I have a cold and I have to work a couple of really long days. I woke up craving pancakes. I’ve been on keto for about three months to try and help my fibro, so flour and sugar are out of the question. Normally I’d just swap out to almond and a bit of coconut flour, but they don’t have the same fluffy bite as conventional wheat flour. Today I added 2 table spoons of a low fodmap wheat flour to the mix, loaded up on cinnamon and nutmeg, and drowned it in keto maple syrup (which tastes exactly like Macdonalds hotcake syrup).
They did the job, and I am feeling like I gave myself some sort of kindness today to get me through this hellish day.
Keto has been very challenging, and has really changed a lot of how I understand food and my relationship with it. It has helped marginally with the pain, so let’s hope as I stick with it that it gets easier.
I can see myself having these pancakes again, though.
