Another treat for the Souptember
✨kidney bean soup ✨
Ingredients:
400g dry white kidney beans (NOT canned beans)
4-5 potatoes
3 carrots
1 onion
250g bacon
2-3 smoked sausage
2-3 liters of stock (veggie or meat, your preference)
3 bay leaves
3-4 allspice berries
1 teaspoon of sweet paprika (ground dry spice)
1 tablespoon of marjoram
salt
black pepper
2 tablespoons of tomato paste (optional)

Start preparing the day before, or early in the morning if you plan on making the soup late in the afternoon/evening - because you need to soak the beans in water for at 8-10 hours. It's good to just put them in a water overnight. *make sure the bowl is filled with water to almost the top, because the beans will soak up a lot of water!

2. Once the beans have soaked for hours, rinse them, then put them in a pot. Pour your stock in. If you want to increase quantity, add water.
3. Add bay leaves and allspice berries. Cover the pot with a lid.
4. Keep the pot on medium heat and bring the brew to a boiling point. Then lower the heat, but keep it simmering and cook beans for 30 minutes.
5. Peel your potatoes and carrots. Dice/slice them.
6. After cooking beans for 30 minutes, add your veggies and keep it bubbling for another 25-30 minutes.
7. While the veggies are simmering, finely chop your bacon and dice the onion. Get the bacon on a heated pan. Fry it until the fat melts and the bits are nicely brown. Then add your onion and fry it with bacon until the onion is softened and golden. Then turn off the heat.

8. Slice the smoked sausage. Make sure you get a smoked, ready to it kind of sausage, not a raw one!
9. Once you had your veggies simmering for 30 minutes, add the mix of bacon and onion to the pot, then add sliced sausage. Stir.
10. Add 1 teaspoon of sweet paprika spice. Add some black pepper. Stir.
11. Keep the pot on low heat for another 10 minutes. Then turn the heat off.
12. Add 1 tablespoon of marjoram. Stir.

13. Taste and decide if you'd like more salt or black pepper and add accordingly. (We haven't added salt before, because stock often comes salty already, as well bacon and sausage have saltiness in them and the soup soaks that up).
14. Eat! 😊 *you can also add at this point 2 tablespoons of tomato paste, but that's completely optional. Personally, I don't add it, but some people like it.

Anyways, vegetable stew
Handful of greenbeans
2 carrots
1 white or sweet onion, or use shallots, it doesn’t really matter
2 stalks of celery
1 large potato
Frozen peas
Can of diced tomatoes
Kidney beans
Pinto beans
Handful of spinach
Turmeric, salt, black pepper, vinegar (balsamic or white preferable) olive oil
Maybe noodles if you’ve got a big pot?
The amount of broth is really relative to what you want, so I never really measure how much I use, I just eyeball it and add more if needed. You need a LOT of it if you want more of a soup than stew, or halve the amount of ingredients.
Greenbeans, carrots, onions/shallots, celery and the potato get chopped and go into your pot with boiling broth. Let them stew and get soft, these are your hardest ingredients, they gotta soften.
After about 25 minutes, or however long it takes for your vegetables to go soft, add your peas, tomatoes, kidney beans, pinto beans and spinach. Season with turmeric, salt, pepper, and add vinegar and olive oil to taste.
If you’re adding noodles, boil them in a separate pot first. Otherwise they’ll get a gross mushy consistency. Drain them out, add them to the pot. They should be pretty much the last thing you add before or after seasoning, it doesn’t matter as long as they’re your last solid ingredient.
Ladle it out, eat, thrive 👍 I like to add shredded cheese on top.

Beignets Haricots (Beignets with Spicy Bean Sauce) (Vegetarian)

Beignets Haricots, a staple of Cameroonian Cuisine, has always been a favourite dish in this house! It's delicious, fragrant, and comforting as a hug. The sort of food you delectably eat with your fingers! It was really nice and pretty special too, cooking it with Dad! Happy Saturday!
Ingredients (serves 6):
4 tablespoons sunflower oil
1 1/2 onion
2 shallots
1 Green Onion
half a long Garden Chilli 
1 heaped tablespoon Ginger Paste 
4 garlic cloves, minced
4 Whole Peeled Tomatoes + 1/2 cup of their juice
1/2 cup water
2 medium tins red kidney beans
1/2 teaspoon fleur de sel or sea salt flakes
1/2 teaspoon freshly cracked black pepper
a large bowl full of hot, freshly fried Beignets 
In a large pot over a medium-high flame, heat sunflower oil.
Peel and finely chop onions, shallots, and Green Onion. Stir them into the hot oil, and fry, about 3 minutes, stirring often until softened.
Thinly slice Chilli, and add to the pot. Cook, a couple of minutes more.
Stir in Ginger Paste and cook, 1 minute.
Add minced garlic, and cook, 1 minute more.
Spoon Whole Peeled Tomatoes and their juice into a blender, and process until smooth.
Pour Tomato Purée and water into the pot, and give a good stir. Reduce heat to medium, and cook, 10 minutes, stirring often.
Rinse and drain red kidney beans, and stir them into the pot. Season with fleur de sel and black pepper.
Bring to a slow boil, cover with a lid, reduce heat to medium-low, and simmer, at least half an hour to three-quarters of an hour, until the sauce has thickened and become spicy and fragrant.
Spoon Spicy Bean Sauce into serving pot, and bring to the table, along with hot Beignets.
Serve Beignets Haricots hot, with a glass of robust red wine, like Languedoc's Fitou.
