Lobster and Gruyère Tart with Herb Salad
Ingredients:
For the Tart:
1 sheet puff pastry, thawed
1 cup Gruyère cheese, grated
1/2 cup heavy cream
2 large eggs
1 teaspoon Dijon mustard
1 tablespoon fresh chives, chopped
1 tablespoon fresh parsley, chopped
8 oz cooked lobster meat, roughly chopped
Salt and pepper to taste
For the Herb Salad:
1 cup mixed fresh herbs (such as parsley, chives, dill, and basil), roughly chopped
1/4 cup arugula or baby greens
1 tablespoon lemon juice
2 tablespoons olive oil
Salt and pepper to taste
Instructions:
Prepare the Tart:
Preheat your oven to 400°F (200°C).
Roll out the puff pastry on a lightly floured surface to fit a tart pan or a baking sheet. Trim any excess pastry.
Prick the bottom of the pastry with a fork to prevent it from puffing up too much.
Blind bake the pastry for about 10 minutes, or until it starts to turn golden. Remove from the oven and set aside.
Prepare the Filling:
In a medium bowl, whisk together the heavy cream, eggs, Dijon mustard, salt, and pepper.
Stir in the grated Gruyère cheese, chopped chives, and parsley.
Assemble the Tart:
Evenly distribute the chopped lobster meat over the partially baked puff pastry.
Pour the cream and cheese mixture over the lobster, spreading it evenly.
Return the tart to the oven and bake for an additional 15-20 minutes, or until the filling is set and the top is golden brown.
Remove from the oven and let cool slightly before slicing.
Prepare the Herb Salad:
In a large bowl, combine the mixed fresh herbs and arugula or baby greens.
Drizzle with lemon juice and olive oil. Season with salt and pepper to taste.
Toss gently to combine.
Serve:
Slice the Lobster and Gruyère Tart and serve warm.
Accompany each slice with a portion of the fresh herb salad on the side.
Tips:
You can use pre-cooked lobster meat to save time. Freshly cooked lobster is also a great option for added flavor.
Adjust the types and amounts of herbs in the salad according to your preference.
This tart pairs well with a crisp white wine or a light salad for a complete meal.

I’m cooking chicken curry tonight … that is, if I can get anywhere near the fire again. 😅 I’m using the recipe for ‘Coconut Chicken Tikka Masala’ from the cookbook, ‘Half Baked Harvest, Super Simple’. It’s so tasty and aromatic, simply mouthwatering … 😋 My whole family love it and it’s definitely a firm favourite with all. As always, I’m cooking it on our log stove, I’ve been doing this for a while now and it’s definitely been saving us money. You just need to plan a bit more in advance, and make sure the stove is up to cooking temperature. But all in all I love it … 😃👍

Hong Shao Rou
Ingredients
Blanching
1.5 lbs pork belly
3 scallions(white portion)
3 slices ginger
1/4 cup shaoxing wine Cooking
2 tbsp neutral oil
2 tbsp rock sugar
3 scallions(white portion)
3 slices ginger
2 star anise
1 cinnamon stick
2 bay leaves
3 dried chilies
1/4 cup shaoxing wine
3 tbsp light soy sauce
1 tbsp dark soy sauce
2.5 cups water
Instructions
Prep aromatics by slicing ginger and scallions. Save scallions whites for cooking and greens for garnish.
Cut pork belly into 1.5 inch sized chunks.
Add pork belly to a pot along with aromatics and shaoxing wine. Cover with water, bring to a boil, and cook for 5-7 minutes.
Rinse pork belly under cold water to remove any scum.
Heat oil and sugar in a wok on medium heat. Once the sugar caramelizes and becomes an amber color(3-4 minutes), add the pork belly.
Sauté pork belly until golden brown then add aromatics, spices, shaoxing wine, light soy sauce, and dark soy sauce. Pour enough water to barely cover the pork belly, cover with a lid and simmer on low for 1.5 to 2 hours. You know the pork belly is ready when you can easily poke the skin with a chopstick.
Remove the aromatics and spices then raise the heat to medium high to reduce and thicken the sauce(3-4 minutes).
Garnish with a green portion of scallions and serve with a hot bowl of rice.

Ingredients:
1 cup lump crab meat 1/2 cup heavy cream 1/4 cup whole milk 2 large egg yolks 1 tablespoon Dijon mustard 1 tablespoon Worcestershire sauce 1 teaspoon lemon juice Salt and pepper to taste 1/4 cup grated Parmesan cheese 1 tablespoon sugar (for topping)
Directions:
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the lump crab meat, heavy cream, whole milk, egg yolks, Dijon mustard, Worcestershire sauce, lemon juice, salt, and pepper. Mix gently to avoid breaking the crab meat. Divide the mixture evenly among ramekins and place them in a baking dish. Fill the dish with hot water until it reaches halfway up the sides of the ramekins to create a water bath. Bake for 25-30 minutes, or until the crab brulees are set and slightly firm to the touch. Remove the ramekins from the water bath and let them cool to room temperature, then refrigerate for at least 2 hours. Before serving, sprinkle a thin layer of sugar on top of each brulee and use a kitchen torch to caramelize the sugar until golden brown. If you don’t have a torch, broil them in the oven for 1-2 minutes, watching carefully to prevent burning. Serve immediately and enjoy your elegant crab brulee!
