Ingredients: 3 cups sushi rice. 4 cups water. 1/2 cup rice vinegar. 1/4 cup sugar. 1 teaspoon salt. Nori sheets. Assorted sushi fillings e.g., cucumber, avocado, crab sticks, smoked salmon. Soy sauce, for dipping. Wasabi, for serving. Pickled ginger, for serving.
Instructions: Run cold water over the sushi rice until the water is clear. Put the rinsed rice and water into a rice cooker. Follow the directions that come with the rice cooker. Put rice vinegar, sugar, and salt in a small saucepan and mix them together. Turn the heat down low and stir until the sugar is gone. Allow the mix to cool down. Move the rice to a big bowl after it's done cooking. Add the vinegar mixture slowly and mix it in well. Wait until the rice is cool enough to eat. On a bamboo sushi mat, put a sheet of nori. Wet your hands and put a thin layer of sushi rice on top of the nori, leaving about an inch of space at the top. Place the fillings you want in the middle of the rice in a horizontal line. With the bamboo mat, roll the sushi tightly, using light pressure as you go. With a sharp knife, cut the sushi roll into small pieces that are easy to eat. Put it on the plate with pickled ginger, soy sauce, and wasabi.

Ingredients: 2 cups sushi rice. 4 nori seaweed sheets. 1 cucumber, julienned. 1 avocado, sliced. 1/2 lb sushi-grade raw salmon or tuna, thinly sliced. Soy sauce, for dipping. Pickled ginger, for serving. Wasabi, for serving.
Instructions: Follow the directions on the package to cook the sushi rice, then let it cool. A nori sheet should be put on a bamboo sushi mat. Leave an inch of space at the top of the nori and spread a thin layer of sushi rice over it. Place fish slices, cucumber, and avocado along the bottom edge of the nori. Roll the sushi tightly away from you on the bamboo mat, pressing gently to seal. Use a sharp knife to cut the sushi roll into 6 to 8 pieces. Do it again with the rest of the ingredients. Put soy sauce, pickled ginger, and wasabi on top of the sushi rolls.
