Purple Sweet Potato Soup

1 tbsp coconut oil 1 leek, peeled and chopped 1 tsp garlic paste 1 tsp ginger paste 6 generous cups chopped purple sweet potato  6 cups water 2 cans (400 ml each) coconut milk 1 cup red lentils 1/3 cup white miso paste 1 tbsp Chinese 5-Spice 1/2 tsp sea salt ¼ tsp black pepper
Heat coconut oil in large saucepan over medium-high heat. Sauté leek for several minutes. Add garlic and ginger pastes and sauté for another minute or two. 
Stir in the; sweet potatoes, water, coconut milk, red lentils, miso paste, and Chinese 5-Spice. Turn heat to high. Once soup begins to bubble, turn heat to low and simmer for 10-12 minutes, stirring occasionally. Turn heat off.
With a handheld immersion blender, purée soup until smooth and creamy. Stir in sea salt and black pepper. Taste and adjust seasoning if necessary.
Ladle into bowls and serve.

Roast Butternut Soup
Ingredients:
1 butternut squash, cut into large chunks
1 onion, cut into large chunks
100g cherry tomatoes
1 Apple, diced
4 medium carrots, cut into chunks
1 bulb garlic, top sliced off
100g walnuts
Olive oil
Salt
600ml veggie stock
Method:
Put all the veggies, the apple, and the walnuts onto a large baking tray, drizzle with olive oil, sprinkle with salt, and roast in the oven at 180 degrees for about 20 minutes, until the butternut is soft. Be careful not to let the garlic or walnuts burn!
Scoop the flesh out of the butternut and squeeze the garlic out of its skin. Put these along with the rest of the roasted veggies and the apple into a blender, and blend with the stock until it’s smooth. Transfer to a pot to heat it through before serving! (You might need to add a bit more hot water depending on how thick you like it)
This was so delicious and perfect for autumn 🍂 it made 4 large portions, and would be perfect for meal prep if it lasts that long 😂. I served it with some pepper, olive oil, and some more walnuts with some focaccia on the side. If also gives you all of your five a day!

Another entry for soup season! This Italian Chik'n Pastina soup is based on what I remember of my grandma's cooking. Those fall and winter days where I'd get presented with a bowl of chicken soup with these delightful little pastina noodles in it. She'd always sprinkle some pecorino romano cheese in, which I used white miso paste to replicate the flavor of. There are 34 grams of protein per serving, and tons of fresh herbs and veggies for a nutrition powerhouse!

Brazilian-inspired Squash Soup

1 tbsp coconut oil 1 tbsp dende oil (or more coconut oil)
1 yellow onion, peeled and chopped
1 tsp garlic paste  1 tsp ginger paste
1 package (750 g) frozen butternut squash 1 medium-sized sweet potato, peeled and chopped 2 cups vegetable bouillon 2 cans coconut milk 1 tbsp cumin 1 tsp paprika 1 tsp smoked paprika 1 tsp chiii paste
the juice of one lime 1 tbsp coconut sugar 1 tsp salt 1/4 tsp black pepper
Heat coconut and dende oil in a large saucepan over medium-low heat. Sauté onion for several minutes. Add garlic and ginger and sauté again for another minute or two.
Stir in the; squash, sweet potato, vegetable bouillon, coconut milk, cumin, paprika, smoked paprikra, and chili paste. Turn heat to high. When soup reaches a boil, redue to low heat and simmer for about ten minutes, until veggies are fork tender. Turn heat off.
Stir in; lime juice, coconut sugar, salt, and black pepper. Allow to cool for a few minutes.
With a handhelf immersion blender, blend until smooth and creamy. Serve. (Reheat as needed.)
