If you have harvest to use like I do, or want to eat seasonally, give this recipe a try.
HARVEST SOUP 🍅🌽🧅🥕🍠
• 1 lb. grass-fed ground beef or lean, organic ground turkey (or lentils for plant-based)
• 1/2 onion, chopped
• 2 (10.5 oz) cans beef consomme
• 2 cups filtered water
• 1 1/2 cups tomatoes, cubed
• 1 Tbsp Stevia
• 1 1/2 cups corn
• 2 carrots, peeled & sliced
• 2 celery stalks, chopped
• 4-5 purple potatoes or 2 medium sweet potatoes, peeled & cubed
• 1 tsp. @redmondrealsalt salt
• pepper to taste
Directions:
1. Brown meat with onions.
2. In large pot, bring water & broth to a boil.
3. Add in all ingredients.
4. Boil until vegetables are tender (about 20 minutes).

I'm gonna sound like a fucking conspiracy theorist but I think it's very weird that the narrative around eating healthier on English speaking Western online spaces somehow always ends up as "it's just not for common people".
Like on one hand, all the diet culture and "clean eating" bullshit online tends to promote a lifestyle that is unattainable or unsustainable for someone without prior education - like it's always pushing for trendy expensive fresh food every day. I can't have tuna and pasta, the staple food or broken italian students everywhere, I have to have an avocado tuna sandwich. I can't have a bag of frozen spinach, I need baby spinach. Protein smoothies only need powder and a liquid but if you look up online they need twenty ingredients of random assorted bullshit. Add more fruit in your diet BY HAVING FRESH BERRIES EVERY DAY.
On the other hand, most criticism of diet culture and "clean eating" seems to boil down to "see this is bland and boring, don't worry your pretty little head around it and keep eating junk food. No don't learn how to cook, that's just too hard. Just give up entirely". They even had that whole scandal of companies paying influencers under the table and so many headlines screaming "DIETS DON'T WORK" knowing full well no one is gonna click on the article to read the "fad diets don't work and diets don't work because it's supposed to be a lifestyle change not something you do for six months and then give up forever" thing written at the end of it.
Like eating well plays a very important role in everything in your life and you basically have to fight so much advertisement and bullshit trying to convince you that you can't and you shouldn't and btw now we are also turning cooking into a trend, so instead of teaching people to make tuna pasta we need you to believe that it's not cooking unless it can go on instagram.
Nevermind the fact that food tends to be homogenoised and we tend to lose all particularities of local cuisines.

Bacon and Cauliflower Soup

➡️ Ingredients:
4 slices bacon, chopped
1 head cauliflower, chopped into small florets
2 cups chicken or vegetable broth
1 cup heavy cream
1 cup shredded cheddar cheese
Salt and pepper to taste
✔Optional toppings: additional shredded cheddar cheese, crumbled bacon, chopped scallions
➡️ Instructions:
•In a large pot, cook the chopped bacon over medium heat until it is crispy. Remove the bacon from the pot with a slotted spoon and set aside, leaving the bacon grease in the pot.
•Add the chopped cauliflower to the pot with the bacon grease, and sauté for a few minutes until it begins to soften.
•Pour in the chicken or vegetable broth, and bring to a boil. Reduce heat and simmer until the cauliflower is tender, about 10-12 minutes.
•Using an immersion blender or transferring the soup to a blender, blend the soup until it is smooth.
•Return the soup to the pot, and add the heavy cream and shredded cheddar cheese. Stir until the cheese is melted and fully incorporated into the soup.
•Season with salt and pepper to taste.
•Serve hot, with optional toppings such as additional shredded cheddar cheese, crumbled bacon, or chopped scallions.

Soup that is delicious recipe:
Bacon (1-3 slices) use a tablespoon or two of oil if you are veggie based)
Onion (a palm full, maybe 1/4 cups)
Tomatoes (like 7 regular sized Roma tomatoes)
A can of chicken broth (if your veggie based, probably use veggie broth)
Heavy cream (if you’re vegan idk I don’t think this recipe is useful to you)
Parmesan cheese (see above note)
Spices: I used garlic powder, salt, black pepper, a lil rosemary, and a healthy amount of crunched red pepper flakes (my go to spicyness adder)
This makes about 2 bowls of soup
Cook the bacon in your soup pot. Cook until crispy, if there are burnt bits in your oil try to scoop them out. Remove the bacon and set it aside but leave the oil. If you want less oil scoop some out
Peel your tomatoes and discard peel. Chop the tomatoes up pretty little. Add chopped tomatoes into pot with oil
Chop up your onion into small pieces add them in
Those steps happen at around the same time just depends on if you prechop your veggies or not
Then I let that start going and after a while I add in the seasonings just to taste
Let that cook down until the juice has come out of the tomatoes and they start to dissolve it will be a rolling boil and I just let it go awhile. I don’t blend mine so I try and cook it down quite a bit so the tomatoes dissolve but really as long as they’re soft it’s a matter of preference.
Once it’s boiled down a lil add in your can of broth and repeat the process. A good way to judge this is that the cream isn’t going to necessarily make it that much liquidier so cool it down until it’s just a little less liquify than the final product you’re hoping for.
If you have an immersion blender and want to use it probable stop the tomato boiling part earlier and leave the broth boiling part longer and blend now.
Next turn the heat down and add in the cream and cheese and stir it.
It’s done now and you can eat it
I had mine with a boiled egg and some pimento cheese on toast and also cake and strawberries
