A tasty change from regular pizza is pizze fritte with onions, ricotta, and chili oil. The dough that has been deep-fried is crispy on the outside and soft on the inside. The caramelized onions give it a sweet and savory taste. This gourmet treat is finished off perfectly with a drizzle of chili oil and creamy ricotta cheese.
Ingredients: 500g pizza dough. 2 large onions, thinly sliced. 1/4 cup olive oil. 200g ricotta cheese. 2 tablespoons chilli oil. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Heat the olive oil in a pan over medium heat and add the thinly sliced onions. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 20-25 minutes. Season with salt and pepper to taste. Set aside. While the onions are caramelizing, divide the pizza dough into four equal portions and roll each portion into a 6-inch round circle. Heat vegetable oil in a deep frying pan or pot to 180C 360F. Carefully place each pizza dough round into the hot oil and fry until golden brown and puffed up, about 2-3 minutes per side. Use a slotted spoon to remove the fried dough and drain on paper towels. To assemble the pizze fritte, spread a generous spoonful of caramelized onions on each fried dough round. Top with dollops of ricotta cheese and drizzle with chilli oil for some heat. Garnish with fresh basil leaves and serve hot.
