Lemon and Apricot Lamb Tagine
This fragrant and spicy Lemon and Apricot Lamb Tagine elevates your leftover Easter roast into a more-ish and comforting North African stew, warming you up from these April showers! Happy Thursday!
Ingredients (serves 3 to 4):
2 tablespoons olive oil
1 1/2 teaspoon Ras-el-Hanout
1/2 teaspoon dried thyme
1/4 teaspoon cumin seeds
1/4 teaspoon ground chilli
6 plump cardamom seeds
1/2 large onion
1 garlic clove, minced
1 large lemon
1/2 cup dried apricots
1/3 cup almonds
1/2 teaspoon coarse sea salt
1/2 teaspoon freshly cracked black pepper
Leftover Herb Lamb Roast聽 with plenty of meat on the bone, along with 1 cup of its聽Roasting Juices, congealed
3 cups water
2 heaped tablespoons good pure honey
1 teaspoon demerara sugar
In a large Dutch oven, heat olive oil over medium-high heat. Add Ras-el-Hanout, dried thyme, cumin seeds and ground chilli, and fry, 1 minute.
Crush cardamom pods, and add them to the Dutch oven. Fry, 1 minute more.
Peel and finely chop onion, and stir into the Dutch oven, coating in spices. Fry, a couple of minutes.
Add minced garlic and cook, 1 minute.
Cut lemon into quarters, and cut each quarter in half. Add lemon pieces to the Dutch oven, along with dried apricots and almonds. Cook, 3 minutes. Season with coarse sea salt and black pepper.
Add leftover Herb Lamb Roast to the Dutch oven, and brown briefly, on all sides. Then, stir in its聽Roasting Juices, until melted. Add water, and bring to the boil.
Once boiling, cover with the lid, and simmer, one hour, until the Lamb聽meat fall off the bone. Stir in honey and demerara sugar until melted.
Serve Lemon and Apricot Lamb Tagine hot, onto Lemon Semolina.

#hyperbole but w/e#like making good lemonade isnt that hard to the point that having good lemonade isnt really an accomplishment#however the amount of bad lemonades out there in the world makes the lemon lover in me cry.#anyways: how to improve your lemonade. 1st taste along the way. 2nd instead of adding sugar directly to water instead make simple syrup#simple syrup is 1 part sugar to 1 part water. boiling the water speeds up the solution.#2:1 sugar:water makes it shelf stable if you want to use the syrup for cocktails#anyways after you dissolve the sugar and heat the water turn off the stove and put the zest from your lemons youre using in the syrup#this will steep and draw out the oils (which have a lot of lemon flavor). this lets you strengthen the taste of your lemonade w/o the sour#but still use the juice for the tartness because tart lemonades are great#in fact you can actually throw other stuff into the syrup to steep if theres a lot of flavor in the oil#i sometimes put chopped mint and green chilies. thats makes good lemonades#you can also do ginger; cardamom; anise; honestly any spice#just fucking treat the hot syrup like it was tea. hell put tea in the syrup#as long as you strain the solids out of the syrup you just use it in place of the sugar when combining it and the juice and water#How To Drink youtube channel has a vid all about making syrups; both conventional and not#you can also make more fruity syrups by throwing fruits in a pot like strawberries with a bit of water; heat it; and just smash the bastards#strain the solids once again; reduce and you have syrups that you can then add to your lemonade#add sugar too to your fruit syrups theres not enough natural sugars to make the quantity you want#if you keep these syrups in little bottles you can honestly mix and match for all kinds of drinks#like club soda + these syrups and this is just normal soda but with funky flavors#you want to drink a god damn black pepper soda you cam#i think this escaped me#the power of syrups is potent

Daal with raita
Ingredients for 4 portions:
2-4 onions, finely chopped
4 cloves of garlic, pressed and finely chopped
1 teaspoon dried chili flakes (2,5 if youre brave)
1 teaspoon turmeric
2 teaspoons ground cilantro
2 teaspoons ground cumin
1 teaspoon ground cardamom
0,5 teaspoon curry
0,5 teaspoon dried ground ginger (or 1 tsp freshly grated)
250g dried red lentils
800g canned chopped tomatoes
5dl vegetable broth
400ml coconut milk
olive oil
salt and pepper
(optional) you can put other veggies in there to make it a mixed vegetable daal. carrots, bell pepper, peas, cauliflower, etc. these are saut茅d along with the onions
(optional) for a little extra protein, add a dl or two of quinoa along with the lentils. these won't affect the taste at all
(optional) a handful of fresh cilantro, for topping
Raita
1 handful of fresh mint
2dl greek yoghurt
0,5 cucumber
1 clove of garlic
salt and pepper
Preparation:
Saut茅 onions and garlic in a pot with plenty of olive oil. Once the onions are starting to clear, add chili, turmeric, dried cilantro, cumin, cardamom, curry and ginger, and let this simmer while stirring for a couple minutes.
Wash the lentils thoroughly and add them to the pot, along with canned tomatoes and vegetable broth. Let it simmer under a lid for 30-45 minutes, until the lentils are soft. Stir the pot regularly, and add a little extra vegetable broth if the consistency becomes too firm.
Add coconut milk and taste test with salt, pepper, chili and cumin.
Serve in bowls along with raita, topping the daal with fresh cilantro
Raita:
Wash and finely chop the mint. Press and finely chop garlic. Grate your cucumber coarsely.
Add all the ingredients to a bowl and mix. Taste test with salt and pepper.

Lamb Rogan Josh
Spicy, fragrant and hearty, this beautiful Lamb Rogan Josh brings back memories of travelling through Southern India ten years ago (oh, dear!) I had fallen in love with the dish, as well as with the country, and remember relishing the gorgeous flavours at a seaside restaurant in Goa! I am so happy, and rather proud, with how it tastes. It might require a bit of time, but it makes a very special lunch on a slow Sunday, and is well worth the effort! Have an excellent one, friends!
Ingredients (serves 4):
3 tablespoons sunflower oil
1 tablespoon Mustard Seed Oil聽
1 teaspoon Graines 脿 Roussir聽
1 teaspoon Garam Masala
1 teaspoon ground turmeric
4 cloves
6 cardamom pods
1/2 teaspoon Red Chili Flakes聽
1 large onion
4 garlic cloves
1 heaped tablespoon Ginger Paste聽
1 teaspoon coarse sea salt
2 bay leaves
4 Whole Peeled Tomatoes + 1/4 cup of their juice
1.2 kilos/2.65 pounds lamb meat, like lamb shoulder
1 cup water
1/2 cup plain yogurt
1 teaspoon demerara sugar
4 fluffy sprigs Garden Cilantro聽
In a large Dutch oven over a medium-high flame, heat sunflower oil with Mustard Seed Oil.
Add Graines 脿 Roussir, Garam Masala, turmeric and cloves. Fry, 1 minute.
Crush cardamom pods, and add them to the Dutch oven, along with Red Chili Flakes. Fry, 1 minute more.
Peel onion and, using the coarse side of a box grater, grate it.
Stir grated onion into the oil and spices, and fry, a couple of minutes.
Using the thinner side of the box grater, grate garlic cloves.
Add grated garlic, along with Ginger Paste to the Dutch oven, and cook, another minute.
Cut lamb meat into generous chunks, and add to the Dutch oven, in batches, browning well on each side. Season with coarse sea salt, and stir in bay leaves.
Finely chop Whole Peeled Tomatoes, and stir, along with their juice, into the Dutch oven. Cook, 1 minute.
Finally, stir in the water and plain yoghurt, and bring to the boil. Once boiling, reduce heat to medium-low, cover with the lid, and simmer, one hour to one hour and a half, until the sauce has darkened, reduced and thickened.
Remove the lid, and stir in demerara sugar until completely dissolved.
Finely chop Cilantro, and stir into the Dutch oven.
Simmer, about 5 minutes more.
Serve Lamb Rogan Josh hot, onto Cardamom Rice, and with warm Podeena Paratha.
