Healthy Spinach Artichoke Dip with Za'atar Seasoning
For years I made an artichoke dip that everyone loved and it was delicious, but…it was so heavy and calorie laden! One of the reasons we loved it so much was because of the unexpected addition of green chiles which gave the dip so much flavor!
Recently, I came across a recipe for Spinach Artichoke Dip and instead of mayonnaise and cheddar cheese, it called for Greek Yogurt and Parmesan cheese which, obviously lightened the dip quite a bit. I decided to make it my own with the addition of green chiles and Za’atar seasoning and let me tell you, it is every bit as good as the old artichoke dip recipe and much lighter. The spinach and greek yogurt make it so healthy, but no one will be thinking about that when they’re eating it! This appetizer will be gobbled up in a flash so you might want to double it if you’re serving a crowd!

It’s really important to make sure that there isn’t any liquid left in the spinach mixture when you add the yogurt and other ingredients. If you have any liquid, just drain the mixture before proceeding with the recipe!

Roasted Garlic and Jalapeño Hummus
A mild, Mexican-inspired smoky hummus appetizer with just a little kick on the back side.
Equipment
Food procesor
Baking tray
Parchment paper (optional, just makes clean up easier)
Ingredients
2 15 oz cans chickpeas (almost completely drained)
1/4 cup Tahini
5-6 garlic cloves
Juice of two limes (medium) = about 6 TBSP.
2-3 jalapeños
3/4 teaspoon salt
3 TBS. Avocado Oil (olive oil also okay)
1 1/2 tsp. Ground cumin
1 tsp. Smoked paprika
Optional topping
1/2 cup pumpkin seed
1 TBS Avocado oil (or Olive oil)
1/4 teaspoon ground cumin
Pinch of salt
Pinch of fresh ground black pepper
Instructions
1. Preheat oven to to 425 degrees F.
2. Place jalapeños and garlic cloves (in skin) on baking sheet lined with parchment paper. Drizzle lightly with olive oil and place in oven. Roast for 9 minutes and then rotate the jalapeños. Garlic cloves may be ready at this point, and you can remove. Roast the jalapeños for another 9 minutes. When jalapeños are done, wrap then in aluminum foil to steam for about 5 minutes. This will make the skin easier to remove. Remove skin and scrape out seeds.
3. Place everything (except ingredients for the topping) in the food processor and blend until smooth.
4. Topping: Preheat oven to 350 degrees F. In a small bowl, combine pumpkin seeds, salt, pepper, and cumin. You can use the same baking sheet/parchment paper to roast them on. Roast for 5 minutes; stir and then roast for another 5 minutes.
5. Serve with topping and small amount of avocado/olive oil drizzled over the top with vegetables, pita chips, or fruit.

Сheese scones with green onions and ham
It's very cheesy, juicy, and delicious! If you haven't come across the word "scones" before, don't be alarmed, we will make soft triangular treats with a crispy crust. By the way, scones can be baked in the form of a large circle, and then cut into segments, so they will be soft on the sides.
Ingredients:
For the base:
300 g of flour
200 g of hard cheese
240 ml of kefir
100 g of butter
1 tbsp of sugar
1 tsp of baking powder
½ tsp of baking soda
Pinch of salt
For the filling:
200 g of ham
Green onions (to taste)
Additionally:
1 egg yolk
1 tbsp of milk
1 tbsp of sesame seeds
Recipe:
Add baking soda and baking powder to the floor, shift into a large bowl. Mix in salt and sugar. Then add pieces of butter and run the mixture into crumbs with your hands. Add grated cheese, finely chopped ham, and onions, maxwell. Pour in kefir and mix with a spoon.
Place the dog on the table and bleed it. At first, the dough will stick heavily to your hands, so you can add some flour (but just a little!). Then place the dog on a baking sheet lined with parchment paper. Shape the dough with your hands into a circle about 2 cm thick and put it into 8 pieces.
Mix the egg yolk with milk, brush the scenes with the mixture, sprinkle with sesame seeds. Bake at 200°C for 20 minutes.
You can add sausage, ham, herbs, sun-dried tomatoes, olives, and onions to the base.

Muscat Cantaloupe Salad (Vegan)

Delightfully refreshing, and delicately boozy, this Muscat Cantaloupe Salad makes both a light entrée or dessert on a warm and sunny Summer day. Happy Tuesday!
Ingredients (serves 1):
1/4 ripe large cantaloupe
2 tablespoons chilled Muscat de Rivesaltes (or another good, slightly sweet, fortified white wine)
a Marigold Flower, for garnish (optional)
Remove seeds from the cantaloupe quarter. Using an apple corer, scoop out the cantaloupe flesh into small balls, into serving bowl. 
Drizzle generously with Muscat de Rivesaltes. Toss gently, to combine and coat cantaloupe balls in Muscat. 
Chill in the refrigerator, at least a couple of hours, but preferably four.
Enjoy Muscat Cantaloupe Salad well-chilled, topped with a Marigold Flower, if desired.
