Savor the tastes of nature with these cashew-stuffed squash blossoms that fit the Paleo diet. For any occasion, the delicate squash blossoms combined with the creamy cashew filling make for a delightful appetizer or snack.
Ingredients: 12 squash blossoms. 1 cup cashews, soaked for 2 hours and drained. 1/4 cup nutritional yeast. 1 garlic clove. 1 tablespoon lemon juice. 1/2 teaspoon sea salt. 1/4 teaspoon black pepper. 2 tablespoons water. 1 tablespoon olive oil.
Instructions: Set oven temperature to 375F 190C. Rinse squash blossoms carefully, then remove the pistils from within. Using paper towels, pat dry. Process soaked cashews, nutritional yeast, lemon juice, sea salt, black pepper, and water in a food processor until smooth. Spoon the cashew mixture into each squash blossom after gently opening it, then twist the ends to seal. Stuffed squash blossoms should be put on a parchment paper-lined baking sheet. Pour some olive oil on top of the stuffed flowers. Bake for 15 to 20 minutes in a preheated oven, or until crisp and lightly golden. Enjoy and warm up!
