A creamy and indulgent keto-friendly twist on classic mac and cheese, using cauliflower instead of pasta. This dish is rich in flavor and satisfyingly cheesy, making it a perfect comfort food option for those following a ketogenic diet.
Ingredients: 1 medium head cauliflower, cut into florets. 1 cup heavy cream. 2 cups shredded sharp cheddar cheese. 1/4 cup grated Parmesan cheese. 1/2 tsp garlic powder. 1/2 tsp onion powder. Salt and pepper to taste. Chopped fresh parsley for garnish optional.
Instructions: Preheat oven to 375F 190C. Steam cauliflower florets until tender, about 5-7 minutes. Drain well. In a saucepan, heat heavy cream over medium heat until simmering. Reduce heat to low, add shredded cheddar cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Stir until cheese is melted and sauce is smooth. Add steamed cauliflower to the saucepan and stir until cauliflower is evenly coated with cheese sauce. Transfer cauliflower mixture to a baking dish. Sprinkle with additional cheddar cheese if desired. Bake in the preheated oven for 15-20 minutes, or until bubbly and golden brown on top. Garnish with chopped fresh parsley before serving, if desired.

Ingredients: 1 lb chicken breasts, diced. 4 cups chicken broth. 2 cups cauliflower florets. 1 cup diced celery. 1 cup diced carrots omit for strict keto. 1/2 cup diced onion. 2 cloves garlic, minced. 1/4 cup heavy cream. 2 tbsp olive oil. 1 tsp dried thyme. 1 tsp dried rosemary. Salt and pepper to taste.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. If you're using them, add diced onion, garlic, celery, and carrots. Cook the onions until they become clear. Dice the chicken breasts and put them in the pot. The chicken is done when it's no longer pink. Put in the chicken broth and raise the heat. Put in the cauliflower florets, rosemary, thyme, salt, and pepper. Let it cook on low heat for 15 to 20 minutes, or until the vegetables are soft and the flavors blend. Add the heavy cream and stir it in. Let it cook for five more minutes. If you need to, change the seasoning. Enjoy while hot!

Ingredients For 4 Servings:
• 4 bell peppers (any color)
• 7 eggs
• 2 turkey sausages, halved lengthwise and diced
• 1 tablespoon smoked paprika
• 1 tablespoon salt
• 1 tablespoon diced oregano
• 1 cup shredded mozzarella cheese
• 1 cup grated Parmesan cheese
• Cooking oil spray

Instructions
1. Prepare the Bell Peppers
• Preheat the oven to 380°F (193°C).
• Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the peppers face-up on a baking tray.
2. Mix the Filling
• In a large bowl, crack the 7 eggs.
• Add smoked paprika and salt. Whisk until well combined.
• Dice the turkey sausages and stir them into the egg mixture.
3. Stuff the Peppers
• Use a ladle to fill each bell pepper half with the egg mixture.
• Sprinkle mozzarella cheese and Parmesan cheese evenly on top.
• Lightly spray the peppers with cooking oil and sprinkle diced oregano on top.
4. Bake the Peppers
• Place the tray in the oven and bake for 15 minutes, or until the eggs are set and the cheese is golden and bubbly.

Chicken Pot pie! How have I not tried this in the last 3+ years on keto!??? What!?!? Thanks to @sarahrelatable and her husband for saying the crust I posted the other day would make a good savory crust for chicken pot pie. Ummmmm, he was so right! All I did was combine 2 1/4 cups almond flour, a tsp of salt, 3 Tbs softened butter and one egg. Pressed it into a muffin top pan to make 6 pie crusts. One with caraway sees to try later. Baked at 350 for 12-15 minutes. For the chicken I peeled the skin off of 8 chicken thighs and pressure cooked them in my instant pot for an hour with 4 cups of water. After, I pulled the chicken out, deboned it all, strained the broth and returned the broth to the pot and reduced it a little bit... Added garlic powder, onion powder, pink salt, black pepper, and sage. Then, I added 4 tablespoons of heavy cream, 4 tablespoons of butter, and 1 tsp of xanthan gum to thicken it up a little. Added the chicken back in and served over the crust. You can easily add your favorite low carb veggies... celery, some onion, maybe cauliflower... 🌶️Keto Chili-Blackbean Pork Cabbage Stir-Fry🌶️
Preparation time: 5 minutes Cooking time: 5 minutes 🍽 Servings: 1
Ingredients:
150g minced Pork
20g Red Bell Pepper, cut into thin strips
20g Shallots, thinly sliced
1 Tbsp Chili-Blackbean Paste
75g Cabbage, shredded
Procedure:
1) Sear pork in a non-stick pan until brown and fat is rendered.
2) Add shallots and bell peppers. Sautee until aromatic.
3) Add chili-blackbean paste. Stir well.
4) Add cabbage and toss for 1-2 minutes.
5) Serve hot.

I made steak chili in my instant pot and it turned out amazing! I made jalapeño “cornbread” to go with it but this morning had chili and scrambled eggs:) For the chili I cut up a London broil into cubes, added a few cups of water and let it pressure cook on “stew” for 40 minutes, after hat I switched it to low simmer and added onion powder, garlic powder, cumin, chili powder, salt, and pepper. I reduced it to thicken. I also added about 1/2 a cup of tomato sauce to bring it together. Be sure to salt at the end and to not over spice since it does reduce.
