Easy Energy Balls
2 cups Old Fashioned rolled oats
½ cup creamy peanut butter (no sugar added, or any nut butter or sunflower butter for nut free)
⅓ cup honey (or agave syrup for vegan) OR 2 spoonfuls of Truvia Monk Fruit Spoonable Jar
¼ teaspoon kosher salt
¼ teaspoon cinnamon
¼ cup vanilla or chocolate protein powder (optional; we use this one)*
3 tablespoons mini chocolate chips
Mix all ingredients together in a bowl. Freeze the bowl for 5 minutes. 
Roll the dough into 20 small balls, pressing the dough together with your hands. We used a 1 1/2-inch cookie scoop (#40) to make uniform balls. You can also make smaller balls if desired. (If the texture of your nut butter makes the dough very dry, add a little more honey or a few tablespoons milk of choice until you can press it together into a ball shape.) Refrigerate for up to 2 weeks. Enjoy!

Hello, it's Ushio. Today, I'd like to introduce one of my classic chicken dishes. We're taking crispy chicken and giving it a sushi sandwich twist. This is the perfect one-handed food, ideal for busy people and students preparing for exams. It's incredibly satisfying and delicious. Give it a try!
👨‍🍳 Recipe:
In a frying pan with some oil, add rice, salt, pepper, garlic, and consomme. Sauté over high heat, then mix in 2 tablespoons of ketchup to create Ketchup Rice.
Next, coat chicken, marinated in grated garlic and soy sauce, with potato starch, and fry until it's wonderfully crispy. Also, prepare sliced cucumbers, boiled eggs, and salad vegetables.
Once your preparations are complete, lay a sheet of seaweed in a mold and evenly spread the Ketchup Rice on top.
Add vegetables, chicken, a generous helping of chili sauce, boiled eggs, cheese, and cucumbers on top.
Finally, cover it with another layer of rice, remove the mold, and wrap it with seaweed. After wrapping, use a knife to cut it neatly. Wrapping it in plastic wrap and letting it rest for about 10 minutes before cutting will make it easier to slice.
Finally, drizzle with a special sauce made by mixing chili sauce, mayonnaise, and ketchup.

Ingredients:
Pasta (spaghetti, penne or other) - 300 g
Chicken fillet - 400 g (cut into strips)
Onion - 1 pc. (finely chopped)
Garlic - 2 cloves (chopped)
Cream (20% fat) - 200 ml
Hard cheese - 100 g (grated, for example, Parmesan)
Olive oil - 2 tbsp. spoons
Salt, pepper - to taste
Dry herbs (basil, oregano) - optional
Fresh parsley - for decoration
Preparation:
Prepare the pasta: Bring salted water to a boil in a large saucepan. Add the pasta and cook according to package directions until al dente. Then drain the water, reserving a little (about 1/2 cup) for the sauce.
Fry the chicken: In a large frying pan, heat the olive oil over medium heat. Add chicken fillet, season with salt and pepper and fry until golden (about 5-7 minutes). Remove the chicken from the pan and set aside.
Prepare the sauce: In the same pan, add onion and garlic, fry until transparent. Add cream and remaining water from under the pasta, mix. Bring to a gentle boil, then reduce the heat and add the grated cheese, stirring constantly until the cheese has melted and the sauce is creamy.
Mix the ingredients: Return the chicken to the pan with the sauce, add the cooked pasta and dry herbs. Mix well to combine all the ingredients.
Serving: Serve pasta hot, garnished with fresh parsley and additional grated cheese if desired.

GARLIC FETA FLATBREADS

Cook Time: 10 mins
Servings: 4 breads
INGREDIENTS
FOR THE FLATBREADS
1 ⅔ cups self-raising flour
¾ cup greek yogurt
FOR THE FILLING
½ cup feta, crushed
2 tbsp cream cheese
Handful of basil leaves, finely chopped
3 cups spinach, wilted with boiling water, squeezed and roughly chopped
2 garlic cloves, minced
1 tsp black pepper
SERVING
1 tbsp fresh basil, finely chopped
1 tbsp olive oil
DIRECTIONS
In a large bowl, add in your self-raising flour and Greek yogurt. Mix with chopsticks or your hands and then knead for 5 minutes until you have a bouncy soft dough. Add more flour if the dough is too sticky. Cover with plastic wrap and set aside while you make your filling.
Place all of your filling ingredients into a bowl and combine thoroughly (make sure all the water is strained out of the spinach before adding it to your mixture). Set aside.
Once your dough has rested, knead it again for 30 seconds and then slice into 4 equal-sized pieces.
Take one dough ball and lightly flatten with your fingers until it’s around 3/4 inch thick. Place a large tbsp of the filling into the center of the dough and then bring in all the corners of the dough into the center, around the feta mixture, and seal the ball. Turn the ball over face down and flatten out the dough with your fingers until the flatbread is around 1/2 inch thick. Set aside with a sprinkle of flour and repeat for the other flatbreads.
Place a non-stick dry pan on medium to high heat.
Gently place your flatbreads into the pan and fry for 3-5 minutes on each side. Keep an eye on them. Flip them over when they turn golden-brown.
Meanwhile, combine your basil and olive oil in a small bowl ready to serve.
Serve while they're warm or once they've cooled down with your sauce and enjoy!
