Potato Gnocchi and Broccoli Soup
Serves 4-6
What you’ll need: 
1 tablespoon olive oil
1 cup chopped celery
3 garlic cloves, crushed
1 tbsp dairy or vegan butter
2 cups chopped broccoli
2 cups vegetable stock
2 cups oat milk (or other plant milk)
Salt and pepper
1 (14 oz) package potato gnocchi with a tablespoon of olive oil
2 tbsp all purpose flour and a little bit of water
1 cup dairy or plant based cheddar cheese
fresh parsley for garnish
fresh thyme for garnish
Process: 
To a soup pot add olive oil and chopped celery over medium heat. Stir to combine. Heat for 2-3 minutes. Turn heat to low and add garlic. Stir to combine. Add dairy or vegan butter and let melt. Now add chopped broccoli, vegetable stock, oat milk, salt and pepper.  Heat for 10 minutes. 
Meanwhile cook gnocchi according to package instructions adding the olive oil after cooking so they don’t stick together. When done set aside. 
While this is cooking mix together flour and water. Pour into soup pot to thicken liquid. If this doesn’t suit your taste add a bit more flour and water to thicken soup or leave out all together if you don’t like a thick soup base. 
To serve add a generous amount of broccoli soup to a bowl and top it with gnocchi, cheese, fresh parsley and fresh thyme.

Well well well!!!! If it isn't the end of the year! How has everything around us changed and evolved (not just the virus 😑). It is time for some reflection ����😊 These are some of the goodies I have stuffed my face with this year, which have either given me ideas of how to restructure my diet or what to cook in my own time. As no one really knows, I don't like cooking at all, not only that, I don't have the best relationship with foods, however I enjoy experimenting. My biggest culinary project this year is veganizing some of my favourite foods 🥦🥬🌶 Even though there were countless interferences from personal life, I made some smashing good stuff, two of them being Japanese cotton cake and avocado brownies 😋 🍰🍫 🥑🥑 🍊 🫐🫐 There are some lessons to take away - you should introduce a variety of ingredients in your diet and trying new things is good 🍻🍻 Exposing yourself to a new range of flavours can help ease some of that boredom and make you smarter. Tomato, Potato, and Corn Galette
Serves 4-5
What you need: 
1 store bought pie crust, room temperature
1-2 tablespoons butter
1/4 cup olive oil
1 cup diced potatoes
salt and pepper
2 cups fresh corn
1 cup shredded scamorza or mozzarella cheese
garlic salt
1 cup grape tomatoes quartered
fresh basil 
1 egg white
Process:
Begin by preheating oven to 400 degrees Fahrenheit. Place parchment paper on a pizza pan and lay pie crust out on pan. Set aside. 
Heat a large pan over medium heat for 1-2 minutes. Add 1/2 of the butter and a quarter of the oil to the pan. Save the rest for the corn and for topping the galette. Then add diced potatoes, salt, and pepper. Stir to combine and stir occasionally for 4-5 minutes. When potatoes are soft, set aside in a bowl. Now add the rest of the butter and a quarter of the oil to the pan. Add corn, garlic salt, and pepper. Stir to combine and continue cooking over medium heat 4-5 minutes, stirring occasionally. When done remove from heat. 
Evenly place shredded cheese on top of pie crust. Then add corn, potatoes, and top with tomatoes. Add some fresh basil and then drizzle on the rest of the olive oil. And add a bit more salt and pepper. 
Fold over edges of pie crust to give it a pretty rustic look. Brush crust with egg white. Place in oven and bake approximately 20 minutes or until crust is golden brown. Serve warm or at room temperature.
