زعلوك ديال خيار / Za'louk dyal khyaar
This fresh, zesty dip uses cucumbers (khyaar) as an analogue for the more typical roasted eggplant or zucchini. It's a light, refreshing snack to serve in the spring or summer with bread, chips, or crackers. Because it can be made with frozen and thawed cucumbers, it's also a good way to get more produce on your table in the winter.
In fact, I made this dip because of a couple of cucumbers that were accidentally frozen from being pushed too far back in the fridge, and could no longer be eaten whole. Despite the dish's humble origins, it is really very good. Removing excess water intensifies the fresh, light flavor of cucumber; raw garlic, green onion, and chili add bite; and the tahina and olive oil add body.

Ingredients
2 small or 1 large cucumber (275g)
1 large clove garlic, chopped
2 green onions (scallions), chopped
1-2 Tbsp tahina (tahini)
2 Tbsp olive oil
1/2 green chili pepper, chopped (optional)
Juice of 1/4 lemon (about 2 tsp), or to taste
1/2 tsp table salt, or to taste
Fresh mint or cilantro, to top
Instructions
1. Cut the cucumber into slices, then remove most of its water. You can do this by freezing and then thawing it, or by sprinkling salt over it and letting it sit for 15 minutes; then squeezing to remove excess water.
2. Combine all ingredients in a blender or food processer and process to desired texture. Stir and taste to adjust seasonings.
3. Top with minced herbs and a drizzle of olive oil. Serve cold with bread.
