Today was Setsubun. I know it's a special day that is observed nationwide, though the significance it has on Japanese culture is still not entirely understood. People throw beans around the house and shout to banish the demons, then spend the next 2 hours cleaning them up. They also eat sushi rolls. This year I actually enjoyed eating mine. It was filled with soy meat and kimchi.

Ingredients: 2 cups sushi rice. 2 1/2 cups water. 1/4 cup rice vinegar. 2 tablespoons sugar. 1 teaspoon salt. Nori seaweed sheets. Assorted fillings e.g., cucumber, avocado, crab sticks, smoked salmon. Soy sauce, for serving. Pickled ginger, for serving. Wasabi, for serving.
Instructions: Rinse sushi rice under cold water until the water runs clear. In a rice cooker or pot, combine rice and water. Cook according to rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes. In a small saucepan, heat rice vinegar, sugar, and salt until dissolved. Let it cool. Once the rice is cooked, transfer it to a large bowl and fold in the vinegar mixture. Let it cool to room temperature. Place a sheet of nori on a bamboo sushi mat. Wet your hands and spread a thin layer of rice evenly over the nori, leaving a small border at the top. Add your desired fillings in a line along the center of the rice. Roll the sushi tightly using the bamboo mat, applying gentle pressure as you roll. Slice the sushi roll into bite-sized pieces using a sharp knife dipped in water. Serve with soy sauce, pickled ginger, and wasabi.
