Ingredients
For The Crust
1½ cups graham crackers crushed
2½ tbsp sugar
⅓ cup butter melted
For The Cheesecake
8 oz cream cheese room temperature
1 egg
¼ cup sugar
½ tsp vanilla
For The Pumpkin Layer
7.5 oz pumpkin puree
½ cup evaporated milk
1 egg
⅛ cup brown sugar
⅛ cup sugar
½ tsp cinnamon
⅛ tsp nutmeg
⅛ tsp salt
Instructions
Preheat oven to 350° and line a muffin pan with liners and lightly spray with nonstick cooking spray. Set aside.
For The Crust
In a medium bowl, add graham crackers, sugar, and butter and mix until combined.
Press the crust into the bottom of the muffin liners.
Bake for 10-12 minutes. Remove from oven and let cool completely.
For The Cheesecake
In a medium bowl, beat cream cheese until smooth.
Add eggs, sugar, and vanilla. Beat until combined then place in the fridge to chill for 30-40 minutes.
Evenly spoon cream cheese mixture on top of cooled graham cracker crust.
For The Pumpkin Layer
In a medium bowl, whisk eggs until light and fluffy.
Add pumpkin, milk, brown sugar, sugar, cinnamon, nutmeg, and salt. Stir until combined.
Pour pumpkin mixture over cream cheese (best to pour pumpkin gently on top of a tablespoon so it flows off the spoon which helps create an even layer).
Bake for 45-55 minutes or until sides are set and center is still a bit jiggly.

Vegan Spiral Vegetable Tart
via The Colorful Kitchen
Prep time: 30 mins
Cook time: 45 mins
Total time: 1 hour 15 mins
Serves: 6-8
Ingredients
1 cup spelt flour
⅓ cup vegan butter
2 tbs cold water
dash of salt
½ cup pumpkin puree
2 medium eggplants
4 medium carrots
cabbage laves (about half a small cabbage)
2 cups greens of your choice
2 tbs olive oil
salt and pepper
balsamic vinegar
Instructions
Preheat oven to 375°. Grease a pie dish.
To prepare crust, plus flour, butter, water and salt in food processor until thoroughly combined. Scoop out dough and use your fingers to press it evenly into the bottom and sides of pie dish.
Spread pumpkin puree evenly over crust.
Use a mandolin slicer (or vegetable peeler) to slice thin strips of eggplant and carrot. Slice pieces of cabbage leaves to match the size of the strips.
To begin the spiral, roll strips of carrots together and place in the center of the tart. Layer strips of eggplant, cabbage, carrots and greens around the center, until the entire pie is filled in. Drizzle olive oil over everything and sprinkle with salt and pepper.
Bake for 45 minutes. Serve warm, with balsamic vinegar drizzled on top.

I also started listening to a podcast by a dude named Chris Terrell.
Dude hits hard sometimes but is magnificently insightful.
I just googled a list of where to start with his podcasts. Dude has so many.
I just want to keep working on my wl journey, and have been stalled for awhile, which sucks of course.
I am so close to my first UGW. The weight class I was competing at when I was younger.
So so close to 176.
I am thinking my journey might be closer to complete a little lighter than that.... but I need to hit that one first dammit!

So, first and foremost, I'd like to wish all of you seeing this post (including those who don't celebrate) a Happy Thanksgiving! Whether you're spending the day alone, at work, or with family and/or friends, I sincerely hope that the day is a peaceful one! One where you can enjoy yourself as much as you are able, and that the day ends in the best way for you, as an individual, based on your own wants and needs!
For those spending the day with family, though, I have an additional hope, or prayer for you, if you'd like to consider it that way. Because I know very well that not all of us are going to get that day of peace, no matter how much we might want and need it.
(And please note, this is not my way of looking down on those that will be with family. Some are blessed with amazing people in their lives, either by blood, or those they choose for themselves, and that is an amazing thing! I'm specifically referencing those who don't have this luxury in the remainder of this post).
If Thanksgiving with your family is not a safe space, I pray for you. I pray that you are granted the ability to know that their actions/statements/reactions are not a direct reflection on you, or your worth. I pray that you can make it through the day without additional trauma, and that you are able to return home relatively unscathed.
I pray that if you are in a situation where you need to hide who you truly are, that you know this reality is not inherently tied to your worth as an individual. If your family cannot see you as you are without reacting with vitriol, hatred, slurs, insults, what-have-you, I pray that you are able to make it through the day with as little of these as possible. That you can find a way to leave, if it all gets to be too much, and that you know that you are not alone, even if the things that your family makes you feel may make it seem otherwise.
I pray that if you no longer have contact with your family because of some of these things, you feel no guilt. That you don't feel as though you should have compromised your own mental/emotional well-being for people who never once tried to understand you, or make your feelings and needs a priority. If you are able to be with people you choose to associate with--people you consider family even if they aren't related by blood--I pray that you have the best day with these people. That they give you the love that you deserve. The love your blood-family couldn't or wouldn't provide. And if you are alone, because you don't have those connections, yet, I pray that you know, again, that it is not a reflection on you in any way. You chose to protect your peace, your safety, and your life. And that is a choice that will always be valid, even if it seems like no one else can see it that way.
Mutuals, followers, and those who happen by this post, I really do hope that you are able to take at least a little portion of this day to reflect on what you do have that you are grateful for, even if it doesn't seem like very much. I hope that you believe me when I say none of us are defined by our ability, or lack thereof, to keep up with what Instagram, or Tiktok, or anything else pushes as the "right" way to celebrate a holiday. That we can look at the sort of posts that seem to suggest that if we don't "have it all"--wealth, things, and the picture-perfect life and family, we can't possibly be happy, and scroll on, knowing that it is the furthest thing from the truth. Reality is, very often, not a pretty thing, but just because we have some darkness in our lives, or we don't meet up with the 'standards' society places upon us doesn't make us any less worthy of love, and happiness.
We are all so very much more than material possessions, or the approval of those who call themselves our family and friends. Our worth isn't tied to any of that at all. And I pray that we, no matter our situation, our struggles, or the familial drama we may witness today, can make it through it all still contented and hopeful, at the end.
