This Turmeric Chickpea Bowl is a delicious way to get in protein and fiber, and it includes anti-inflammatory and immune-boosting ingredients! 🧄🥑🍅
Ingredients:
•1/2 cup cooked chickpeas (or about 1/3 of a can, drained and rinsed)
•1/4 small onion, thinly sliced
•1 garlic clove, minced
•1/2 tsp ground turmeric
•1 tsp olive oil
•1 small handful of cooked kale (side)
• Salt & pepper
•Fresh parsley or cilantro (for garnish)
Instructions:
1. Heat olive oil in a small skillet over medium heat.
2. Add the onion and cook until soft, about 4-5 minutes.
3. Stir in garlic and cook for another 30 seconds until fragrant.
4. Add turmeric, cooking for a few seconds to toast the spices.
5. Toss in the chickpeas and stir to coat in the spice mixture. Cook for 3-4 minutes, stirring occasionally.
6. Stir in kale and cook until wilted.
7. Season with @redmondrealsalt and pepper.
8. Garnish with parsley or cilantro, and serve with avocado and fresh tomato.
Tip: Add a squeeze of fresh lemon for an extra zing of flavor! 🍋

To assemble I’ve used I’ve used wheat & white wraps which has only 183 calories per wrap) Lettuce Cucumber Tomatoes Onions

Spinach Egg Muffins is a tasty high protein breakfast the whole family can enjoy!
Ingredients:
• 6 pieces of uncured turkey bacon, diced
• 1/2 large onion, diced
• 1 1/2 cups mozzarella or cheddar, shredded
• 2-3 cups spinach leaves
• 12 eggs
Directions:
1. Preheat oven to 350°F.
2. Grease each cup in muffin tin with plant butter or ghee.
3. In a large bowl, whisk eggs and shredded cheese until combined.
4. On the stove, heat a frying pan over medium heat and the onion and bacon. Cook for about 10 minutes until the bacon is crispy.
5. Add spinach and stir to combine. Continue cooking for about 3 more minutes.
6. Add spinach mixture to the egg mixture in the large bowl. Stir thoroughly.
7. Fill prepared muffin pan with mixture.
8. Bake for 15 minutes.
9. Garnish with chives, parsley, or herbs of choice.
