This recipe for herbed mashed "potato" features a unique blend of nutrient-dense ingredients and is a creative twist on the classic mashed potato side dish. Cauliflower is the major ingredient in this guilt-free mashed potato recipe. a versatile, low-carb veggie. What is it that cauliflower cannot do? For extra richness and nutty flavor, add cashews, macadamia nuts, or both. Blend them into a creamy consistency that resembles traditional mashed potatoes. To give extra creaminess, wetness, and a subtle vegetable taste, zucchini is incorporated.

To boost their nutritious content and give them the smooth texture of traditional mashed potatoes, flax oil is added to these "potatoes." This produces mashed potatoes that are silky and adaptable. Add the herbs of your choice; you can chop them finely and add a few tablespoons of dried and fresh herbs, or you can add a handful of fresh rosemary. The scallion adds a hint of onion taste. Finally, a sprinkle of salt completes the flavor. The accompanying mushroom gravy is created entirely of plant sources and is rich and savory. HOW MUCH FAT SHOULD YOU EAT PER DAY?
In a healthy adult diet, the dietary reference intake is a minimum of 20% to a maximum of 35% of your energy needs from fat.
This equates to about 75-77 grams if you eat 2,000 calories in a day.
Preferably, no more than 10% of your energy requirement comes from saturated fat.  
Monounsaturated fat: 15%-20%
Polyunsaturated fat: 5%-10%
Saturated fat: less than 10%
Trans fat: 0%
Cholesterol: less than 300 mg per day
We know too much fat can kill you, we all know that.
Our body stores these in, basically, anywhere--it’s disgusting, isn’t it? Under the skin, around the waist, in the liver, pancreas, and heart.
When stored in these areas, they cause a number of diseases from chronic inflammation to cardiovascular diseases.
But did you know too little fat is also harmful?
A lack of essential fatty acids can cause the following:  
Decreased ability to learn ; Neurological disorders
Hair loss
Stunt growth
Infertility
Poor eyesight
Weakened immune system
Kidney and liver damage
Poor wound healing
If decreasing fat intake is part of your diet, the stored fat is first used but deficiency may be a consequence. You may also feel cold more often because the insulation layer is missing.

CHOCOLATE FLAXSEED MUFFINS
 INGREDIENTS:
1 cup of almond flour
1 cup of golden flaxseed meal
1/2 cup cacao powder
1/4 cup of erythritol sugar free sweetener, or equivalent
1 teaspoon of cinnamon
1 teaspoon baking powder
1/2 cup of almond butter
1 teaspoon vanilla extract
1 cup of almond milk
 INSTRUCTIONS:
(1)          pre-heat the oven to 320 F (160 C)  
(2)          mix the dry ingredients in a bowl and whisk to combine
(3)          add the wet ingredients and stir well
(4)          grease a muffin pan with avocado oil using baking paper 
(5)          spoon even amounts of the batter into the tray
(5)          bake until a cake skewer comes out clean
Enjoy.
Note:
I mixed the batter by hand but an electric mixer, or processor, would be better to blend in the almond butter quickly.
I substituted water for almond milk.
Baking time is optional. I over cooked them because I wanted a dry muffin but a shorter baking time will leave the inside moist, or even fudge like.
Temperature and time may vary from oven to oven. I used a fan forced oven.
Cooking time is approximately 20 - 30 minutes
Using a stainless steel muffin tray, smeared with oil, the muffins lifted straight out of the tray when cooked. I used avocado oil but coconut oil or ghee can be used.
