one core memory I have from childhood is making the lasagna hamburger helper a lot bc my mom actually bought the boxes so us kids could learn how to cook stuff (and it was fairly inexpensive and tasted pretty good!)

I just grabbed some boxes tonight and it feels like a bittersweet memory—one of the early forms of cooking I can remember, but also the symbol of a parent who refused to cook because she thought “everyone criticized her cooking so she just gave up.”

A few days ago I made a chana masala for the first time from a recipe I didn't realize was held up as an example of white people not understanding Indian cuisine (it was good food but not really chana masala)

I don't have the right kind of rice on hand so I've been heating up the leftover masala, spreading it on a warm tortilla with melted cheese, and rolling it up to eat it like a taco

It tastes good, but I feel as though somewhere, hopefully somewhere far away, a chef from India and a chef from Mexico have teamed up to murder me for this crime against cuisine
