Lamb Rogan Josh

Spicy, fragrant and hearty, this beautiful Lamb Rogan Josh brings back memories of travelling through Southern India ten years ago (oh, dear!) I had fallen in love with the dish, as well as with the country, and remember relishing the gorgeous flavours at a seaside restaurant in Goa! I am so happy, and rather proud, with how it tastes. It might require a bit of time, but it makes a very special lunch on a slow Sunday, and is well worth the effort! Have an excellent one, friends!
Ingredients (serves 4):
3 tablespoons sunflower oil
1 tablespoon Mustard Seed Oil 
1 teaspoon Graines à Roussir 
1 teaspoon Garam Masala
1 teaspoon ground turmeric
4 cloves
6 cardamom pods
1/2 teaspoon Red Chili Flakes 
1 large onion
4 garlic cloves
1 heaped tablespoon Ginger Paste 
1 teaspoon coarse sea salt
2 bay leaves
4 Whole Peeled Tomatoes + 1/4 cup of their juice
1.2 kilos/2.65 pounds lamb meat, like lamb shoulder
1 cup water
1/2 cup plain yogurt
1 teaspoon demerara sugar
4 fluffy sprigs Garden Cilantro 
In a large Dutch oven over a medium-high flame, heat sunflower oil with Mustard Seed Oil.
Add Graines à Roussir, Garam Masala, turmeric and cloves. Fry, 1 minute.
Crush cardamom pods, and add them to the Dutch oven, along with Red Chili Flakes. Fry, 1 minute more.
Peel onion and, using the coarse side of a box grater, grate it.
Stir grated onion into the oil and spices, and fry, a couple of minutes.
Using the thinner side of the box grater, grate garlic cloves.
Add grated garlic, along with Ginger Paste to the Dutch oven, and cook, another minute.
Cut lamb meat into generous chunks, and add to the Dutch oven, in batches, browning well on each side. Season with coarse sea salt, and stir in bay leaves.
Finely chop Whole Peeled Tomatoes, and stir, along with their juice, into the Dutch oven. Cook, 1 minute.
Finally, stir in the water and plain yoghurt, and bring to the boil. Once boiling, reduce heat to medium-low, cover with the lid, and simmer, one hour to one hour and a half, until the sauce has darkened, reduced and thickened.
Remove the lid, and stir in demerara sugar until completely dissolved.
Finely chop Cilantro, and stir into the Dutch oven.
Simmer, about 5 minutes more.
Serve Lamb Rogan Josh hot, onto Cardamom Rice, and with warm Podeena Paratha.

Save money, make your own ginger paste.
It's not that hard, and yes it will last. I make mine about every 3 months. It's pretty simple, but to keep it preserved you do need to add some extra ingredients. Oil, salt, garlic, and vinegar together all do a fantastic job of preserving it.
It saves you a ton of money. I was paying $5 for a teeny tiny jar, which lasted me 3 weeks at most. Now I make almost a liter at a time and it costs me $8 at most.
Here's your ingredients:
450g ginger
1/2 head garlic, peeled
45mL vinegar (3 tbsp)
45mL oil (3tbsp)
1 tbsp salt
Peel your ginger and cut into 1" pieces. It's possible your electric blender/food processor may be able to blend this with no issue, but mine needs some help, so I also use my motor and pestle to slightly mash it first before adding it to the blender. Once it's all the the blender, I just add the rest of the ingredients and blend until smooth.
Just transfer to a jar, store in the fridge, and there you go! Fresh ginger paste for a fraction of the cost.

Chicken and Butternut Lentil Dahl

Spicy and comforting on a wet and grey day, this vibrant Chicken and Butternut Lentil Dahl will warm you up as you come home from a walk or a potter in the garden under a light drizzle!
Ingredients (serves 2):
2 tablespoons ghee
1/2 large onion
1/2 red Bell Pepper
2 teaspoons Garam Masala
1 teaspoon ground tumeric
1/2 teaspoon cumin seeds
1 large garlic clove, minced
¾ teaspoon Red Chili Flakes 
2 heaped teaspoons Ginger Paste
4 chicken drumsticks
1 thick slice of a lare butternut squash
1/3 cup split red lentils
1 teaspoon coarse sea salt
1/2 teaspoon freshly cracked black pepper
1 cup coconut milk
2 cups water
Melt ghee in a large pot or Dutch oven, over medium heat.
Peel and thinly slice onion. Add to the Dutch oven, and cook, stirring often until softened, about 3 minutes.
Seed and chop Bell Pepper. Increase heat to medium-high, and stir chopped Bell Pepper into the Dutch oven. Cook, a couple of minutes.
Add Garam Masala, ground tumeric and cumin seeds, and fry, one minute more.
Stir in garlic and Red Chili Flakes. Cook, another minute. Then, stir in Ginger Paste.
Add chicken drumsticks, and cook, to brown on all sides.
Peel and cube butternut squash. Add to the Dutch oven, along with red lentils, stirring well to coat in ghee and spices. Season with coarse sea salt and black pepper.
Then, stir in coconut milk and water. Bring to the boil.
Once boiling, reduce heat to medium-low, cover with the lid, and simmer, 25 minutes.
Serve Chicken and Butternut Lentil Dahl hot, with Paratha.
