Purple Sweet Potato Soup

1 tbsp coconut oil 1 leek, peeled and chopped 1 tsp garlic paste 1 tsp ginger paste 6 generous cups chopped purple sweet potato 6 cups water 2 cans (400 ml each) coconut milk 1 cup red lentils 1/3 cup white miso paste 1 tbsp Chinese 5-Spice 1/2 tsp sea salt ¼ tsp black pepper
Heat coconut oil in large saucepan over medium-high heat. Sauté leek for several minutes. Add garlic and ginger pastes and sauté for another minute or two.
Stir in the; sweet potatoes, water, coconut milk, red lentils, miso paste, and Chinese 5-Spice. Turn heat to high. Once soup begins to bubble, turn heat to low and simmer for 10-12 minutes, stirring occasionally. Turn heat off.
With a handheld immersion blender, purée soup until smooth and creamy. Stir in sea salt and black pepper. Taste and adjust seasoning if necessary.
Ladle into bowls and serve.

Sweet potato (Ipomoea batatas) comes in a variety of colours such as orange, purple, white and yellow. They are also rich in vitamins, minerals, antioxidants and fibre. You can boil, bake, steam or fry them but in our house, we normally boil/steam it whole with skin or peel the skin and prepare it as Sweet Potato Dessert Soup (番薯糖水). Here, we are using Vietnam grown Japanese Purple Skin Sweet Potato with yellow flesh.

started the new year right by having one of my all time fav tong sui (chinese sweet dessert) - barley, ginkgo & fu zhuk (beancurd) dessert 🤤💞
#my parents got it from this little kopitiam (chinese coffeeshop) where they make this dessert#and i like theirs because they blend their fu zhuk so the dessert becomes like this thick sweet soup and not like the usual more watery one#i love all sorts of tong sui but THIS tops the list!!! also tong sui is like my feel-good comfort food/drink 💞#wait till i get my hands on a bowl of the purple sweet potato + sago one OR the longan + snow fungus one!!#and omg don't get me started on black sesame filled tang yuan 🤭#i'm wondering if anyone even knows wtf i'm talking about but y'know what let me ramble to no one 🤭😭#ice talks

It’s soup season AND spooky season! I was pleasantly surprised how delicious this ube, ginger, coconut soup was. Easy to make and healthy! Topped with a little yogurt and roasted pistachios. When I can get my hands on some more ube, I will definitely make more of this.

I've been doing a vegan play through of BG3. Like, I'm still a durge, and evil, but I try not to kill animals, and I don't consume meat or cheese. Is anyone else doing this? Any mods to add more vegan items? Also, am I missing the beans? Ye olde europe would have eaten a bunch of beans, right? How do I get protein if no beans?

If you have harvest to use like I do, or want to eat seasonally, give this recipe a try.
HARVEST SOUP 🍅🌽🧅🥕🍠
• 1 lb. grass-fed ground beef or lean, organic ground turkey (or lentils for plant-based)
• 1/2 onion, chopped
• 2 (10.5 oz) cans beef consomme
• 2 cups filtered water
• 1 1/2 cups tomatoes, cubed
• 1 Tbsp Stevia
• 1 1/2 cups corn
• 2 carrots, peeled & sliced
• 2 celery stalks, chopped
• 4-5 purple potatoes or 2 medium sweet potatoes, peeled & cubed
• 1 tsp. @redmondrealsalt salt
• pepper to taste
Directions:
1. Brown meat with onions.
2. In large pot, bring water & broth to a boil.
3. Add in all ingredients.
4. Boil until vegetables are tender (about 20 minutes).

Boss, not gonna lie - In my opinion, Barbecue and Sweet & Sour Sauce are so good with fries.

Kale salad with baharat-roasted sweet potatoes, mint, and thyme
Roasted chickpeas, sweet potatoes, and golden beets are combined with leafy greens and fresh herbs in this bright, zesty Mediterrannean-inspired salad. A quick massage with salted oil makes the kale tender enough to eat, while the earthy and warming spices in Egyptian baharat lend complexity and aroma to the roast.

Ingredients:
For the salad:
3 bunches curly kale, chard, or other leafy green, steps removed (270g without stems; 6 cups when chopped)
1 Tbsp good olive oil
1/2 tsp table salt
Small bunch parsley
Small bunch mint
For roasting:
1/2 cup cooked chickpeas
3 golden beets
1 sweet potato (I used a purple sweet potato)
2 tbsp olive oil
1/2 tsp seb'a baharat
1/4 tsp salt
3 sprigs thyme
3 cloves garlic, peeled and crushed
Dressing:
1 Tbsp olive oil
Juice of 1/2 lemon (1 1/2 Tbsp)
1/2 Tbsp balsamic vinegar
Crack of black pepper
1-2 tsp mirin or granulated sugar, to taste
Instructions:
For the vegetables:
1. Prepare the vegetables. Chop the beets and potatoes into small pieces of equal size, and remove the thyme leaves from their stems. Coat beets and potatoes in olive oil, baharat, salt, and thyme, then roast at 400 °F (200 °C) for 5 minutes.
2. Dry cooked chickpeas with a kitchen towel. Add them to the baking tray with the other vegetables and mix well. Roast for another 5 minutes.
3. Add peeled garlic to the baking tray and mix again. Roast for another 5 minutes, or until potatoes and beets are fork-tender.
For the salad:
1. Wash greens well in a colander. Remove stems and save for another purpose (such as pickling or mincing and adding to a soup). Roughly chop leaves and dry in a salad spinner, or by wrapping in a kitchen towel and spinning the towel around quickly.
2. In a large bowl, combine leaves with 1 Tbsp olive oil and 1/2 tsp salt. Massage the oil and salt into the leaves for a minute or two to soften.
3. Float parsley and mint in a bowl full of cool water to clean. Remove leaves from their stems and dry them with a kitchen towel. Roughly chop them and add them to the bowl with the greens.
For the dressing:
1. In a medium mixing bowl, combine all ingredients except oil.
2. Slowly add oil while whisking constantly, to emulsify.
To assemble:
1. Add roasted vegetables and dressing to the prepared greens and toss. Taste and adjust salt, pepper, lemon juice, and vinegar.
Serve immediately, as a side to a quiche or savory tart.

Texture: You get like 5 different foods every bite. This is not balanced. There is no harmony. This sandwich is the embodiment of disorder and chaos. 1/5
Presentation: The fact that this even looks sandwich adjacent is a fucking miracle. You don’t get full points though. Because I don’t like you. 3/5
Would Chunk Eat It?: He would eat maybe 1/50th of it. So no. 1/5

Potato?
Oh Potatoes! I love Potatoes for many reasons. They’re great and healthy for you. They’re rich in Vitamin C and antioxidants.
When Scurvy was a really big issue potatoes were literally life savers at the time as well! They have done wondrous things for peoples health and saved many many lives. They also contain potassium and contain a specific electrolyte that helps your heart muscles and nervous system function!. They have fiber rich skin and are very low in calories as well!
But there’s also the downside on potatoes. There’s some research suggesting that eating too much potatoes raises the risk of diabetes and hypertension which has over time been raised as well from being genetically modified and used in mostly used to make greasy foods like fries. Please take this with a grain of salt. These are of course studies and research and it never hurts to be a bit skeptical even with science!
Did you know that some food guides have started to exclude potatoes from the vegetable group due to how often it’s associated with high-fat diets?(Fast food/Junk food)
Potatoes are generally fantastic and easy to use for just about everything. The saying or insult of “ couch potato “ is pretty silly imo. When people tell you that you don’t want to be a potato or anything along that line they are completely ignoring the fact at how versatile a potato actually is. They are used to make all kinds of foods whether as sides, compliments to the main dish (or the main dish themselves) or eaten as a snack. From baked potatoes to chips to even Vodka! They are able to be used in so many ways and I think people really miss the bus here. I think being called a potato should be a good thing in positive context. Being versatile and able to do or make so many things by being yourself is amazing honestly.

Hash browns, chips, fries, tater tots, potato salad, potato bread, potato pie, potato soup, potato noodles, hasselbacked, boiled, broiled, mashed, smashed, baked, braised, roasted, fried, and smoked

Russet, Jewel Yam, Japanese sweet, Hannah sweet, Austrian crescent, Blue, Red norland, Russian banana, La ratte, purple majesty, French fingerling, Red gold, Red bliss, Yukon gold, Red thumb, Creamers, orange sweets, and yams.
It should be important to note that I am taking classes for Culinary and food. I am learning a lot about food and enjoy food! I suppose this is incredibly lucky timing because I am just finishing up learning about fruits and vegetables. A lot of this also comes from research and I am by no means a professional.
