Garlic paste: Your kitchen's new best friend! 👋🧄

Ingredients:
2 whole garlic bulbs (about 20-25 cloves), peeled
1-2 tablespoons olive oil (or neutral oil)
Pinch of salt (optional)
Equipment:
Food processor or blender
Small jar or airtight container
Instructions:
Prep the Garlic: Separate the cloves from the bulbs and peel them. You can use a garlic peeler if you have one, or smash each clove gently with the flat side of a knife to loosen the skin.
Blend: Add the peeled garlic cloves, olive oil, and salt (if using) to a food processor or blender. Blend until you get a smooth paste. You may need to scrape down the sides a few times.
Adjust Consistency: If the paste is too thick, add a bit more oil and blend again until smooth.
Store: Transfer the garlic paste to a small jar or airtight container. Store in the refrigerator for up to 2-3 weeks.
Tips:
Oil: The oil helps to preserve the paste and prevents it from drying out. You can use any neutral oil, such as avocado or grapeseed oil.
Salt: Adding a pinch of salt helps to enhance the flavor and also acts as a preservative.
Large Batch: You can easily double or triple the recipe to make a larger batch.
Freezing: For longer storage, you can freeze the garlic paste in ice cube trays. Once frozen, transfer the cubes to a freezer-safe bag or container.
This aromatic powerhouse is a staple in countless cuisines, adding depth and flavor to everything from savory dishes to marinades. Making your own garlic paste is super easy and SO much tastier than the store-bought stuff. Plus, it lasts for weeks in the fridge!

I'm on a mission to find the perfect cheesecake recipe for someone who recently tried an unforgettable one but couldn't get the recipe from the cook. Now, they're desperately trying to recreate it at home. I am not a super fan of cheesecakes, but here I am.

I made homemade handheld peach pies!!!! 🍑 I used Julia Child's pastry dough recipe, but I added a quarter stick more of butter. It's decadent. The crust is so flaky, tender, and crispy. The perfect combination of ice cold butter and lard. It's not my healthiest creation, but one of the tastiest baked goods that I make. Once in a while, it doesn't hurt to indulge. I like making the individual pies because there's more crispy crust. 😋 I have to admit that I just ate two. Salad all day tomorrow. That's my rationalization.

Chicken Mayonnaise Sandwich

We heading off again for this Long Weekend, too! Only this time, we travel by rail. It shall be a bit after lunchtime when we board our train, so we might pack a couple of sarnies, like this simple but more-ish Chicken Mayonnaise Sandwich! Happy Saturday!
Ingredients (serves 1):
2 large slices day-old Brioche, rather thinly cut
2 heaped tablespoons Garden Herb Mayonnaise 
the wings of a beautiful Roast Chicken, cold
Toast Brioche slices, and allow them to cool completely.
Generously spread Garden Herb Mayonnaise onto each Brioche slice.
Remove Roast Chicken flesh from the bones, and arrange into a nice layer on one of the Mayonnaise-slathered Brioche slice.
Top with remaining Brioche slice, pressing gently, to sandwich.
Chill until serving time, wrap tightly in cling film if bringing on a picnic, or enjoy Chicken Mayonnaise Sandwich immediately!
