mexican style spiced rice (190c) 🍚 🌶️
serves 2 = 380c
one serving = 190c
spice scale ✿ ❀ ❀ ❀ ❀ (not spicy)
~ vegan friendly | oil free

ingredients
100g basmati rice ~ 315c
1/4 tsp turmeric powder ~ 4c
1 clove of garlic ~ 7c
1 large green chilli ~ 7c
1/4 tsp sea salt ~ 0
1 tsp tomato purée ~ 4c
1/4 tsp cumin powder ~ 5c
1/4 tsp dried fenugreek ~ 0
5g fresh coriander ~ 1c
method
boil a kettle of water and rinse the rice in a pot until the water is mostly clear then drain
add the rice, water and turmeric into the pot, stir and cook until for about 8 minutes until the rice is mostly cooked through
whilst the rice is cooking chop up the rest of the ingredients ~ drain the rice and set aside, in the same pot add in the chilli, garlic, a little bit of water and the salt
sweat the chilli & garlic then mix in the tomato paste and a little bit more water, stir and cook for a few minutes
add in the rest of the spices and the rice ~ mix together, turn the heat to low and cover the pot
steam for another few minutes until the rice is fully cooked, make sure to stir in between so it doesn’t stick
stir through the coriander before serving :)
HIIIIII i know i haven’t posted in ages oops honestly i haven’t been cooking as much as i used to due to it being very stressful and more time consuming having to measure everything out, count and track but this was super easy to make so i thought i’d post anyways ~
this is definitely not an authentic mexican rice recipe however it is inspired by the tangy flavours of arroz rojos (mexican red rice) ~ it’s quick, simple but has good flavour and tastes great beside taco style meat (vegetarian for me ofc) also similar to my yellow rice recipe ! <3

the amount of effort that goes into figuring out what to cook and eat every day is RIDICULOUS. i used to think people were so weird and boring for eating the same thing every single day but it truly does make life so much easier
#and also it's nice to know exactly what your food is going to taste like before you eat it#like when i get unfamiliar takeout. half the time i'm like. oh.#i'm going to have to eat all of this. or be judged.#so i just do my best to suppress my gag reflex and Get Through It and then it makes me sick so what was even the point#i think my parents spoiled me. and the most annoying thing is they're significantly better at cooking now than when i was a child#so when i go over i eat three delicious home cooked meals + snacks and they're all different and amazingggg#and then i come back to texas and i am like. googling 'how to feed myself healthy vegetarian'#because I do NOT have the time or money or energy to cook three beautiful delicious meals Just For Me#i think this would be easier with a partner#this whole week i bought a fuckton of mediterranean groceries and i have been making and eating food!!#mediterranean is close enough to indian that i like it well enough#unfortunately for me. i am def going to have to learn how to cook indian food to get through life. because i cannot fucking eat american#i don't know HOW you guys do it i'm so spoiled#i'm assuming meat is this really amazing wonderful thing that just adds flavor to everything#(it is physically repulsive to me and the couple times ive accidentally tasted it it's bleh so i refuse to partake)#i think it's an acquired taste but it magically makes ur food better. that is my understanding of how meat works#cause american vegetarian food is the saddest fucking thing i've ever tasted#i still think about my coworker i was talking to about my food issues and he was like. If you struggle with executive dysfunction and don't eat veggies because you've bought them so many times and left them to rot in your crisper and thus (like me) have big vegetable guilt:
buy frozen veggies and then cook them direct from the freezer
this has been a game-changer for me and my household.
Frozen peas/carrots/corn/teeny cubed veggies, microwave for 3m with a bit of water in a covered bowl: bam, done, mix em in with rice or eat em from the bowl.
Frozen broc, cauli, brussels sprouts, asparagus, and others I'm sure I haven't even discovered yet: bake right from frozen on a sheet pan with a bit of oil/salt/pepper.
Pretty much aNY frozen veg: throw in a soup right from frozen, usually 10-15 minutes before soup is done. I like to do this with frozen kale or spinach to feel like a health god.
I have also just straight up made soup from broth, a single meat, and whatever was in the freezer at that exact moment. Brilliant.
Frozen is prewashed/precut, and has basically the same nutritional value as fresh, I think. You can make this more budget-friendly by washing/chopping/freezing yourself, but listen, if you have to pay a little extra to nourish your body without executive dysfunction making it impossible, just buy frozen and don't give it a second thought.
i mean this in the gentlest way possible: you need to eat vegetables. you need to become comfortable with doing so. i do not care if you are a picky eater because of autism (hi, i used to be this person!), you need to find at least some vegetables you can eat. find a different way to prepare them. chances are you would like a vegetable you hate if you prepared it in a stew or roasted it with seasoning or included it as an ingredient in a recipe. just. please start eating better. potatoes and corn are not sufficient vegetables for a healthy diet.
