Pumpkin Protein Pancakes

Pumpkin Pancakes Recipe

Ingredients:

2 cups pancake mix

1 tsp pumpkin pie spice

1/4 tsp cinnamon

3/4 cup pumpkin puree

2 tsp vanilla extract

1 1/2 cup milk (I used 2%)

2 eggs

2 tbsp oil (I used vegetable oil)

Servings: 12-15 small pancakes

Steps:

Add milk, egg, oil, and pumpkin puree to a mixing bowl. Whisk together.

Add pancake mix and spices to mixture. The mix should be somewhat runny. This is the pancake mix that I used.

3. Melt butter on a griddle or pan over medium high heat.

4. Use a 1oz ladle to portion out pancakes before adding to hot griddle or pan.

5. Pour batter onto buttered griddle.

6. Once pancakes start to bubble, flip.

7. Remove from griddle and repeat with rest of batter. In between batches, monitor heat and make sure there is enough butter. I turned down the heat after the first batch, and re-buttered about every two batches.

Serve warm with butter and maple syrup.

Coco’s turned into Denny’s during the pandemic. I hadn’t been to Denny’s for many years and just realized that they have pumpkin pancakes (seasonal special). They weren’t on the printed menu and neither were the new Beetlejuice Beetlejuice specials.

Denny’s menu has changed a lot and now seems similar to IHOP’s (lots of decadent pancakes, including cinnamon roll, chocolate chip, pumpkin pecan). They also have crepes, omelettes, melts, salads, burgers, and build your own slams. There’s a value menu and senior menu.

Stack of pumpkin pancakes ($4.68): A stack includes two pancakes. I was surprised that they poured syrup on the pancakes. No powdered sugar or whipped cream (like at IHOP). The syrup tasted like caramel. I scraped it off. The pancakes were soft with mild pumpkin spice. IHOP has better pumpkin pancakes.

Hashbrowns ($4.49): Not bad, finely shredded, cooked till crispy on the outside

Coffee (with free refills, $3.99): on the bitter side but they do use 100% arabica beans. Lots of non-dairy creamer provided.

Service was fine. The place is comfortable and quite popular. Open 24/7 hours. Large parking lot. Online ordering is available.
