Rutabaga Mash
Tumblr media
Hearty and flavourful this simple yet elegant Rutabaga Mash makes both a comforting meal and an excellent side! Happy Monday!
Ingredients (serves 3 to 4):
4 medium rutabagas
2 small Garden Potatoes
1 teaspoon coarse sea salt
1 litre/4 cups water
6 tablespoons unsalted butter, softened at room temperature
Peel rutabagas and cut them into small dices.
Peel and dice Garden Potatoes.
Combine diced rutabagas and Potatoes in a large pot. Add coarse sea salt and cover with water.
Bring to the boil over a high flame.
Once boiling, reduce heat to medium and cover with a lid. Simmer, 25 to 30 minutes, until rutabagas and Potatoes are soft.
Drain thoroughly and return vegetables to the pot. Mash with a potato masher, gradually adding half of the butter.
Then, using a hand-held blender, process until just smooth.
Return over medium-low heat, and warm, energetically stirring in remaining butter with a wooden spoon.
Serve Rutabaga Mash hot, on its own or as a side to roast meat or fish.

Calling vegetarian/veganism a “white people thing” as some fucking racist bullshit lmao
I am Afro-caribbean and Indian. Firstly India has the highest vegetarian population in the world, and in the Caribbean the rastafari have their whole ital movement/diet - which my Jamaican father is a massive believer in.
Y’know what other countries have massive populations of vegetarians and vegans? Mexico. Taiwan. Ethiopia. The fuck do you mean it’s a “white thing”?

"Food has no moral value" doesn't just apply to eating processed/"unhealthy" foods or disordered eating, it also means eating a vegetarian or vegan diet does not make you any more morally right than people who don't

Pak Choi Noodles (Vegan)
Tumblr media
These simple Pak Choi Noddles make an easy, yet flavourful and hearty dinner. Happy Thursday!
Ingredients (serves 2):
200 grams/7 ounces egg noodles
4 cups boiling water
1 ½ tablespoon toasted sesame oil
1 thumb-sized piece fresh ginger
a large garlic clove, minced
half a red chili pepper
a large, beautiful pak choi (or 2 smaller ones)
1 tablespoon rice vinegar
2 tablespoons soy sauce
2 tablespoons sweet soy sauce
Place egg noodles in a medium bowl. Cover with boiling water, and place a lid on top. Allow noddles to cook, about 5 minutes.
Meanwhile, in a large wok, heat toasted sesame oil over medium-high heat.
Peel ginger, and cut it into very thin slices. Add to the wok, and fry, a couple of minutes. Add garlic, and cook, 1 minute more.
Thinly slice red chili pepper, and stir into the wok. Cook, a couple of minutes.
Thoroughly rinse pak choi under cold water.
Cut off and discard the bottom of the pak choi, and cut off the leaves, reserving for later. Chop white part of the pak choi, and stir into the wok. Cook, coating in oil and spices, about 5 minutes.
Deglaze with  rice vinegar, soy sauce and sweet soy sauce.
Drain cooked egg noodles, and rinse under cold water. Set aside.
Stir half of the reserved pak choi leaves into the wok, and cook until just wilted. Then, stir in drained egg noodles, and remaining pak choi leaves, coating well in the sauce.
Serve Pak Choi Noodles hot.

Insects and Other Animals Have Consciousness, Experts Declare
A group of prominent biologists and philosophers announced a new consensus: There’s “a realistic possibility” that insects, octopuses, crustaceans, fish and other overlooked animals experience consciousness.
In 2022, researchers at the Bee Sensory and Behavioral Ecology Lab at Queen Mary University of London observed bumblebees doing something remarkable: The diminutive, fuzzy creatures were engaging in activity that could only be described as play. Given small wooden balls, the bees pushed them around and rotated them. The behavior had no obvious connection to mating or survival, nor was it rewarded by the scientists. It was, apparently, just for fun. The study on playful bees is part of a body of research that a group of prominent scholars of animal minds cited today, buttressing a new declaration that extends scientific support for consciousness to a wider suite of animals than has been formally acknowledged before. For decades, there’s been a broad agreement among scientists that animals similar to us — the great apes, for example —  have conscious experience, even if their consciousness differs from our own. In recent years, however, researchers have begun to acknowledge that consciousness may also be widespread among animals that are very different from us, including invertebrates with completely different and far simpler nervous systems...
