about this sort of thing, I could use some guidance. I bought some keto bread the other day, and noticed that it used allulose, which I've read suppresses the body's glycemic response. I also use a food tracker for calories and carbs (I don't actually do keto, but I stay under 100g). So since I've been eating this bread this week, I've noticed that my net carbs are way lower than they should be. Like, I'll have four slices of this bread and my net carbs will be 35 grams lower than my total (today my total is 82.7, it says my net is 47.7, but when I add everything it would be 80).
So, that being said, it's Lewis, and trying to research this on my own didn't turn anything up about that but I did find out some pretty horrifying things about Lewis, so now I'm thinking maybe I'll just figure out how to make my own damn bread using allulose (I also don't want to spend $5 on a loaf).
But at the same time...is that even how this whole thing works? Can I trust those numbers? I'd be stoked to be able to eat the same thing my family eats at dinner, but it feels like a risky play.

Egg & Turkey Sausage Stuffed Bell Peppers (Keto Breakfast)

• Calories: ~250-300 kcal
• Protein: ~20-25 g
• Fat: ~15-18 g
• Net Carbs: ~4-6 g

Ingredients For 4 Servings:
• 4 bell peppers (any color)
• 7 eggs
• 2 turkey sausages, halved lengthwise and diced
• 1 tablespoon smoked paprika
• 1 tablespoon salt
• 1 tablespoon diced oregano
• 1 cup shredded mozzarella cheese
• 1 cup grated Parmesan cheese
• Cooking oil spray

Instructions
1. Prepare the Bell Peppers
• Preheat the oven to 380°F (193°C).
• Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the peppers face-up on a baking tray.
2. Mix the Filling
• In a large bowl, crack the 7 eggs.
• Add smoked paprika and salt. Whisk until well combined.
• Dice the turkey sausages and stir them into the egg mixture.
3. Stuff the Peppers
• Use a ladle to fill each bell pepper half with the egg mixture.
• Sprinkle mozzarella cheese and Parmesan cheese evenly on top.
• Lightly spray the peppers with cooking oil and sprinkle diced oregano on top.
4. Bake the Peppers
• Place the tray in the oven and bake for 15 minutes, or until the eggs are set and the cheese is golden and bubbly.
5. Optional Fun
• While waiting, enjoy a cup of refreshing yerba mate!
6. Serve & Enjoy
