desi style omelette with yellow garlic rice 🍚 🌶️ 🥚 (173c)
full omelette (2 servings) = 203c
1/2 omlette = 103c
full pot of rice = 140c
1 serving of rice = 70c
spice scale ✿ ✿ ❀ ❀ ❀ (got a kick to it)
~ vegetarian friendly

ingredients
for the omelette
1/4 large brown onion (53g) ~ 23c
1/2 large green chilli (5g) ~ 1c
1/2 tsp cumin powder ~ 5c
1/4 tsp coriander powder ~ 4c
1/4 tsp salt ~ 9c
4 sprays fry light extra virgin olive oil spray ~ 4c
for the rice
100g white basmati rice ~ 125c
1/2 tsp turmeric powder ~ 0
2 garlic cloves (5g) ~ 7c
1/4 tsp dried fenugreek leaves ~ 0
1/4 tsp salt ~ 7c
garnish
5g fresh coriander ~ 2c
method
boil a pot of water & rinse the rice a few times ~ place in the pot with the turmeric and cook for 10 minutes
in the mean time ~ chop the onion into half moon shapes & then chop them in half, dice up the chilli and garlic, set the garlic aside
in a bowl combine the eggs, coriander powder, cumin powder & salt, whisk this together
spray the fry light around the pan and spread it around, allow this to heat up on a low flame ~ add in the onion, chilli & rip up 1/2 of the fresh coriander and make sure all of this is combined into the egg
pour the omelette mix into the hot pan and allow this to cook for a few minutes until the top is set & you can hear crackling, the bottom should be browned ! turn off the heat and flip the omelette
the residual heat will cook the rest of the omelette ~ drain the rice and transfer it back to the pot, mix in the garlic, fenugreek, salt and rip up the rest of the coriander and mix in !
split the omelette into two and serve 1/2 of the rice and enjoy :D
~ yummmmm this is definitely one of my safe meals ! i’ve been cooking it almost twice a week ever since my gran made it for me…well i added in coriander and cumin when i made it and honestly it’s so much better ! it’s low cal, healthy and has protein, a little bit of fat and lots of flavour :DDD i’m not quite at the stage of using oil to fry anything but the fry light does its job ALSO another really good way to eat this is in the style of a quesadilla ! just place a roti/chapati or wholemeal tortilla on a hot pan & add 1/2 of the omelette to to one side, add some cheese, fold it over and allow it to crisp up, flip and brown the other side too ~ it’s honestly so delicious <3

easy non-alcoholic mixed drinks
not something that we usually post, but thought it might be nice for the times when you want something slightly fancier than a pre-packaged drink, but don’t want to put in too much effort or drink alcohol. the instructions for all of the following “recipes” are to simply mix the ingredients together in a tall glass.
passion fruit + grapefruit twist:
12 oz. grapefruit sparkling water
1/3 cup passion fruit juice cocktail
pomegranate berry “sangria”:
12 oz. cranberry, mixed-berry, or cherry sparkling water
1/3 cup pomegranate juice
optional: 2 tbs. cranberry juice
optional: 1 tbs. grenadine syrup
optional, but recommended if using unsweetened juice(s): sugar to taste
cranberry lime:
12 oz. lime sparkling water
1/3 cup cranberry juice
optional, but recommended if using unsweetened juice(s): sugar to taste
optional: half a small lime’s worth of fresh juice
optional: a slice of fresh lime as garnish for the rim
summer sunrise:
6 oz. plain sparkling water or tonic water
1/2 cup orange juice
1/4 cup pomegranate juice
optional: 2 tbs. grenadine syrup

In autumn, it's very popular to eat soups like this. Here I'm calling this a soup because it's what it's called in English, but in Catalan we usually make a difference between a soup / sopa (broth with things in it, usually pasta and can also have vegetables and sometimes some meat) and what we see in this video which we'd call a cream / crema. A "cream" is made of vegetables and is made into a homogeneous creamy liquid.
In this case, La Sofregida is making one of the most common "creams" for autumn: squash "cream".
I'll add her recipe under the cut.
Squash cream (crema de carbassa):
Ingredients:
Squash
Leek
Scallion
Water
A sprinkle of olive oil
Salt
You can also add carrots or a potato and some cheese that melts easily, and mix it all in like the other ingredients.
Preparation:
Place the vegetables in a pan and add a sprinkle of olive oil and salt, then slightly stir-fry the vegetables to bring out the taste.
Add water to boil them for 30-40 minutes more or less, until the vegetables are cooked.
Mix it all with a blender to make a homogenous soup, and serve!
When you serve it, you can add a bit of Iberian ham or bacon on top. Enjoy!

Cajun pasta;
Spice mix; 1 teaspoon each of the following.
Smoked paprika
Onion powder
Garlic powder
White pepper
Black pepper
Sea salt
Oregano
This will be used to season any chicken, sausage, shrimp or tofu You’re adding to the dish as well as the sauce.
In a large skillet cook and season your choice of protein, cook fully and set aside. While your choice of pasta boils, finely dice a shallot.
Roughly Chop and de-seed whole yellow or red bell pepper along with a fresh tomato, I remove the core, seeds and skin from my tomato before chopping.
Drain your pasta and set aside to cool. In a LARGE heated skillet melt some butter about tea-tablespoons worth along with a teaspoon or a squeeze worth of tomato paste and the diced shallot. Let it cook down for five to ten minutes depends on how hot your pan is.
Add in a cup and a half of heavy cream, your protein, and your vegetables. Let the heavy cream come to a steady bubble stirring occasionally before adding 2/3 cup of Parmesan cheese and the rest of your spice mixture. Mix and let it come to a bubble again before adding in your pasta and mixing it very well together.
Boom baby it’s literally that easy! Pro tip I used pre cooked grilled chicken from the grocery store and just seasoned it up in a pan at home.
