Pappardelle z bobem, krewetkami, czosnkiem i koprem

Dodawaliście kiedyś koper do makaronu z krewetkami? Nie? To spróbujcie tego połączenia. Nie przypuszczałam, że będzie aż tak udane! Zwyczajowo krewetki paruje się z czosnkiem i nacią pietruszki. Czasem podkręca się je jeszcze papryczką chili i białym wytrawnym winem.

Ja zaś podążyłam za bobem, który uwielbia się z anyżkowym koprem. Chciałam mu trochę wynagrodzić, bo oczy wszystkich w takiej konstelacji składników w daniu, zwykle zwrócone są na krewetki. A skoro wszyscy kłaniają się krewetkom, to wiadomo, że trzeba zrobić promo bobowi (chłopaku, bardzo lubię twoją skromność i zwykłość!).

Nie pierwszy raz okazało się, że warto mieć fantazję i łamać schematy, bo może to wyjść kubkom smakowym na dobre. W przeciwieństwie do nietykalnej doktryny Kościoła Katolickiego, w kuchni można eksperymentować!

Na tej samej zasadzie podeszłam do sprawy połączenia owocu morza z serem. Według kulinarnych purystów popełniłam zbrodnię, ale kompletnie nie interesują mnie ich opinie. Już nieraz robiłam tego typu melanże i zawsze okazywało się, że Parmezan nie zagłuszał smaku ani małży, ani ryby, ani krewetek, tylko dodawał im wyrazu. Trzeba jedynie zachować umiar.

Składniki:

150 g pappardelle 300 g bobu 250 g mięsistych krewetek 1/2 cebuli 3-4 ząbki czosnku 1/4 - 1/3 szklanki białego wytrawnego wina ok. pół szklanki tartego Parmezanu 2/3 łyżeczki płatków chili sól i czarny pieprz do smaku sok z cytryny do skropienia

Wykonanie:

Cebulę obrać i pokroić w drobniutką kosteczkę. Czosnek obrać, zmiażdżyć płaską stroną noża i maksymalnie rozdrobnić. Ser zetrzeć na tarce o drobnych oczkach. Koper opłukać i posiekać.

W średniej wielkości garnku zagotować wodę. Gdy zawrze wsypać bób, przykryć i gotować do miękkości, ok. 6-7 minut. Odcedzić na durszlaku, lekko ostudzić i obrać z łupinek.  

Do większego garnka wlać wodę na makaron (można wykorzystać wodę z bobu i resztę dolać). Gdy się zagotuje osolić i wrzucić makaron. Gotować zgodnie ze wskazaniem na opakowaniu.

W tym czasie na dużej patelni podgrzać porządny chlust oliwy z oliwek e.v. Wrzucić cebulę, chwilę smażyć i dodać czosnek. Mieszać i poczekać, aż cebula się zeszkli. Wówczas wrzucić krewetki i nadal smażyć. Powinny nabrać rumieńców, ale nie można ich przeciągnąć.

Wlać wino, wsypać bób i ugotowany makaron (zachować pół kubka wody z gotowania). Oprószyć solą, świeżo mielonym pieprzem i płatkami chili. Podrzucać lub mieszać delikatnie, aby wszystkie składniki ładnie się połączyły.

Pod koniec dodać jeszcze koper i ponownie wymieszać. Do tego czasu ser powinien się rozpuścić. Jeśli trzeba, podlać wodą z gotowania.

Wykładać na talerze, skropić sokiem z cytryny, serem, koprem i pieprzem.
