one core memory I have from childhood is making the lasagna hamburger helper a lot bc my mom actually bought the boxes so us kids could learn how to cook stuff (and it was fairly inexpensive and tasted pretty good!)
I just grabbed some boxes tonight and it feels like a bittersweet memory—one of the early forms of cooking I can remember, but also the symbol of a parent who refused to cook because she thought “everyone criticized her cooking so she just gave up.”

I just realized that most of the samefoods I make for myself are color-coded? Like not specifically the ingredients themselves but the color they taste like to me. Like bread is a white flavor but toast is a brown flavor. I prefer peanut butter and toast (and usually cinnamon) over a pb+j because the colors/flavors are more cohesive(?)
But no I probably don't have autism because I have empathy and can make eye contact half of the time :)

hiii im going to be living w my aunt over the summer and therefore buying my own groceries. I am going to be busy w summer classes and working on the weekends but I do rlly want to try cooking at least once or twice a week. I can make an egg and pasta but that’s about it. What are some of your fave recipes that aren’t super complicated that I could start with if you have any? (I am open to a minor challenge but cooking can overwhelm me so I like a challenge but not too much of one lol). I am also vegetarian (not vegan) if that matters! If you don’t get to this that’s okay !!! I hope u are well 🩷🩷🩷
now it's been a little while for me since i've had to use this model due to moving back home w my family for a time but when buying groceries for one person i found it helpful to follow this sort of structure about once a week! when i do this it feels a lot easier to 'wing it' in the kitchen and mix and match my meal components. and to preface, this is what i find to be helpful and everyone is different and finds different things to work for them!!
1-3 protein sources - i like to center my meals around this because i've found it helps me feel the most nourished and full, i always think of it as things that can be the 'star' of your dishes. i eat meat so i usually do salmon, chicken thighs, and alternate pork + beef. but for u that could b things like tofu, eggs, beans/lentils, mushrooms maybe, vegetarian 'meat' fakes lol, peanut butter if u like any peanutty noodle dishes
3-4 veggies - i love to snack on veggies so i usually get snap peas, cucumbers, + bell pepper just for snacking, and then something like brussel sprouts for roasting as a side dish w a dinner, these can also be frozen
2-3 types of fruit - i am a smoothie enjoyer bigtime so i get a combo of frozen and fresh, almost always mango, and then whatever is seasonal that i can see myself being excited to eat throughout the week
2-3 grains - pastas, premade pizza crusts, bread, rice, etc!! these rly round out ur meals!! and imo they make it simpler to make a meal on the fly. i am a huge fan of microwave rice LOL
2-3 multipurpose dips/spreads/sauces/condiments/pantry items - now here is ur golden ticket for being able to reliably make well rounded and varied meals!!! slowly building up your collection over time is the most cost effective way imo. it's helpful to stock up your pantry w things like baking supplies (flours, sugars, leaveners), spices, shelf stable canned goods (canned tomatoes, beans, vinegars, oils, soy sauces, fish sauce, cartons of things like oak milk), and 'fridge pantry' items (parmesan, herbs, lemons for juice and zest, miso, gochujang, ketchup, mayo, hot sauce, jam, pickles, etc). you can use these to season your food as you cook!
2-3 snacks/frozens - any microwave meals or chips or desserts you might want!!
using this structure makes it easier to look at what you have and be like, i have xyz and they would go together well.
EX. i have rice, tofu, and bok choy, now i can cook the rice and pan fry the tofu and bok choy with my pantry ingredients (soy sauce, miso, sesame oil, chili oil) and create a filling meal!
some of my favorites that could be made vegetarian -
ground pork seared on the bottom of a dutch oven in patties (you could sub tofu or use a fake meat replacement), broken up into smaller chunks, eaten with linguine, sliced snap peas or celery, + a garlicky peanut butter sriracha sauce
pizza w a store bought crust!! super easy, done in like 10 minutes! i like to make mine in a cast iron following this protocol
i really love to dress up ramen w sliced veggies and eggs
i like to make pasta dishes and then form a sauce w parmesan cheese, butter, pasta water, lots of lemon zest and juice and sometimes chicken stock, then adding in peas and fresh herbs at the end

You can tell people that grew up, or are still middle income, or being taken care of by middle income, parents, or grew up in a house where there’s money. But they didn’t consider themselves rich or are rich. Just saw someone post something supposedly helpful. A list of 13 things people “usually have in their kitchen“ but can’t think of what to make for a meal. Meanwhile, no, not everyone has avocados and green bread or eggs let alone, fruits and vegetables in their fridge. Do you want to talk about making a meal? How about you? Talk about the bread, the ketchup, the mustard, no eggs, pasta, and maybe a can of pasta sauce, and a leftover container of butter in the fridge. Make some pasta, put a little bit of margarine on that to loosen up the noodles, a splash of sauce, couple of cheese slices to melt within the pasta stirred up at salt and pepper a bit of garlic powder some Parsley, because those are all found at the dollar store. And you have yourself a meal. If you do have eggs, you could put those on toast and make a toasted egg sandwich. If you’re lucky enough to have peanut butter in the house call me you can make a toasted peanut butter sandwich. A lot of it depends on bread. If you have no bread, depends on pasta. Pasta is really cheap but the dollar store. There’s not much room in a freezer when you’re low income because you deal with the freezer that you have in the apartment that you’re renting. So bread has to be a weekly thing, make sure you have $10 on top of the fridge or in the cupboard put away specifically to go buy bread every week. Because a lot of times if you don’t have bread, you can’t eat. Bags from the dollar store are a good thing, makes you feel like you actually have something to drink besides water from the tap. Get a bag of sugar and use it sparingly don’t have super sweet tea. Otherwise she’ll run out fast. Milk always runs out. That’s why I always kept a can of carnation milk in the cupboard just in case. You can always water it down for cereal if you’re desperate. If it’s cold, you can’t really tell. Canned vegetables, canned fruit. They can last along time you don’t have to worry about them. Going to waste in the fridge. Ramen noodles, there’s 1 million recipes for those out now. Get all your spices at the dollar store. Eggs and tuna are always great protein but don’t spoil fast. Learn how to love drinking water from the tap. Buy a case and refill the water bottles but don’t forget to clean the lids and the rims at least once a week and if the bottles get cloudy? Throw them out and save for another case. Yes, I said save because some people don’t have a three dollars to spend on a case of water or don’t want to spend the money on non-reusable plastic. You can always pick up some water bottles from the dollar store that are reusable and fill those up in your fridge. Just don’t forget to wash them with the dishes at least once a week. Can’t exactly offer those people when your mouth has been all over them. Lol so always make sure you at least have a couple bottles put away for guests. Get to love no name brand soda. When you have money to treat yourself get namebrand. But not like a case of it or something. And a case is always cheaper in the long run than just one 2 L bottle, so you can afford it ration it out. It’s not actually that bad. Cinnamon sugar on toast, a can of tuna mixed with a Lipton sidekick creamy Parmesan with half a can of peas, mix that up well with a little salt and pepper and you’ve got tuna casserole for two people. Three people if you have a little salad on the side. or you can make garlic bread. Even if you’re using slices of bread. Toast them, then butter them, add a little bit of garlic and herb seasoning to each one with a little handful of cheese, or even just some Parmesan cheese shaken on top. Let that toast, got some real cheap and garlic bread. Pretty tasty if you’re in a pinch. And you’re not bougie like people are now. I’ve had to put ketchup in hot water with half a can of mixed vegetables to make myself some soup before. Cheap eating is a skill.

How I prepare instant ramen: flavoring package + oregano + curry + either red or cayenne pepper. If eggs available, add them scrambled or mixed raw to cook on the ramen's heat like carbonara (either one prepared with red pepper flakes and if available parsley and parmesan, with oregano for scrambled and black pepper for raw). Alternatively (to eggs), cream cheese instead. Sometimes Special Sauce (soy sauce + butter + water). Chopsticks for eating

it's 3 4 a.m. and I'm hungry and we're perpetually (very) poor so bc I can't help it here is a list of some foods I dearly desperately miss:
- COFFEE.
- almost every fast food. just, hot multi-ingredient satisfying meals acquired in under 10 minutes that require no prep, cooking, or cleanup (quality can vary drastically ofc but idgaf at this point)
- more specifically: giant fucking cheeseburgers, hot and juicy, fully dressed. Taco Bell. and Chinese food. And good pizza that doesn't come from dollar store freezers. And biiig thicc sandwiches from subway or similar
- boneless garlic parmesan chicken wings
- Arby's. Roast beef, curly fries.
- French fries in general
- Zaxby's/Panera salads
- only had it a couple times but chipotle/qdoba burritos or bowls
- restaurants. haven't been out to eat since before the pandemic but just, big complicated filling meals cooked by someone else
- more specifically: warm rolls with honey butter, chicken tenders and fries, enchiladas, chicken fried steak, a good hearty chili, fettuccini alfredo with broccoli and chicken, lasagna, fully loaded potato soup, loaded nachos, a good baked spaghetti and meatballs ...
- fried pickles
- homemade comfort food, like, a full "Sunday dinner" spread. Meatloaf, or pot roast with veggies, mashed potatoes and gravy, baked mac n cheese, sweet cornbread, green beans with bacon, deviled eggs, a giant deluxe salad...
- SALADS. BIG FRESH CRISP SALADS WITH ALL THE TOPPINGS AND VARIETY
- a full breakfast spread. hash browns, pancakes, lots of eggs with onions and peppers, juice, sausages, biscuits and gravy, etc
- orange juice
- a wholeass veggie or fruit tray. mostly the carrots, or cantaloupe/strawberries/apples but give me the whole tray and leave me alone
- my "safe" foods
- banana nut bread 😭
- from-scratch home baked goods, more than just the $1-box-cake-and-$1-frosting every few months. All The Bars, All The Cookies, pies, the decadent brownies
- fucking. CHOCOLATE.
- snacks in general. Just, having them, and the ability to grab a handful between meals if needed or desired
- the delicious but "expensive" (>$5) grocery shit we can't splurge on. there's this amazing cranberry almond chicken salad...

Thorn talks food for x amount of minutes under the cut
w grilled cheese you can use mayo on the outside of the bread. Gives it a bit of an extra taste that butter doesn't. Do not use miracle whip, it won't work, it'll just melt and be sad.
If you don't have tomato soup you can dip grilled cheese into ketchup, but I'd advise sprinkling black pepper on the ketchup first to chill it out a little. Helps.
you can make deviled eggs without relish. I will not eat deviled eggs with relish, but I genuinely enjoy making and eating them if they don't have relish. try putting garlic powder in the filling, & a little vinegar if you want a pickle-ish taste without the Crunch (or just pickle juice ig. I'm not the biggest fan of pickles)
this may have been obvious to Everyone Else but you can make Actually Kinda Decent cream sauce with shaky parmesan (yknow the big canisters) and evaporated/canned milk.
if you don't like tuna salad but wind up in a situation where you have to make and eat it, I've found removing the relish aspect and smearing it on ritz crackers to be pretty good. it's one of my favorite Kinda Healthy snacks tbh
brussels sprouts suck much less if they're grilled and have a rich sauce on them (<- discovered this at red lobster)
garlic powder makes so much shit a little more tolerable tbh. Good on freezer corndogs.
If you're like me & can taste the freezer in freezer tater tots/fries, make them seasoned. Garlic & onion powder, herbs if you've got em
If you're making buttered pasta (very simple dish on its own) & you want to add something Unobtrusive but Good, plunk a chicken bouillon cube into the water before you add the pasta. along w salt
A lot of people swear by salmon with a citrus glaze, I don't really like it. I do enjoy salmon with a *maple* glaze, however
this isn't a tip I just really don't like pasta salad. cold noodles fuck me up
You've heard the tip of putting an egg in instant ramen but consider: removing most of the broth and adding onion powder, garlic powder, & cayenne powder (works best w beef or pork flavor)
I will concede that if I have the patience to spread it, butter under jelly on jelly toast is really good.
I have a very unhealthy snack. that being slapping a tortilla in a pan, melting & spreading butter on one side, flipping it over, and letting the first side toast a bit while I melt butter on the other side & add spices. It's a lot of butter. Having said that, it's good.
If I get a breakfast combo at a restaurant, I'll usually get my eggs done over medium so I can mix the yolk into the hashbrowns and add a bit of ketchup. I eat very simply so it could just be me but it's very good.
Pancakes are good if you add vanilla extract and cinnamon.
Not to do with prep but cleanup: if you use canned milk in a pan that isn't Extremely Good Nonstick, get soap and water in that beast Immediately. canned milk is a nightmare if it dries.
Ketchup is a very strong flavor. You can use this to mask flavors you dislike.
Dill in scrambled eggs is pretty good.

Not eating vegetables puts you in a high risk category for a looooot of health complications. Please treat your future self well and find vegetables you enjoy!!
I used to really dislike vegetables across the board, and I'm still very particular about them. My mother loves to roast too-crowded vegetables to death, which is honestly a war crime against so many vegetables but ig ymmv.
I have never liked broccoli or carrots cooked together with anything, as I often don't enjoy it when things take on the flavor of other things (I don't want my carrots to have a weird Beef flavor and I don't want my Beef to have Carrot flavor).
Ways I have enjoyed vegetables, if you need ideas:
Carrots raw with or without ranch
Carrots (raw) grated into salad, spaghetti sauce, or carrot cake
Chopped carrots with olive oil or butter roasted until crisp
Carrots finely diced in fried rice
Butternut Squash cut into fries and coated with olive oil roasted then until crisp
Butternut Squash roasted until tender. (I don't like acorn squash too much or spaghetti squash; they have different flavor profiles and textures)
Butternut Squash finely diced in fried rice. (If you don't over cook it, it has the texture of a carrot and adds some sweetness.)
Broccoli (raw) with ranch
Broccoli (boiled/steamed until just tender) with a cheese sauce
Broccoli roasted until just tender with a touch of sugar and topped with parmesan cheese. (High effort because the recipe I followed involved changing the temperature midway & also stirring, and the cheese has to be added a few mins before it's done, but good results)
Kale in soup
Kale in fruit smoothies (I was skeptical but gave it a go and found I couldn't detect the kale)
Kale lightly fried for a burger
Frozen peas. (I don't like them cooked, though sometimes I'm able to ignore them in fried rice or tuna salad.)
Fresh sugar snap peas. (I will not eat these cooked)
Cabbage in spring/egg rolls
Cabbage in soup
Cabbage in oriental salad
Cabbage roasted until tender with some Dijon mustard on top
Celeriac root subbed for potato in soup (expensive but good)
Daikon radish subbed for potato in soup (needed more experimentation to prevent the whole soup from becoming a slurry tho)
Celery finely chopped in soup
Pickles in tuna salad (I will not eat pickles any other way.)
Zucchini in top ramen (do be warned that anything you add to top ramen will change its flavor profile.)
Zucchini cut into circles and fried until crispy
Spinach parmesan salad (first spinach I ate!)
Spinach in wraps and sandwiches
(I unfortunately cannot eat spinach due to the high oxalate content which when combined with the autism (autistic people have higher oxalic acid blood level content than allistic) wreaks havoc on my gut and fibromyalgia. I also struggle with potato for this reason but most symptoms there can be mitigated with a calcium supplement at the time of eating)
"green leaf" lettuce and butter crunch lettuce subbed for iceberg (I don't like romaine) (iceberg is such good texture but is fairly devoid of nutrients)

Pumpkin roasted like squash
i mean this in the gentlest way possible: you need to eat vegetables. you need to become comfortable with doing so. i do not care if you are a picky eater because of autism (hi, i used to be this person!), you need to find at least some vegetables you can eat. find a different way to prepare them. chances are you would like a vegetable you hate if you prepared it in a stew or roasted it with seasoning or included it as an ingredient in a recipe. just. please start eating better. potatoes and corn are not sufficient vegetables for a healthy diet.

Trying to get a handle on food waste, over-spending due to under-planning, consumption of too many refined carbs + processed foods, + some unhealthy nighttime snacking habits due to not eating enough during the day. Chatted with my best friend who uses a sort of loose meal plan system where she doesn’t have specific days for each recipe, so I’ve gone with something similar here. It’s likely that not everything will wind up in my shopping cart, but I wanted to give myself some wiggle room in planning. We’ll see how it goes!

Also nice jojo meme, ive actually been meaning to watch part 6 for a while but im waiting for my provider to have it on the app
Here's some for now (but be warned because I tend to use nothing but my intuition when it comes to measurements)
One pack of ramen (you do not need the flavoring unless it's chicken, then keep that packet). Make the ramen as normal, drain it of the water when done. Transfer it to a pan on medium low heat, melt about 1 tbsp of butter with the noodles, coating them in it. Add Italian seasoning (oregano, some parsley, sage, thyme), garlic powder, a dash of onion power as well, some salt, and pepper while still stirring the now buttered noodles. You can melt some parmesan while it's still on the pan or put it in a bowl and let it melt at the top. Asiago or romano also work. Add some chives too for the extra flavor. You can also add in like, 1/3 milk, a bit of corn starch, let it thicken to make creamy noodles. Make sure to add in that flavor packet but not all of it! It can overwhelm the rest.
There's another version of this that also uses chilli oil, some,,, oyster sauce?? brown sugar, like a splash of vinegar and fresh garlic. Bit of sesame oil as well. Add in some dried seaweed! Absolutely delicious.
Brussels sprouts oven baked!! A game changer!! Get a good portion size of brussels sprouts, clean them (take off the stem and the other gross leaves), halve them, and then throw them in a bowl. Combine some olive oil, salt and pepper, garlic powder, bit of onion powder, and some parmesan. Make sure they're well coated! Line them on a baking sheet and throw them about,,,, 15 minutes at 400F. After that timer goes off, flip them. Set the timer for around 15 mins. but be warned they CAN burn, so generally eyeball them until they're fork tender but the middle is still a b i t chewy. They're so delicious.
I also add a bit of chicken bouillonto the brussels sprouts.
Simple chicken cutlets, I just cover them in whatever herbs I'm feeling at the moment and pan sear them. Thyme, paprika, garlic, onion, salt and pepper, bit of butter and rosemary are really good. Should probbaly use breadcrumbs and run it through an egg wash? bath? Whatever you call it. Chicken is super diverse though - I also recommend oven baking!! oven baked mac and cheese ohohoh.
You can add lemon to chicken and make it good like, without question.

So I’ve been making a lot of instant ramen. Between depression, exhaustion from work, not getting enough sun, being cold- it’s been a ramen kind of month. And I know I’m late to the party but I have found something that I just wanted to share that makes my ramen a little bit, I dunno, better? Without the extra effort? I’m not saying top ramen is the healthiest of foods but hear me out-
Frozen vegetables. 
I’m a broke bitch but Walmart frozen veggies are like, a buck a bag. Take tonight, for example. I’m sick, my family is eating something gross that I don’t want to eat (I hate burgers and oven fries), and all I want is something like soup. Here’s what I did and if I hadn’t decided to have an egg it would have only taken one pot. So, I took a thin sliced chicken breast and cut it up, let it cook in some butter and olive oil. Added in some fresh pre-sliced mushrooms (only because that’s the one frozen veggie I can’t eat), then when those were cooked I added in a touch of water and garlic flavored better-than-bouillon paste my mom had. It makes it into a broth, right? So then I add in spices because I’m trying not to be sick- salt, pepper, cayenne, onion powder, garlic powder and umami seasoning. Then I dropped in a tiny handful of frozen corn, frozen peas and frozen carrots. This does drop the cooking temp of the broth. Let them simmer in there until they’re all defrosted. If you don’t want an egg, then bring it up to a boil and drop in some noodles and let the noodles cook in your broth. Easy. Took me like, fifteen minutes. 
Now, some days I’m really depressed or my mom is and doesn’t cook or there’s no food in the house and I’ve worked a ten hour day and I’m tired- whatever the reason is, sometimes you can’t be bothered. On those days, I skip the fresh chicken and mushrooms, still pretty much do all the same things but I will add in more frozen veggies. I usually don’t use the provided spice packet, because I’ve made my own broth by using the bullion thing, but if I do I only use a sprinkle. Instead of poaching an egg separately, I just crack one right on top and then cover to cook. (Emmymade has a couple videos where she does this.) 
I dunno, it’s been really nice and satisfying. My room isn’t heated the best, so it’s sometimes hard to stay warm and it’s been really nice to have a lovely bowl of soup that takes less than five minutes to make and still tastes like veggies or something good. 
I also love Mythical Kitchen’s parmesan based recipe, but that’s an every-once-in-a-while thing for me, not an every time I eat ramen thing. SO good, though. 
I don’t know why frozen veggies in ramen never occurred to me when I was younger and living on my own, but it’s been a lifesaver lately. So I just thought I’d pass along the tip that probably already everyone knows but hey, if you don’t, here ya go. 
EDITED: Just wanted to add, just because I used the Garlic bullion paste doesn’t mean you have to. I usually use chicken flavor, but there’s ham, lobster, beef, onion, seriously this shit comes in tons of flavors so you can make any soup you want.
