Cheesy Beef and Mushroom Rice Bake This comforting casserole combines hearty ground beef, creamy ingredients, and savory mushrooms with rice for a deliciously satisfying meal. Ingredients: 1 lb. ground beef, 85% lean 1.5 teaspoons Italian seasoning Salt/Pepper to taste 3 Tablespoons butter, divided 1 cup onions, diced 1 Tablespoon garlic, minced 2 cups beef broth 1 cup uncooked white long grain rice, not instant 8 oz. sliced button mushrooms, washed 10.5 oz. can cream of mushroom soup 1 cup milk, any kind 1 cup sour cream 2 cups cheddar cheese, divided Directions: Preheat oven to 350F (175C). Lightly grease a 9x13 inch baking dish. In a large pot, brown the ground beef over medium-high heat. Season with Italian seasoning, salt, and pepper while cooking. Once browned, drain any excess grease and set the beef aside on a plate, covered with foil. In the same pot, melt 2 tablespoons of butter and sauté the diced onions until softened, about 5 minutes. Add the minced garlic and cook for an additional minute. Add the beef broth to the pot and bring to a boil. Stir in the uncooked rice, then reduce the heat to a simmer. Cover tightly and cook for 10 minutes. Add the mushrooms, cover again, and cook for an additional 5-10 minutes, checking your rice package for exact times. Do not stir during cooking. After cooking, turn off the heat but leave the pot covered and allow it to sit for 10 minutes; the rice will finish cooking and release from the bottom of the pot. Stir in the cooked ground beef, cream of mushroom soup, milk, sour cream, and half of the cheddar cheese until well combined. Transfer the mixture to the prepared baking dish. Sprinkle the remaining cheese over the top. Cover the dish with foil and bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden. Ingredients: 1 lb ground beef or lamb. 1 small onion, finely chopped. 2 cloves garlic, minced. 1/4 cup fresh parsley, chopped. 1 tsp ground cumin. 1/2 tsp ground coriander. 1/2 tsp paprika. Salt and pepper to taste. 4 burger buns. Lettuce leaves. Tomato slices. Tzatziki sauce. Olive oil for cooking.
Instructions: In a mixing bowl, combine the ground beef or lamb, chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, paprika, salt, and pepper. Mix everything together until well combined. Divide the mixture into 4 equal portions and shape them into burger patties. Heat a grill or skillet over medium-high heat and brush with olive oil. Cook the burger patties for about 4-5 minutes per side or until they are cooked to your desired level of doneness. While the patties are cooking, toast the burger buns on the grill or in a toaster until they are lightly browned. Add diced onion and cook until translucent, about 3-4 minutes. Stir in minced garlic and cook for another 30 seconds until fragrant. Add ground beef, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes. While the beef is cooking, peel and cube the sweet potatoes into ½-inch pieces. Once the beef is browned, add the cubed sweet potatoes to the skillet. Sprinkle cumin, paprika, chili powder, salt, and pepper over the mixture. Stir well to combine. If the sweet potatoes are not softening or the skillet seems dry, add up to 1 cup of beef broth or water. Reduce heat to medium-low, cover, and simmer for about 12-15 minutes, stirring occasionally, until the sweet potatoes are tender. Ingredients: 1 lb ground beef. 1/3 cup breadcrumbs. 1/4 cup minced onion. 1 egg. 1/2 tsp salt. 1/4 tsp black pepper. 1 tbsp olive oil. 1 large onion, sliced. 2 cups beef broth. 2 tbsp all-purpose flour. 1/4 cup water.
Instructions: Ground beef, breadcrumbs, onion, egg, salt, and pepper should all be mixed together in a bowl. Mix everything together well. Make oval-shaped patties out of the mixture. Set a pan on medium heat and add the olive oil. It will take about 4 to 5 minutes per side for the patties to get brown on both sides after you add them. Take the patties out of the pan and set them aside. Add the sliced onion to the same pan and cook for about 5 minutes, until it gets soft. Add the flour to the onions and stir them around constantly for one minute. Slowly add the beef broth while stirring all the time to keep lumps from forming. Put the patties back in the pan, cover it, and let it cook for 10 to 15 minutes, or until the patties are fully cooked. To make a slurry, mix water and flour together if the gravy is too thin. Gradually add the slurry to the pan while stirring all the time until the thickness you want is reached. Put Salisbury steak patties on a plate and pour onion gravy on top of them.

Cooking oil for frying.
Instructions: Boil a large pot of water. Carefully remove the cabbage leaves and blanch them in boiling water for 2-3 minutes, or until they become pliable. Drain and set aside. In a mixing bowl, combine ground beef, cooked rice, diced onions, minced garlic, beaten egg, milk, salt, black pepper, paprika, dried thyme, and dried oregano. Mix until well combined. Place a cabbage leaf flat on a clean surface and spoon a portion of the meat mixture onto the center of the leaf. Roll it up tightly, tucking in the sides as you go. Repeat with the remaining leaves and filling. In a large skillet, heat cooking oil over medium heat. Add the stuffed cabbage rolls and cook until they are browned on all sides. In a separate bowl, combine tomato sauce, diced tomatoes, beef broth, tomato paste, brown sugar, Worcestershire sauce, and red wine vinegar. Mix well. Pour the tomato mixture over the cabbage rolls in the skillet. Bring to a simmer, then reduce the heat, cover, and let it cook for about 30-40 minutes, or until the cabbage rolls are tender and the internal temperature of the meat reaches 160F 71C.
