Absolutely disgraceful that people are calling regular boiled and baked bread rolls "bagels", the whole point of a bagel is not just that it's boiled and then baked, but also that it has a *hole* in it so it can easily be sold from a pole. It literally means "ring". It can't be a bagel if it's not a ring. If it doesn't have a hole, it's not a bagel. "Oh but if there's a hole, the filling will fall out". Shut up that's part of the experience, if you don't want that experience, you don't want a bagel.

I actually did it I made Neil Gaiman's Bagels!!!

But please someone tell me is barley flour even real?! Did Neil invent it?! Because I searched 4 supermarkets in and outside my town as well as two local eco stores and I found everything, EVERYTHING except for barley flour. I mean, it worked without it but I was so annoyed. They are a little flat because by the time I got back from my little odyssey it was already kinda late so I shaped them and threw them into the fridge and, well, wasn't my best idea :')
But they really REALLY taste amazing, so much better than anything you can buy at the bakery <3 (in fact so amazing that I made another batch of dough :)

Recently a friend of mine told me that one of our local bagel places, Chicago Bagel & Bialy, was also serving pizza, made with their bialy dough. Bialy dough isn't all that far from pizza dough to begin with, but I misheard him and thought they were somehow serving pizza with a bagel-dough crust. I spent days wondering about the logistics. Bagel dough has to be boiled before being baked, and obviously you can't boil a pizza. Did they steam it before baking? Did they just not bother with the boiling step?
Anyway, I decided to try my hand at "bagel pizza poppers" which are balls of bagel stuffed with a mixture of sauce, mozzarella cheese, and "toppings". I made a batch of King Arthur Sandwich Bagel dough, then added some food coloring while kneading in order to color-code by filling -- red for pepperoni, green for sauteed mushroom, yellow for caramelized onion. I split the dough by weight, hand-stretched each piece and stuffed it with a spoonful of filling, then sealed, boiled, and baked.
They came out really, really nicely -- basically they taste like Hot Pockets look like they should taste, and they still have that nice chewy exterior. A few of them burst during baking, but the filling mostly stayed inside, and they reheat well in the microwave or oven.

It's a podcast to fall asleep to. John Moe interviews people on subjects they can be dull about and witter on endlessly. For the rest of the world, me droning on about bagel-making, beekeeping and water kefir grains will put them to sleep. Only here on Tumblr will it be appreciated.

what is a bagel, really?
As a Jew of Polish descent, I was always told that in medieval times, Jews were deemed unworthy of the richest tasting foods that Poland of the era had to offer. The most flavorful things Poland had back then were bread and water, so Jews were forbidden from drinking water or baking bread. Now, Jews have a knack for eating unconventional bread products, having survived 40 years in a desert eating only stale Pita Pit leftovers known as "Matzo."
So it was that the Jews would boil the water instead of drinking it, and put the dough in that boiling water instead of baking it. In order to survive without water to drink, they invented Manischewitz Concord Grape Juice, and shortly after invented Irritable Bowel Syndrome as a result.
People thought they were nuts for these culinary substitutions, hence the term for the shape of the common bagel, a "Dough Nut." These toroidal not-technically-bread foods became popular across the globe, not only among Jews, but also among New Yorkers, some of whom were also rumored to be Jewish but no confirmation of a Jewish population in New York has yet been discovered.
Also there is something called "Lox," but this is a PG-13 rated blog so I won't be explaining where that comes from.
