Beignets
These beautifully golden, light and fluffy Beignets are part of a favourite dish Dad has cooked for us since we were little. And I distinctly remember Jules and I would fight for the last one! More often than not she'd win, for I'd be inclined to share and halve it, and she would just pick it up and gobble it up. Today, Dad and I made these together, and I'm really happy with the result (and since Jules has returned home, I ate the last one!)
Ingredients (makes about 3 dozens):
1 tablespoon active dry yeast
1/4 cup lukewarm water
500 grams plain flour
1/2 cup caster sugar
1 teaspoon salt
1 tablespoon Vanilla Sugar
2 tablespoons sunflower oil
1 1/4 cup water
1 litre/4 cups sunflower or vegetable oil
In a small bowl, combine yeast and water. Give a stir, cover with cling film, and let sit, 10 minutes, until foamy.
In the bowl of an electric stand mixer, with the hook attachment fitted, combine flour, sugar, salt and Vanilla Sugar. Beat on medium speed until combined.
Add sunflower oil and half of the water in the middle of the dry ingredients, and start beating again, on medium speed, until a soft dough starts coming together.
Add yeast mixture and, gradually increasing speed to high, gradually pour in remaining water (you may not need all of it, or may need more), until you have a smooth and slack batter, a bit thinner than a brio dough. Scrape the sides with a spatula to make sure it's all well-combined.
Cover bowl with cling film, and place in a warm, draught-free place. Allow dough to rise, at least a couple of hours, until doubled in size.
Heat sunflower oil in a large pot.
Pour water in a small bowl.
Wet your (clean) hand in the water, and scoop about a tablespoonful of the risen batter, on the side of the bowl with it.
Carefully drop it in the hot oil. If it rises up quickly, drop a few more tablespoonfuls of the batter, so you have about 6 to 8, depending on the size of your pot (they need a bit of room to expand).
Flip them on each side with a wooden spoon, until golden brown all over. If they colour too quickly, reduce heat to medium. Using a slotted spoon, transfer to a shallow plate lined with paper towels and repeat until all Beignets are fried, keeping those which are ready warm.
Eat Beignets hot, as they are as a snack, or sprinkled with sugar or Cinnamon Sugar. Or enjoy them as they're meant to, as a side to a fragrant and spicy Bean Sauce!

I would never wish growing up in a hyper religious African house on my worst enemy. The cognitive dissonance is insane especially if you grow up in the West yet your family (and other African families around you) insist on clinging on to asinine “traditions” that are really just covers for abuse.
#uchiha-gaeshi overshares#like I want us to fight as equals not with you and your damaged self esteem#why is my mum calling me ‘rebellious’ for having a vibraotr when I’m fully 23???#my mum once went on a rant about me and my sister not upholding ��traditions’#my naive ass thought she was talking about idk a secret family recipe or dance or whatever#she was talking about us doing everything she says without question#I recall VIVIDLY an almost argument I had with her when I was 14-15#asking her to lay off on pressuring me academically#because I was getting stressed and it started negatively affecting my mental health#and then she just went apeshit on me#‘ungrateful’ is their go to jerk reaction to their children acting like people#oh and my parents are one of the ‘nice’obes btw#I’ve heard wayyyy to many stories of people’s parents just beating the absolute living crap about them#for the most benign shit like having crushes or something#off topic but is it normal for parents to tell kids to be careful what they say to teachers#so that the teachers don’t call cps on the family#I remember my mum telling me a story of a dad giving his kid a black eye#then when the kid’s teacher asked him where tf he got a black eye from of course the kid told the truth#and the dad had to be tried in court or something#and this whole time my mum is telling me this story it’s like I’m supposed to feel bad for this guy#who cares for his family oh so much but whose life is ruined because of the legal protections we have in place to protect kids 😔#so much discourse abt ‘purity culture’on here but I guess many people forget that in a lot of places in the world especially outside of#the west people are NOT open about sexuality at all#when you add Christianity to the mix real weird shit happens#like why is my mum crying about the fact that I masturbate#at least in her eyes I’m not a virgin….#she literally would rather have me shotgun married to a cis man I could fuck than for me to use a vibrator….#txt#African parents

GUYS
2 cups veggie or chicken broth
1 cup pureed pumpkin
1 clove garlic or a shake of garlic powder
1 inch ginger, minced, or 1/2 teaspoon dried ginger
Tumeric and black pepper (measure with your heart)
1/4 cup peanut butter
Hold back 1/4-1/2 cup broth, trust me on this. Saute spices in a little oil, dump broth and pumpkin on top of that and bring to a simmer. Mix your peanut butter with your held-back broth to thin it out, then add that to the soup and mix in. If you have time, let it sit on low heat for an hour so the flavors combine.
This is so warm and comforting and the peanut butter makes you feel like you've eaten a good solid meal. I'm so glad I tried this out this evening.
