Walnut-Rosemary Crusted Salmon - 222kcal/24g protein

Servings: 4 - 222 kcal/24g protein perserving
2 teaspoons Dijon mustard 
1 clove garlic, minced 
¼ teaspoon lemon zest 
1 teaspoon lemon juice 
1 teaspoon chopped fresh rosemary 
½ teaspoon honey 
½ teaspoon kosher salt 
¼ teaspoon crushed red pepper 
3 tablespoons panko breadcrumbs 
3 tablespoons finely chopped walnuts 
1 teaspoon extra-virgin olive oil 
1 (1 pound) skinless salmon fillet, fresh or frozen 
Olive oil cooking spray 
Chopped fresh parsley and lemon wedges for garnish
Preheat oven to 425 degrees F. Line a large rimmed baking sheet with parchment paper.
Combine mustard, garlic, lemon zest, lemon juice, rosemary, honey, salt and crushed red pepper in a small bowl. Combine panko, walnuts and oil in another small bowl.
Place salmon on the prepared baking sheet. Spread the mustard mixture over the fish and sprinkle with the panko mixture, pressing to adhere. Lightly coat with cooking spray.
Bake until the fish flakes easily with a fork, about 8 to 12 minutes, depending on thickness.
Sprinkle with parsley and serve with lemon wedges, if desired.

prior to this, i actually never ate much meat - my go to for protein was nuts, hummus, peanut butter, and the occasional chicken or lamb curry dish. legit i just didnt eat or cook meat. so this sudden high protein diet to make up for the lack of carbs calories is probably making my stomach confused. i eat two sausages for breakfast now. its insane. pls let me eat gluten again soon ;_;

In her new Longreads essay, Diana Saverin explores the tensions inherent in  sustenance and desire:
I didn’t grow up killing animals, but there was a period in my mid-20s, the period that overlapped with my relationship with K, when I killed a lot. There was the beaver I retrieved by swimming naked through a half-frozen lake. The duck wings I hung like prayer flags from the porch. The organs we liberated from the belly of the caribou.
I had qualms. I’d stopped eating meat in high school, citing animal cruelty and climate change. In my 20s, I let my vegetarianism slip when I moved to rural Alaska. Eating caribou roast and moose tacos and salmon burgers seemed different than ordering a steak whose origins as an animal were concealed; these wild creatures led uninhibited lives in vast landscapes. Choosing to eat the calories from their flesh meant not eating something that had flown thousands of miles to reach me. It’s a painful inevitability: the calories have to come from somewhere.

tired of anorexic tgirl shit, fat girl fall is coming up and you WILL be eating whether you like it or not. my mission to every trans girl is to gain (at LEAST) 5 pounds before the end of the year. if you can afford to eat three square meals a day, you'd better act like it. high calorie food is your friend!! i love you meat i love you cheese i love you avocado i love you sugar i love you oil. mood too low to make food? eat ice cream!! or cold meat and cheese sandwiches!! cold sandwich texture bad? try the cold cuts on their own!! get peanuts if you like them, they're tasty and good for you and high in protein and fat!! pretzels!! toast!! have cereal for dinner!! spam is really tasty if you crisp it up in a pan!! pickles!! canned beans!! frozen salmon is really easy to cook in a pan (make sure to get out the pin bones). eat it over rice (it can be microwave rice) with storebought teriyaki sauce and you've got a banger fucking meal. cut up some green onion into the bowl with kitchen scissors and you've got vegetables in the meal too!! I've gained 18 pounds since the start of the year and I've never been happier with my body. skeletal twig tgirl season is OVER. it is time to feed yourselves.

(okay i was going about my day yesterday but i really couldn't get the merman au out of my head😭😭 i just imagine for a while somehow geto managed to sneak satoru into the palace and then it's a whole ordeal trying to hide him. panicked geto and oblivious gojo and really for all that image is stuck in my head i still have yet to write a proper interaction w them but!! it's not proofread so sorry if there are mistakes and it's a bit scattered but i had to get this one scene out that was brewing in my mind so🥺 ignore this if you want❗️❗️)

From the mezzanine, everyone looked like ants. Suguru had to squint to make out familiar faces in the crowd, and even then, the only person he could identify was a distant aunt of his that he had never really liked. Usually, he'd have been able to pick apart anyone of significance; he'd have known their name, their title, their interests. 
Suguru would've known, he always memorises the details before public events — he spends days in his room at a time, talking into the mirror and telling his reflection things about these people who he has never met. Perhaps, lately, he'd been busy with Satoru.
Suguru smiled. He didn't feel as guilty as he thought he would.
A hand clapped on his back, and he jolted. Shoko beside him, cocking a brow. “What's got you looking like a dumbass?” Her voice was flat, eyes busy scanning the crowd and Suguru knew who she was looking for.
He cleared his throat. He couldn't really tell her that he was keeping a siren in the little pond in his private garden — well, it wasn't exactly little, but that information held no relevance anyway. Shoko was his dear friend, and he knew she would always support him, but he had to keep Satoru a secret, more for her sake. Suguru bit his lip in thought. If only Satoru didn't have such a strong taste for human flesh.
“Is meat more nutritious than fish?”
“What?”
“Nevermind.” Suguru winced at the look he was being sent. He didn't mean to blurt the question out, but he'd been thinking about it for days. The salmon that he'd been feeding Satoru probably wasn't enough to sustain a creature his size — especially when he was so active — which would mean he burnt through a lot of calories very quickly. “Utahime is on the balcony,” Suguru pointed in the general direction, giving Shoko a pat on the shoulder, “good luck.”
From his peripheral vision, he could see Shoko roll her eyes as he walked away, but she muttered a small 'thanks' before she turned to find the other woman. He was glad she finally had someone to open up to other than him — he saw how happy Shoko was with Utahime, and with the burden of inheriting the throne giving her sleepless nights, it was all Suguru could want for his closest friend.
He turned his attention back to the winding flight of stairs before him. Now, to find some meat.

Right, now that I feel better after my little rant (please ignore that btw feelings are so embarrassing)…
Today after work I decided to make myself a little pizza wrap (just some baby bell cheese and pepperoni in a spinach wrap) that totaled to 220 calories, which kept me full for a while
For dinner I had some salmon over rice with broccoli, which was 370 calories!

And for desert I just had a 60 cal sugar free chocolate pudding cup, which makes my total intake today 650 calories!
I honestly feel way better about my intake today ngl. Yeah I didn’t stick to one meal like I wanted to, but everything I did have was low cal and will keep me from having hunger pains during my opening shift at work tomorrow morning!!
