The tomatoes are slow coming this year. Every two days I get another bowl full. #SuperBowl #GameDay #Chili is what I cooked on #Sunday ! It was a true #teameffort that went into this pot of deliciousness! The #vegetables came out of our #SmallScaleFarms #producebox - #carrots #onion #greenpepper - also, the #babycorn from #NewWorldFarms ! @smallscalefarms @newworldfarms Even the #bacon & #smokedturkey from #KentHeritageFarms came out of our weekly box. @kentheritagefarms @kentheritagefarmsnotl I was happy to use a jar of our own #cannedtomatoes . I also used some awesome #cannedbeans from #CedarFoods ! @cedarsfoods Oh, and the #NewEnglandIPA is a local #beer from #TheExchangeBrewery in #NiagaraOnTheLake - @theexchangebrewery Saute the meat, add vegetables & saute to soften. Season at every step, as desired. Add tomato paste - stir & cook for a while. Add jar of tomatoes, stir & cook until simmering. Add beans & beer. Simmer until you're ready to eat. Serve over rice, and garnish with cheese, hot sauce, lime, sour cream. Kev's garden produced so many tomatoes this year that I decided it was time to learn how to can so nothing would get wasted! . I had a friend show me the basics, and then I started researching. After deciding that I didn't want to do it on my stovetop (I needed the burners for everything else that was going on!), but I needed a way to make sure it was done at the proper temperatures for the **whole** cook, I bought the Ball freshTECH Water Bath Canner and the 'Ball Book of Canning and Preserving'. . The Ball Book is easy to follow (even if you're a n00b) full of water bath and pressure cooker canning recipes. . This canner holds 7 quart jars at once, so I was able to get everything from my latest garden picking session done in one cook (large red tomatoes, cherry tomatoes, yellow pear tomatoes (heirloom), and grape tomatoes (also heirloom) with garlic, banana peppers, an (occasional) bay leaf, and a single jalapeno all went into the jars for flavor). . The worst part is blanching the tomatoes and removing all their skin (even from the smallest ones), remembering to add the citric acid & canning salt, and remembering to remove all the bubbles before putting the lids on ... but it goes quickly enough once you get in the groove. Kev says they are amazing! 🏅 . I feel like a pioneer with electricity!
