After having spent 4 months in Kashmir last year, I was really missing the fabulous Kashmiri food, though I mostly got to eat only the Muslim version. Thankfully I was stationed in a hotel which had Kashmiri Vegetarian food which is so difficult to come by , otherwise. So Matamaal in Gurgaon really piqued my curiosity because Mikhail whose parents own the place, told me that they solely focus on Kashmiri Pandit food. So it just struck me yesterday when I was boarding the flight from Mumbai , Shivratri is the single most important festival for Kashmiri Pandits and what better day than today to savor some authentic Kashmiri fare. This thali probably has some of the finest Vegetarian food and I can attest as a hardcore carnivore, you will not miss the meat. The dishes include rajma, Gobi Rogan Josh , Lal Chaman , haak saag ,aloo dum , mooli chutney and ladyar Chaman and the centre piece of attraction , nadru churma. The most amazing thing about this thali was the absence of onion , garlic and tomato but still packed with so much flavor . Each dish was distinct. The slow cooked goodness of rajma, the subtle turmeric induced warmth of ladyar Chaman. My favorites were clearly aloo dum , so rich and unique in texture that my vegetarian friend of mine wanted me to double check that it wasn't meat. Now this is the same dish mediocre Punjabi restaurants butcher it by stuffing potatoes with khoa and raisins. The caramelised chili based gravy was divine and that goes for the fantastic Gobi Rogan Josh as well. You can clearly see the time and care invested in roasting even a simple cauliflower. To balance out the spices , you also had the refreshing radish yogurt chutney and the delightfully light haak saag made of collard greens with a solitary red chili to spike up the dish. The deep fried lotus stem , nadru churma can be safely dubbed the Kashmiri fries which add another dimension to the Thali. Together with steamed rice, it is a deeply satisfying meal , but surprisingly light on your stomach. The quality of the spices , the finesse and the freshness of the ingredients , you can clearly see in the food and the perfect ending for this meal was the very decadent , but a (at Matamaal Restaurant)

A beautiful fine dinning restaurant in Mumbai that takes you to Kashmir often described as paradise on earth. POUSH meaning 'flower' in Kashmiri, serves authentic Kashmiri cuisine. Once we entered we were enamoured by the ambience, truly was the Essence of Kashmir. A warm welcome by the Hospitable staff was truly remarkable This was our first time tasting authentic Kashmiri food. As you enter the restaurant, you see shikaras(wooden boats in which you can sit and eat) placed all over, curtains blowing gently with the breeze. You remove your footwear & settle in one of them. Before & after the food, an attendant gets a TASH-T-NARI (a small wash basin) with lukewarm water, in which you can wash your hands. So what did we order : . Trami We ordered the ‘half-trami’ which comprises of 5 starters & 5 main dishes that serves for two 2. I would call this the Kashmiri way of having a hearty meal. The 5 starter pieces were served around a rice. Starters : 1. Meethi Maaz - a gravy starter. This aromatic, spicy curry had tiny fatty chunks of mutton & generous amounts of fenugreek. 2. Nadier Palak Tikki - made of lotus stems and spinach 3. Kabaargah - ribs of a young lamb cooked in milk & spicesthen fried. 4. Sheek kabab – melt in themouth minced mutton marinated and grilled on skewers over coal. 5. Fried Chicken - Chicken fried with a mild taste. Each meat was cooked to perfection with a blend of authentic Kashmiri spices, The rice helped balance out each meat, which truly helped to tackle down each meat. Main Course : 1. Rogan Josh - red mutton gravy cooked deliciously well 2. Ghoshtaba/Rista - spongy meat balls cooked in a curd based gravy 3. Rajma - Tasty dish of kidney beans. 4. Ruwangan kokur - chicken pan fried,cooked in a tomato & onion gravy. Delicious 5. Rice / Roti Desert : Phirni TEA : . Kahwah No Kashmiri meal is complete without Kahwa, a strong, fragrant, absolutely delicious green tea. the taste of cardamom, nuts, saffron and apples really cleansed my palate, loved every sip of it.
