(V) Groundnut Soup(From my soup book)
3 Tbs. groundnut paste or peanut butter(separate recipe)
1½ Qts. stock or water
2 Tbsp. tomato paste
1 onion, chopped
2 slices of fresh ginger root
¼ Tsp. dried thyme
1 bay leaf
cayenne pepper
1½ C. white yam, diced
10 small okra, trimmed(optional)
salt
(1) Place the peanut butter in a bowl. Add 1¼ cups of the stock or water and the tomato paste and blend together to make a smooth paste.
(2) Spoon the nut mixture into a saucepan. Add the onion, ginger, thyme, bay leaf, cayenne pepper, salt to taste and the remaining stock.
(3) Heat slowly until simmering then cook for 1 hour, whisking from time to time to prevent the nut mixture from sticking
(4)Add the white yam and cook Friday r 10 minutes longer. Add the okra if using, and simmer until both vegetables are tender. Serve at once.
Groundnuts, the African name for the peanut, are widely used in sauces that are found in African cooking.
Cook's Tip #1: You can get White yams in Latin American grocery stores, and the groundnut paste(aka peanut butter) can be found in ANY store. Or homemade(separate recipe)
