8 minute smoked haddock kedgeree 🐟💫 This is my cheats version of a traditional smoked haddock kedgeree 🙌🏻 Packed full of goodness and smoky curry flavour - who knew something so tasty could be cooked so quickly! Swipe for video 📹 Recipe below: ~ 2 eggs 2 smoked haddock fillets 1 onion, finely diced 1 tsp turmeric 1 tsp ground coriander 1 tbsp mild curry powder 200g baby spinach 1 pack microwave rice 2 heaped tbsp plain yogurt 1 lemon, juiced ~ 1. Using a two tiered steamer, boil the eggs for 8 mins with the fish in the steamer pan above it. 2. Fry the onion in a little oil in a large non stick pan, then add the spices and stir in - add a dash of water if it becomes a little dry. Add the spinach and rice to the pan, cover and cook until the eggs and fish are cooked. 3. Gently tip the cooked fish into the rice pan and stir to break apart into flakes. Stir in the yogurt and lemon juice. 4. Healthy Meals for Kids

 If you're anything like me, the craziness in your house can be so overwhelming that the very fact that your children ate today was one of your biggest accomplishments. Picky eaters, sensitive palates, sensory issues, limited food choices, and healthy foods all play a part in the daily running of our houses. It's a juggling act and we know that if we don't care about what is going into our kids' bodies that there may be repercussions.
 We have a big responsibility on our hands. We need to not just feed these kids, but somehow we need to put it together into a nice neat package that helps our kids grow both physically and mentally. We can generate healthy, kid friendly meals with the help of some creative recipes but why is it so important?
Brain Growth
 Who doesn't want a smart kid, right? Well what we feed our kids can go a long way to promoting good brain function and even improve learning. According to Food for the Brain, feeding our children healthy meals that do these four things can truly help them develop their brains properly:
1. Balance blood sugar 2. Provide essential fats 3. Provide vitamins and minerals 4. Avoid anti-nutrients and eliminate allergens
 When you provide healthy meals that allow these four elements to work together, you know you are feeding not just your child but their body's command center as well.
Physical Development
 Vitamins and minerals provided through healthy children's meals contain the essential ingredients for optimal physical development. Whether it's vitamin D and calcium to help promote healthy bones and teeth, vitamin C to promote a strong immune system, or vitamin A to support vision development, each of these components are essential. However, you don't need to panic and try to cram everything in to every meal. Healthy meals using some of our kid friendly recipes should provide everything your child needs.
Mood Impacts
 Think about this for a second. If you are feeling down and miserable and you go and grab a burger from a fast food place, does that get you energized for your day? Probably not. More likely, it's going to make you drag, make you feel ill, and if you're anything like me, you'll feel guilty as well. That's because the nutrients in foods actually can affect your digestion and, equally as important, your brain chemistry.
 According to an article on livestrong.com, salt, sugar, some additives, and any ingredient that a child is sensitive to, can change a child's mood. This is true particularly for those with attention deficit hyperactivity disorder (ADHD). Serving a child a well-rounded diet can help stabilize moods so you don't have a kid bouncing off of the walls or slow to get off of the couch.
 So now that we have the basics down, let's find out how to get our kids eating healthy without losing our minds in the process. We want you to join us as we explore the many healthy, kid friendly recipes we're serving up. I know I can always use more in my house. Picky eaters and time crunches abound but I can't let that stop me from putting healthy meals on the table and I'm sure you won't let it stop you either.
